last night was Taco Tuesday - shredded chicken on "street taco" small tortillas, with black beans and rice. I mixed up a batch of dry taco seasonings then added it to canola oil/water to make it a marinade. I've never done it that way before, but I liked the results. most of the leftover chicken went in the freezer, I saved a couple portions for this week.
dinner tonight will likely be a small salad and some of the leftover pasta from yesterday's lunch. this week will be a lot of veggies, as I clear out the fridge so I can take it apart and deep clean before Sunday's open house.

Last week I bought a small turkey and left it on the balcony because it's my "second freezer". Well it really warmed up and we had 3 days of about plus 8C. I had to bring the turkey inside, but to make room in the kitchen freezer I had to remove a large pack of chicken legs. So, chicken legs for supper. I have no idea how I'll make them, though. Maybe fried. Maybe curried. Maybe roasted.

Last night's mystery leftovers (unlabeled) turned out to be chicken I'd pulled off of a beer can chicken DH grilled over the summer. I googled recipes for ingredients we had on hand, and ended up making Cheesy Chicken Spinach BakeSo flavorful and garlicy, it turned out really well (I normally dislike leftover chicken, and panicked a little when I first opened the container).
Back to hard core low carb, and down just over 5+ this week.

dinner tonight was a chicken and black bean quesadilla, repurposing some of Tuesday night's leftovers. there's always tortillas in my kitchen, so cost is free/already accounted for.
Iggy, that chicken bake sounds tasty. I do stuffed shells with the stuffing from a similar chicken recipe I found eons ago. that's mostly ricotta bc shells and red sauce, but I'd expect cream cheese to hold up better stuffed in chicken. I saved the link, thanks!

I roasted some small red and yellow potatoes last night for DH; made potato salad from the leftovers. I have about 8 potatoes that I did not roast, so those will become mashed potatoes tonight, with meatloaf, gravy and 2/3 of a head of broccoli (I used part of the broccoli in a stir-fry on Wednesday).

I'm grilling 2lbs of black peppercorn marinated BSCB right now, will toss a piece into a Caesar salad for lunch.
dinner tonight might be another piece with some jalapeno mac 'n cheese if I get ambitious later. I have a block of pepper jack that had a date of a couple days ago that I should probably use up this weekend.
chicken was ~$4 everything else was here, some was use-or-pitch.

I went to the grocery store across the street to pick up some cat food. It's FREEZING, with bitter, gale force winds. I never do this, but got some of their made-in-store soup of the day. OMG! It was some of the best soup I ever had! Still have a serving for supper, with a fresh baguette. Broccoli/cheddar.

my friend S came up from NJ today, he will be here til tomorrow afternoon. he is a photographer and loves this area, he wants to get some storm pics tomorrow, all around coastal New England. we are staying in and catching up, it's been awhile since he's come up. I gave him options for what I had on hand, and he picked mac & cheese. so I had him grate the block of pepper jack while I chopped a bunch of stuff. finished product was diced red onion, jalapeno, serrano, and black peppercorn chicken mixed into pepper jack and mozzarella mac and cheese. I'm stuffed, he's on seconds and may have more. yay for using up pantry items!

DH had leftover spaghetti and 2 slices of garlic bread.
I made a chicken stir fry. Used up some vegetables from the fridge. Should have thrown in some of the ginger paste. It needed more flavor. Estimated costs $4.
Tuesday leftovers or something. I'm struggling this week.

Last night: "Detoxed" from 3 days of celebratory eating and drinking with a slice of provolone and a few pickle chips. 0.31?
Tonight: Salmon, shrimp, veggie $10 Wed: Freezer leftovers-deer chili $0 Thurs: Pepperoni BBQ sauce Fathead pizza $5-ish Fri: Take out from? Sat: Something easy as it's baking day Sun: Family is coming over for an early Christmas celebration. DH is smoking a ham from the half pig we bought from the neighbor and we'll serve it with potluck sides.

S and I went out to lunch today before he left, and I was still pretty full even after I fed the pups dinner. dinner for me ended up a scoop of last night's mac 'n cheese with a small Caesar salad.

I'm making broccoli cheese soup. It tastes divine, and it's not even soup yet. That's going to be my supper. It's definitely soup weather.

I never got around to having lunch today, and I was hangry when I got home. I had a little leftover mac and cheese to tide me over til I can cook for myself (ground beef/pork and wilted kale for the pups is in progress in my big fry pan rn). once I wash the pan, I'm making loaded risotto with a bunch of the veggies I need to use up. will dice some chicken into my portion tonight.
cost - $11 for the ground meats for the pups. everything else was here.

pic and recipe, please! this was pretty solid, and there are plenty of leftovers. I don't do pics, but this is exactly what it looked like. I read a whole bunch of recipes online, then I put my own spin on it. Browned some chopped onion and then garlic in butter. Mixed in 3 tablespoons flour until flour was browned. Added about 6 cups good chicken broth, S&P, cayenne pepper for a gentle kick, then grated carrots, chopped broccoli florets, some anchovy paste for the umami flavor, one diced potato, a cup of half and half and a mess of grated sharp cheddar. When it was done, I just blended it in the pot with an immersion blender. Yum!

I pulled some red sauce from the freezer this weekend to thaw out, and used it in making a veggie lasagna tonight. the bottom layer is a mix of thawed frozen spinach, shredded carrots, and sauteed garlicky broccoli, zucchini, and summer squash. <burp> it was tasty. 🙃
