I made a cheeseburger tonight and had a pear cup with it. There's one burger left. Approximately $4.
I think Tuesday night will be black bean pulled chicken. The weather is supposed to be crappy and it will make leftovers. I'm staying in a hotel closer to training Wednesday and Thursday so DH is on his own.
Thursday night I'm having dinner and drinks with my brother.

this past weekend, I picked up a pork and a turkey tenderloin that were both dated 11/14. I cooked the pork on Sunday in the crockpot, there's still a bunch of leftovers. I'm WFH the next two days. I am probably going to do up some mashed potatoes and cranberry cornbread stuffing tomorrow to go with some either roasted/braised turkey. leftovers will go well with the end of the pork, too.
dinner tonight though, was half an appetizer of broccoli poppers at the bar where I met M after she printed some thing for me that I forgot, so I can WFH the next couple days. I also reheated a slice of cheese pizza once I got home, which apparently roused the troll upstairs. I apologize in advance for whatever I might spout between now and NYE when he needs to be out.

Cleaning out the fridge since tomorrow is trash day. I really don't want to go out and take the trash out. It's so cold!
Tonight I'm making a mix of potatoes, green peppers, onions and smoked sausage. I don't really know what to call it, but the girls like it. Going to have to try to make a smaller batch since it's just me. I can take it for lunch for the rest of the week to work.
Then I have some other produce to use so I'm going to be cooking the zucchini and yellow squash I bought soon.

I wasn't going to cook, but one of the girls at work mentioned meatloaf earlier, so I may have to do that tonight. Made with turkey instead of beef and brown gravy instead of ketchup.

My coworker smoked a bunch of chickens this past weekend and brought me one yesterday. That was dinner. Soooo good. I should hire him to cook for us.

Dinner for me will be take out something. I'll see what's offered in the hotel club lounge for free before I venture out. DH is having leftovers.
ETA: the supposed appetizers turned out to be a full meal for me. A green salad, rice and sausage and peppers. Free to me because they didn't have room left on the club floor. They reduced my room charge but still gave me access.

Last night's salmon, shrimp, broccoli and Idahoan (had a coupon for a free purchase) instant mashed potatoes was delicious. Earlier this year I discovered this shrimp brand and highly recommend it to those of you who can eat it. I saute them in a bit of butter, olive oil and garlic. Decadent!

tonight, I roasted half a broccoli crown and had that with some leftover pork, au jus, and crusty bread.
I kind of want to break down the week's cost for food now, since at home I have basically fished from the fridge for every meal. let me think some.
~$4 turkey tenderloin ~$4 pork tenderloin $.50 onion soup packet ~$2 potatoes $2.50 cornbread stuffing $3 romaine heart package $2 carton of chicken broth $2 French baguette $4 huge clamshell of salad greens/veggies/dressing to go with turkey today
?? various and sundry spices, dairy, craisins, croutons.
this encompasses Sunday dinner, Monday dinner,two meals Tues/Wed/Thurs. I will likely pitch what is left tomorrow. I might keep the stuffing to pick at another day or so.

tonight depends on how ambitious I feel later. I was supposed to make a pot of minestrone yesterday, but I got derailed for the day pretty early. I also have veggies to roast - butternut, Brussels. I would likely toss those with some pasta and chicken stock.
ETA: I picked up a nice piece of cod on my way home, will bake that tonight with some Brussels tossed w/pancetta. I can make the minestrone tomorrow night. hopefully the butternut lasts til the weekend, maybe I'll make butternut soup then for next week.

I'm making a quiche for supper with cremini mushrooms, caramelized onions, spinach, Monterey Jack and sharp cheddar. I like having quiche in the house for when I'm hungry and don't feel like cooking. That's also why I like having sio pao, samosas and Caribbean vegetable patties in stock.

I made chili in the crockpot Sunday night. Estimated costs $12 for multiple servings.
Monday night I got take out before a late doctor's appointment that costs $8. DH ate chili at home.
Tuesday night I'm making black bean chicken enchiladas. Maybe $9? We'll get 2 dinners out of the pan.
I'm also going to do an instant pot lasagna this week.
The goal is to have leftovers for Thursday night when we need to eat quickly. But not so many leftovers that they are wasted while we are gone this weekend.

I went out for a drink after work with some coworkers while we all waited out hellacious traffic, and that turned into three as we talked about the ongoing reorganization and our places in it. 45min on the T and a half hour back home, and I stopped at MY dive bar for a pizza and a drink while I waited. today may have been pricier than planned, but I played the office politics game and got 3 more meals worth of leftover pizza for the next few days.

Last night I made a one pot pasta. It was a specific amount of liquid, and this one had garlic, butter and parmesan, and the liquid was milk and chicken broth. You put it all in one skillet with the dry pasta, straight from the box, and it all cooks together. Why have I not known this method previously?? Fast, easy, easy to clean. There are dozens of one pot pasta recipes out there. I am going to try them all.

I do an unstuffed pepper recipe like that. You brown the hamburger and then the rice and liquid and everything else all go in together to cook. It's easy.

my sister used to do a one pot pasta a lot, before she had to go GF. the GF pasta options don't tend to hold up nearly as well in that cooking method. I have no idea what I'm doing for dinner tonight. the butternut squash was starting to mold over when I looked at it this morning, so that's out. don't feel like making minestrone yet. maybe I'll roast the rest of the roastable veggies and toss with pasta. I think there's some chicken tenders in the freezer that I can thaw out, to add to it.

Stir fry again. I made meatloaf one day and stir fry the next. I've been alternating between the two leftovers since. I ate meatloaf for lunch and will have stir fry for dinner. I'll cook again tomorrow and will spend the next couple of days eating whatever I make. I'm going to have to learn to cook in smaller batches if I'm going to live alone. On the plus side, my grocery bill is going way down.
