@missrigby maybe smaller portions would make you feel less guilty? Baking is my love so I try to find people to give it away to. I've seen many recipes for 6 inch cakes, a dozen cupcakes or cookies. I also freeze cookies and pull some out later.

tonight was a tapas board. tuna salad on triscuits, roasted tomato and mozzarella slices on sourdough, and a small slice of an unevenly sliced pizza I picked up for quick lunches this week.
I deep cleaned my stove yesterday, the oven will happen this week. my kitchen will not be seeing a lot of use this week, I'm beyond tired of doing dishes.

I took yesterday off and had some free time. Here are planned meals through the next week and a half: [snip] Mon: Leftover peach pork from the freezer Taco Tues: ? Wed: Canned chicken with frozen stir fry veggies, riced cauliflower
Rounding out the rest of the week: Tomorrow: Mac and cheese (Birds Eye veggie made pasta) topped Caulipower pizza Wed: Corned beef, potatoes, cabbage, and homemade soda bread Thurs: The tuna cakes I didn't get to last week with asparagus and sauteed baby spinach
Fri: Take out from? Sun: Grill/smoked something in the Traeger, veggies Happy St. Patrick's Day, everyone!

dinner was two slices of that pizza I picked up yesterday. I added more spinach, some shredded rotisserie chicken, and a little more cheese to hold everything together.

dinner tonight is going to be IP risotto. I've got some asparagus that needs to be used soon, I will broil that and stir in at the end with baby spinach and cheese. will also likely swipe a bit of rotisserie chicken from the pup stash for some added protein. ETA: boo....the open package of pancetta looked questionable. it wasn't outright fuzzy, but I wasn't using it. there was definitely shredded chicken pulled from the pup stash to make up for it.
Wed dinner - pork chop with roasted broccoli and colcannon. I pulled a boneless pork chop out of the freezer for this, and cabbage was on crazy sale for St Paddy's day meals.
Thurs - leftover pizza or risotto
Fri - TBD

I made Chicken Scallopini with lemon, capers and wine. DS loved it, but if i tell him about the capers and wine, he won't eat it again. He's weird.

bummer, the pork chop was horribly freezer burned, so I pitched it. I had two value packs of sale BSCB that were still unprocessed for the freezer for the pups, so I opened one and cut a piece in four. I seasoned with garlic powder and fresh cracked pepper, and sautéed the four pieces in butter and olive oil in the same pan I'd used for the cabbage and onion for colcannon. dinner did not suck, and I have leftover chicken and colcannon.

Last night I made corned beef. I do it once per year - March 17th. I have probably been doing it 8 years, and every time I feel like I got it *close* but not fantastic. Last night, instead of just serving boiled potatoes, I mashed them. And instead of boiled cabbage and carrots I roasted them. It made all the difference. I probably won't turn roasted cabbage into an everyday thing, but when you put cabbage and meat on the same forkful it really added.
We have leftovers for tonight.

I had a cup of leftover risotto for breakfast, didn't feel like a repeat for dinner. so I used the leftover chicken from last night in a big Caesar salad. homemade croutons, the last romaine heart. that works.

Donnadub is making Mu Shu Pork. I noticed a bag of frozen dumplings in the freezer for an appetizer. Wine wizard says try an Argentinian Malbec so I’ll pull one from the cellar.

No one is home so I'm having leftover garlic shrimp, sauteed mushrooms, and roasted broccoli. I think I have cleaned my fridge out of leftovers. I'm having my new dessert staple- angel food cake, mashed mixed berries and cool whip.

Clueless about dinner tonight.
Earlier this week, TD brought home a Costco chicken. I have the carcass on the stove now, picked the meat off. Now the choice is if I want to do soup for dinner tonight with the stock, or do I want to freeze it back.
Last night, we checked out a new Italian restaurant for dinner. I had steamed clams as an app, which were quite excellent, and pasta with clams, calamari and shrimp. Both were pretty good, but pricy.

I've never had a Firehouse sub, so stopped on the way home. It was really good. We have a new one moving in when finished in a few weeks, look forward to it. Besides it being white close,, it's very good.

Tonight was home made keto pizza. It is a favourite of both ISO and I so I think it's going to be a regular thing. Tomorrow I'm making chicken fajitas in the slow cooker. I'm just trying to decide if it's more work to go to the grocery store and get lettuce for the wraps or to make keto coconut wraps at home. We'll see which one wins.

I prepped a few things for the week, between the pups and myself. I am currently sautéing BSCB cut into sandwich-sized cutlet pieces (to allow that option). I also mixed up a batch of basil pesto. I think tonight's dinner will be some of whatever I can find for ravioli/tortellini in the freezer, with some chicken and pesto.

I had strip steaks pulled out for dinner tonight, but TD mentioned that it’s half price wing day at the local wing place. So steaks have been punted off until tomorrow.
