I found some chicken tenders in the freezer earlier, dated late October, which would have been 2018 bc I know I haven't bought chicken tenders in a long time. I pulled a portion of 3 to thaw, figuring I could toss it and the frozen stuff if that one wasnt okay. it turned out to be fine, maybe not too much longer, but there's a couple more portions in the kitchen freezer now for immediate use.
for dinner tonight, I sauteed and shredded those chicken tenders. I tossed the shreds with a package of spinach ravioli and some homemade pesto. there is easily another meal, and I'm going back for seconds.

idk what's up with me today, I've eaten anything that wasn't nailed down. a slice of cold pizza on the train, a cup of soup and last night's leftovers for lunch at the office, a bite of tuna salad when I first got home, 2 more slices of pizza - this time with added spinach and cheese, then reheated - for dinner, and now that I'm sitting down and winding down, I have a bag of Doritos next to me to pick at. oh well. one day of that won't kill me.

today, I went out to lunch after the listing pics were done. I squeaked in under the wire on the lunch specials at about 2:45pm, yay. a huge bowl of linguine marinara with 2 meatballs (I'm incredibly anemic rn, and actually craving them ) and a glass of chianti came to $25, including tip. I brought home more than half of the pasta, one meatball, and half the bread basket - a house-made dense bread that doesn't do well after the original day. I think dinner tonight is going to be the leftover bread, toasted with pesto I made the other day. I might have a small Caesar salad, too. I have half a romaine heart chopped already in the fridge. well, later, if I get hungry again.

I'm completely winging a chicken pot pie. I bought these pie dough bags for a baking date and wanted to give them a test spin. I'm a convert. They make rolling out pie crust a snap. We'll see how the pot pie turns out. I miraculously made just the right amount to fill them.

Last night DH grilled t-bone steak from the locally raised cow we bought. OMG, so good. $8 for 4 servings
Tonight: Tuna, shrimp, sauteed spinach. $9
Tues: Ground beef (from the above mentioned cow) nachos made w/ pork rinds instead of tortilla chips. I bought the pork rinds from Cost Plus, so should be interesting. Approx $8
Wed: Leftovers $0
Thurs: T-Day trimmings. I'm making 2 different kind of pies and a strawberry cheesecake. $?
Fri: Leftovers $0
Sat: Fathead pizza $7
Sun: Grill/smoke something $? Have a fantastic Thanksgiving, everyone!

no real plan as to which day will be what, but here's what is going on this week:
-last night, I made turkey piccata from a ~1lb turkey breast tenderloin. after what I have for lunch today, there's still at least one more portion of turkey that I can cut up over a salad. -I picked up 6 romaine hearts that weren't recalled, there will be some salads with baked fish purchased that day. -Brussels sprouts 'n pancetta, likely with some baked fish
Thursday morning, I'm cooking for the rest of the weekend - and feeding whoever stops by to help paint. I will be using up some pantry stockpile, which will not be getting replaced before moving. on the menu for sure: meatballs and a big pot of red sauce veggie lasagna - sauteed spinach, zucchini, broccoli, mushrooms chicken cutlets/parmigiana eggplant parmigiana stuffed shells

last night ended up being half of a $4 frozen pizza when I finally got home. an AD invited our department out for drinks to send off my outgoing boss on a good note. I got home around 8. pizza wasn't awful, definitely not worth more than $4 though. southwest seasoned veggies. i added more cheese, cumin, hatch chili powder. tonight I have leftover turkey piccata over linguine. there's one small piece of turkey left, that I can make a breakfast sandwich with tomorrow. I snapped a pic for a local foodie group, this doesn't look like leftovers at all.

Carne Asada and pineapple salsa. thyme, do you make this from scratch? If so, what cut of meat do you use? It's my favorite Mexican dish when we go out, and I'd love to make it at home. I use flank steak and marinate it in some recipe I found online. The recipe has a lot of acid - 2 limes and vinegar and oil, plus ingredients for flavor - cilantro, etc. I also make the pineapple salsa.

Tonight is going to be chicken tenders and cauliflower with some assorted mixed veggies added in.
Tomorrow I will finish off the spaghetti sauce and get that out of the freezer.
I am also pulling the container of white bean chicken chili out so I can finish it off.
My turkey is in the freezer so I am thinking about making turkey soup for the weekend.

Sunday night I did instant pot lasagna. I tweaked it some this time. DH approves. Estimated costs $9.
Monday night probably chicken and asparagus or salad for me. DH can have leftover lasagna.
Tuesday night garlic parmesan chicken served with mashed potatoes and salad. The title is misleading I think? It's cooked in instant pot parmesan sauce with spinach, mushrooms and chicken. Approximately $10.
Wednesday night my brother is taking us to dinner to celebrate my DH's promotion last month.
That's all I've got for now.

I am still working on the last of the leftovers from Thursday's Italian kitchen trashing. there are still a couple portions of veggie lasagna as well as chicken and eggplant parmigiana. dinner tonight will likely be a small Caesar with a <something> parmigiana sandwich on a scala roll I bought yesterday.
tomorrow is a snowy WFH day, so I might roast a turkey breast or whole chicken since I'll have time. will have to see what is on sale when I do for pup proteins on my way home later.

I scored a deal last night! right next to the split chicken breasts I needed for the pups, there were half turkeys packaged at $.99/lb! I picked one up for $6.xx and will be roasting it this afternoon for my snow day. and then I'll get turkey stock to cook with, too. dinner tonight will be some of that turkey, with roasted Brussels sprouts and pumpkin mac'n cheese.

how do you make squash usually? my sister got me on this kick, I will spiralize it and dry it out with a little salt (rinse before cooking). then I'll toss it at the last minute into a pan that's been simmering garlic/onion and some canned diced tomatoes w/spices. a lighter version of the zucchini marinara we grew up with in an Italian house. that would go very nicely with some baked fish. just a suggestion!

Friday night we went out.
Saturday night was pizza.
Sunday night DH had a bowl of cereal and I had a sandwich. We snacked during the football game so not super hungry.
Tonight will be black bean tacos.
Tuesday night leftover tacos.
Wednesday night instant pot spaghetti loaded with veggies.
Thursday night leftovers or quick take out.
Friday night we leave for the weekend. Depending on when I get home Thursday I might make a chicken stir fry and pack it up to take Friday to be our dinner.
Saturday dinner at a friend's. We are bringing meatballs and cupcakes. We won't discuss how much we paid for the meat at Wegman's Friday night.

change of plans for tonight, original plan had been IP lemon garlic chicken for myself. but, when I went to pick up ground <something> for the pups b/c I would be using the end of the stash in the fridge for dinner tonight, I found split chicken breasts on sale for $1.29/lb. I ceded use of the IP tonight to making shredded chicken breast for them. I had a late lunch on my way home from work ~2pm. I stopped at the Italian place that used to be my Monday lunch go-to before heading out for 2nd shift. same friendly bartender, same $12 lunch special that is really three meals. dinner tonight, if I ever get hungry again, will be a Caesar salad with some of the leftover turkey I roasted last Tuesday. there's more left than I would like, so this is probably a good thing.

I made Pad Thai for the first time, with Argentinian wild-caught shrimp. It was a delicious supper! (Well, actually breakfast, since it's my first meal of the day.)
