Last night we went out to The Corner. It is a pub out in the middle of no where in Bow. For being out there, they have an excellent chef.
I had an order of riblets and a side of Mac and cheese, TD had 2 orders of riblets and a bowl of chili. Had a pint of Odin amber to go with it, and it went down nicely. I need to remember that beer!
Tonight, I pulled out a package of andouille sausage that I think I’ll try using in stuffed peppers.

we did a big Sunday brunch, so I'm not all that hungry. I am freezing, as today is just raw, overcast, and generally gross.
dinner is a 32 cent package of pork flavored ramen, fancied up with a chopped scallion and some added spices. stick a fork in me, I'm done.

I made a green pozole. It was pretty good. The girls took some home and I'll take some to my uncle tomorrow.

tomorrow is trash pickup, so I cleared out the fridge today. dinner was IP risotto with a number of the expiring items and some shredded BSCB from the pup stash. easy enough, and have another meal leftover.

I'm making fish soup. It's been a minute. I fried catfish on Saturday and didn't get through all of it, so I'm making soup from the rest. It's been a long time since I've made it.

I haven't the faintest clue, likely something frozen and bad for me. I'm cooking ground beef and kale for the pups right now, and I'd planned after that to do up a really good ramen with a bunch of veggies and the healthier noodles, but it's already 730. I have a couple options for leftovers, don't want those either. I bought some spicy black bean burgers (frozen) by MorningStar, I could cook one off easily enough. nobody ever told me the worst part of adulting was having to figure out what to have for dinner every night.

I was telling my cousin today that covid made it worse. Before I was just trying to figure out dinner. I would take leftovers for lunch or some weeks if I had my act together I might make something for specifically for my lunch. My DH always took sandwiches. If not we just went out.
Now I need way more variety for dinner and there's lunch too. The dishes never end. And I get tired of planning the meals.

Risotto.
I went to the dentist for the first time in 18 months. My appointment at the very beginning of lockdown was canceled. My teeth and jaw are always a little sore after a cleaning. I was afraid they would be triple sore, but it just seems normal, I think. I made plans to make something soft. Bonus - I had to open wine to make the dish - so, had to drink a glass or two.

last night, I ended up reheating the last two slices of pizza from Friday night. I went grocery shopping over lunch, and figured out the next few days' worth of meals between the haul and various leftovers. in no particular order, the next few days will include: - crockpot pork tenderloin. first meal will have roasted Brussels and mashed Yukon gold potatoes. leftovers will be less planned. -eggplant Napoleons, with fresh made pesto and crusty bread -the ramen I mentioned yesterday. chipotle marinated grilled chicken thighs, bean sprouts, spinach, chopped cilantro, lime juice -"totchos". leftover tots from Sunday brunch (there were a TON left...), black bean pulled chicken, pepper jack cheese and various toppings -Friday takeout lunch

Tonight will be ham, roasted potatoes and green beans. Tomorrow night is SLAP, so out. That’s as far as I got.
The other night, I made stuffed peppers. I’ve made them with chicken, ground meat and sausage in the past. The peppers are ok, nothing special. This time, I made them wit( andouille and I am never going back. Th3 andouille flavored it sooo much better.
This weekend, I may try to get the ingredients for the seafood linguine that was in Cook’s Illustrated last month. It has clams, mussels, calamari and shrimp in it. Not sure if I can get fresh calamari or clams, but gonna go on the hunt.

It won't be fresh but check the store's seafood freezer section for calamari. I have bought it frozen for spaghetti and lalamari in red sauce. Chilled calamari salad is tasty too.

I found a yuca root today, which was a star in that soup. chicken, a lime-infused broth, cayenne and chili seasoning, cilantro. can't wait to get creative apparently it is soup weather again, parts of MA are expecting snow tonight.

I saw snow in the forecast on one of the major channels. They were showing predicted snow totals for ski resorts north of NJ.

Had a Hawaiian Dawg and tiny fries from a local restaurant . So happy they have added tiny fries to the menu because at least half of the junior fries would have been tossed.

My garage freezer is beginning to dwindle it's food level. Last night was the last frozen package of modified Olive Garden soup. Tonight will be another bacon wrapped stuffed chicken from QVC and home made potato casserole. I'm gaining on this little by little.

Roast beast!
I bought a small NY strip roast awhile ago that I’ve been meaning to make. I actually remembered to pull it out of the freezer so I can make it. Will have mashed potatoes and gravy, and grilled asparagus with it.
Leftovers will likely be a Shepard’s pie sometime next week.

early dinner tonight, I'm tired. I roasted a chopped broccoli crown and reheated some mashed potatoes and a piece of the crockpot pork tenderloin.
tomorrow I'll probably shred a little of the last portion and stir it into some ramen for lunch. I'll pitch the rest, I'm getting bored with it.

Meatloaf is mixed up and in oven. I'll put scalloped potatoes in oven later and we'll have green beans on the side.
Not sure if DH will eat it. There's leftover chicken in the fridge. Apparently I have not made meatloaf since I've been married?

Last night was stuffed poblano peppers. I forgot how good they are, and how easy to make. Will have to add them to regular rotation. Added bonus - besides cereal and PB&J it is the only meatless meal husband will eat.
