dinner tonight was a portion of spaghetti squash pie with a mini ciabatta roll toasted with pesto, for dipping.
I'm aiming to clean out all the leftovers and veggies (there's no more protein that isn't planned for pup cooking) before I leave on Sunday. tomorrow night will be dinner out - usually a $12 Caesar salad with salmon at the place I am going to avoid mixing Halloween kids and my rambunctious dogs.

A nice piece of catfish, served with a sauce made from mayo, lime juice and curry. Jasmine rice and baked sweet potato.

Tonight ended up being pineapple teriyaki chicken, rice and broccoli. Estimated costs $7. There are definitely leftovers.
Thursday night will be leftovers.
Friday night I don't know.

I ate fish around 3 or so, for me that is enough.
I fixed hubs and DD the rest of the spaghetti and salad, they cleaned it out tonight.
Now I'm having 4 tiny oranges and a cup of hot cocoa.

Mon: Leftover chili $0 Egg roll appetizers from the freezer which were surprisingly good. $4
Tues: Leftover chili $0 Chinese take out $20
Wed: Fish, shrimp, veggie $9 Had a huge brunch, nibbled on peanut butter filled pretzels for dinner $0
Thurs: Appetizers, something Halloween-y? Leftover chili and more egg rolls $2
Fri: Take out from? Pizza made at home $7
Sat: Date night food $? Sun: Grill/smoke something $? Have a wonderful week, everyone!
I should just give up planning, LOL.

Thursday night DH ate the leftover chicken. I had some of the spaghetti. There's more left.
Friday night we have a Halloween party. No answer on what I can contribute so I guess $0 for us. They are having the mac and cheese food truck cater the food again. It's really good.
Saturday night something at home or party leftovers. Last time they wrapped up all of the leftovers for us to keep.
Sunday night eating at the football game.

DS works for UberEats when his own business is slow. Last night, he came home with a crap-ton of Indian food. It was deemed "un-deliverable" because nobody would answer the door at the address from UberEats. The guys are told to just throw it out, but nobody does. They bring it home. Free food is free food.
So, Indian food is on the menu for tonight.

I filched a little shredded chicken last night from the IP for the pups for next week. tossed that with linguine and a mix of the last of both "meatball sauce" that I had thawed last weekend and some pesto I made midweek. I easily still have two meals, but will likely end up tossing some/all of it as I only have one more day before I leave.

Bean soup, very good, was leftover, made it taste better.
I made corn bread, and chopped a mild onion for the soup. Then made banana bread. Had enough bananas for 2 loaves. Fixed DD tomato soup and grilled cheese, she was happy.

~Last night DH grilled our first cut from the 1/4 cow we bought from our neighbor. The steaks were melt in your mouth delicious. Served with the last of the garden tomatoes with broccoli on the side.
~Tonight: Salmon, shrimp, breaded calamari, veggie. Approx $13
~Tues: Leftover ham hock, beans and corn muffins from the freezer $0
~Wed: Chicken tenders, veggie Approx $6 for 4 servings.
~Thurs: Out w/ a friend, before the RAIDERS game. I'll buy since it's her birthday. Not sure if we're just having drinks, dinner, small appetizers or what?
~Fri: Take out from? ~Sat-Sun: Not sure yet Have a wonderful week, everyone!

Monday night sloppy joes, salad and fried potatoes. Estimated costs $5. We have buns in the freezer and the potatoes are leftover from Sunday's breakfast.
Tuesday Budget Bytes black bean tacos. Estimated costs $7.
Wednesday night beef and broccoli with rice. Estimated costs $10? I can't remember how much I paid for the beef.
Thursday night peanut chicken zucchini noodles. I still need to buy a few ingredients.
Friday night we are going out of town for the weekend.

I made veggie soup, was good. I didn't have a chuck or stew meat but had a nice big ribeye so used it to make the stock. Cooked it while I was gone, came home added the veggies and cooked about another hour, was really good.
I bought a new bigger stainless steel pot, the other had that lining stuff. It was a German made very good one but the stuff was still flaking off around the upper edge, don't like that so off it went. This one is a bit bigger and stews and porridge won't boil over, I really like it.

I made a Moroccan chickpea/sweet potato stew tonight. I opted not to purchase all the additional toppings, limes, cilantro and dried apricots. Probably should have, it was kinda bleh. Nice to have a vegetarian night though. I'm trying to incorporate more of them.

I should finish the last of my ground lamb, which I cooked with some onions and red beans but I need to flesh it out with more veggies. Cost on that meal will be less than $1. Trader Joe's just opened in my area so I am contemplating make some of their Mandarin Chicken for dinner. Total cost will be more like $2.

Slow-cooked pork ribs slathered with a sweet-spicy BBQ sauce, homemade baked beans and fresh rolls. There is enough meat and rolls left over for a small lunch tomorrow.

I made a Moroccan chickpea/sweet potato stew tonight. I opted not to purchase all the additional toppings, limes, cilantro and dried apricots. Probably should have, it was kinda bleh. Nice to have a vegetarian night though. I'm trying to incorporate more of them. Add some salt and a little crushed pepper, ginger and garlic if you don't have all the spices. Chickpea can take a lot of spices.

Tonight is going to be a fridge scrounge. I will probably end up doing a PB&J with a apple and some caramel dip. Than I will finish it off with a hot cocoa.
I don't want to cook and I need to wash dishes and get some things picked up tonight.

I made a pork tenderloin in the crockpot this afternoon, to have leftovers this week. it was cooked so perfectly that it actually fell apart as I lifted it out of the crock. I wasn't terribly hungry yet, after only eating breakfast at 2pm, but I had a couple small chunks from what broke off, and a chunk of ciabatta bread with a cup of the ridiculous au jus. I am so stuffed now, but I am probably going to force some more dunked ciabatta to fit somewhere. it is that good.
recipe: 2lb pork tenderloin 3/4c red wine (I used a Chianti) 1/4c low sodium soy sauce 1c water 1 packet onion soup mix garlic
mix the wine, soy sauce, water, and soup packet. pour over the pork in the crockpot. cover the pork with minced garlic, as much as you like. cook on low for 4 hours.

that sounds tasty, too. I do something similar with pork chops - sear, then finish in the oven. never a tenderloin, though. I'll have to try that!

Lasagna, meatballs, salad and garlic bread.
Birthday dinner for DH's brother. I would say free but he bought him a nice bottle of scotch for this milestone birthday.
The meatballs were so good. I got nervous about the possibility of soy protein in them so I stopped at 1.5.

I found week old rice from takeout last week. I made fried rice. I feel like it is the most cheater meal I make. I don't think many meals take less effort. And my family loved it.
