sorry, can't help with the crack chicken.
tonight is a chicken quesadilla on a jalapeno cheddar tortilla. M left the extras here after brunch last weekend. they are tasty!

Tonight: Doubling this recipe in order to give niece1, aka new mommy, half. I'll use ground beef and pork: Easy Beef Queso. She and her DH already ate the chicken Alfredo and lasagna I made them. Wed: Out with the family Thurs: Graze night
Fri: Cod, shrimp, veggie Sat: Out w/ DH at our favorite Irish place
Sun: Grill/smoke something, veggie Mon: Shirataki noodle shrimp w/ veggie and caul rice
Taco Tues: Ground beef enchiladas, leftover cauliflower rice Fri: Take out from? Sat: An early neighborhood Easter potluck, including a smoked ham in our Traeger, and my au gratin potatoes
Sun: Grill/smoke something Have a fantastic next few weeks, everyone.

tonight, I've been trying to figure out best practices for freezing/thawing bread, rolls, etc. I pulled a ciabatta roll from the freezer that had been wrapped in foil and a ziploc bag. first attempt at reviving a batchmate resulted in a hockey puck. 👎 tonight, I left it on the counter in the foil for a half hour or so, then used the timed defrost setting on the microwave for 2 passes at 1min each, covered in a damp paper towel. Eureka!
dinner tonight turned into a pesto chicken sandwich on that ciabatta roll, using pesto and a piece of sautéed chicken from Sunday (?). easy enough!

Lazy turkey sausage sandwich on a potato roll. I discovered I can put one sausage in the oven with fries or tater tots and it will mostly be done by the time the potatoes are. Have romaine lettuce, onion on the roll as well.

Sunday night we ordered salads to go from Texas Roadhouse.
Monday night grilled steaks and had salad. Potatoes weren't done when the rest was. They were huge Russets.
Tuesday night DH had 2 chicken patties from freezer and he put salsa on his half of potato. I topped my half with broccoli and chicken.
Wednesday night not sure. We need to clean out the kitchen fridge. The new one is being delivered Thursday. DH doesn't want to cook.
We'll see what our delivery window is for Thursday.

Last night, I did the steaks we were supposed to have Sunday. Tonight, spaghetti carbonara.....made with the good eggs*. Since I got my order for groceries today, I have a better idea what to do the rest of the week.
Tomorrow is beef stroganoff. Thursday is SLAP, so eating out somewhere TBD. Friday, I may do lasagna.
* good eggs are the eggs provided by friends hens. These eggs are sooo good, but are varied sizes, so use them for things where size does not matter, but taste does. Making hollendaise with these eggs is almost a guarantee of failure.

I'm a bit sick of chicken and pesto after the past couple days. I picked up a boneless pork chop ($1) at the village market and pair it with roasted tiny potatoes and Brussels sprouts.

We are having a repeat of Tuesday night. I'm trying to clean as much out of the fridge as possible. My goal is hopefully playing fridge and freezer tetris with the basement units to get most of the upstairs fridge contents in them.

The last few days has been chicken.
Tonight is going to be a veggie stir fry and I have some left over beef to add extra protein and clear a plate out of the fridge. I also need to prep veggies for snacking.

I was over near my favorite Cape Chinese restaurant tonight, so I picked up an order of veggie spring rolls and a large PFR w/bean sprouts. $14ish total, and I have leftovers for days. 😯 I ate the spring rolls and levelled off the top of the rice container. it barely looks like I've touched it.

Since my dim sum attempt was a crash and burn, and getting up to our favorite dim sum place in Vancouver isn’t happening anytime soon, I’m on the hunt for a new place to go. Guessing we are going to need to go to Seattle, so need to do some research.

Amazing. We were invited to an outdoor pizza party. About 3:00 p.m. it rained hard for several minutes. The patio where the party was to be held had a pergola instead of a patio cover. Everything drenched. Party cancelled. Part of the appetizer we were taking, fresh fruit, was given to a friend who just got home from a long hospital stay.
H. went to Papa --- for pizza. From what the prices were on the internet, it looks like he was overcharged even with coupon. The last time, he was way undercharged.
I don't understand the desire and delight with pizza other than it's easy to get or make. I am seldom satiated with store bought. Home made is better.

Having 3 vaccinated friends for our first inside dinner party in over a year! Donnadub has made Chicken Pot Pie... the real kind with top AND bottom crust. I’m making a green radicchio and arugula salad. Harvested from the garden. With toasted walnuts, dried dates and Parmesan. A balsamic based vinaigrette. The couple is bringing an appetizer and the single has made chocolate chip cookies!
A 2016 Oregon Pinot and a 2018 Oregon Gamey Noir for the wine.

I broke down some BSCB value packs for the freezer, and had been bent on frying cutlets tonight....until I started to set up the work line. I set aside three BSCB to fry up tomorrow, as well as pulled some sauce from the freezer. tonight, I'm making chicken piccata with one of the BSCB. I sliced four pieces of the breast, will have two tonight with some pasta.

Saturday night take out Mexican. I had a small burrito bowl and chips and queso. Grandma got a quesadilla.
Sunday night antipasta salad, cheesy garlic bread and spaghetti. Grandma got the chicken kabob special.
Back to the cooking grind when I go home tomorrow. I was away for a week and then the new fridge delivery threw things off. I needed the break.

ISO made egg plant lasagna. It tasted good but I don't like the egg plant texture in the middle of a bite of my lasagna. I'm going to try a different recipe next time.

I don't like thick slices for parmigiano, but that's a discussion point. you don't layer thick slices of anything for lasagna.🤢

I'm with you on the snacks prep, snapdragon. before sitting down just now, I chopped up a whole honeydew melon for all of us to snack on this week. I've got red grapes (pups can't have those) and blueberries to mix in as well.
I'm frying up some chicken cutlets tonight, which will last me the next few days. I think tonight, I'll chop a cutlet into a big green salad. pesto toast on the side.
tomorrow, I'll do up some parmigiana. the sauce and fried eggplant slices I pulled from the freezer have all thawed out nicely.

Tonight we had stuff from the fridge that I need to cook or use. One tiny filet, DD and I shared. Some polish sausage, mac salad, fried potatoes in avocado oil, home canned green beans with a bit of bacon grease for flavor. Leftover fresh pineapple. I also opened a jar of home canned stewed apples and put it in the fridge to cool. Tom will eat with whipped cream I will just eat. I still need to throw some stuff away. Dinner was good.

Thinking I’ll do chicken cutlets with mashed potatoes and gravy. Probably won’t feel like cooking tomorrow night, so will send TD out for Chinese take out. Not sure if we will be doing SLAP on Thursday.

Mexican takeout . Getting tired of takeout but our kitchen is still being worked on and we have no stove . Insurance adjuster said I can keep track of all my receipts and they will reimburse us .i hope so , it’s getting spendy . So we shall see .

I swapped up last night's planned salad and a baking dish of parm options, partly to have a parm option for lunch today. 🙃 last night, my plate had a small stack of eggplant parm and a piece of chicken parm, with a small ciabatta roll for dipping.
lunch today was a small chicken parm sandwich. the ciabatta rolls I have rn are like 2x3" and large enough to handle a half cut piece of chicken...which is how I prep cutlets. I toasted a roll and spread pesto, then added a broiled piece of chicken parm.
tonight, I chopped a rough green salad and added a chopped thick piece of chicken cutlet. I also heated up another piece of chicken parm, on the side.

Subs last night as I was getting home just in time for virtual trivia.
Tuesday night teriyaki chicken with carrots, zucchini and broccoli. Served over rice.
DH requested vegetables. I guess he didn't eat any while I was gone.

Tonight is home made fried rice with a piece of chicken. I have not managed to prep veggies for snacking so that is on for tonight. I made chicken fried rice with green beans, corn, peas, mushrooms, broccoli, garlic, scrambled egg, gochujang, sesame oil, fish sauce, oyster sauce, 5 spice powder and green onions. It was a delight.
