I will be cooking. I have some meals I ordered from Home Chef that I need to cook. I was in a cooking funk and just sick of all the same old foods, so I ordered Home Chef. It is a little expensive, but it will work for awhile.

If the family ever gets up I will make them an omelette with flour tortillas. I just scrambled a couple of eggs and had corn tortillas. I wish I had some sausage, would have mixed it in for more flavor but was fine.
Dinner tonight is strip steaks, maybe on the grill, they taste better, baked potatoes, and salad.
Tomorrow stir fry.

I have leftover stuffed shells (meatless) from Monday, and that is dinner tonight, along with a salad. It's been a very relaxed day around here, and I have no intention of unrelaxing.

I am making a breakfast casserole for dinner tonight that I had intended for Christmas morning. Ham, shredded potatoes, and cheese mixed with eggs. When I broke open the eggs on Christmas morning, one of them was bad and contaminated the other eggs. So I bagged up the rest of the ingredients and froze them for later when I could buy more eggs.
Fortunately the sticky buns came out ok on Christmas, so we still had something to eat for breakfast.

Wednesday night will be soft taco wraps with shredded chicken, black beans, broccoli/cheesy rice and shredded lettuce.
Thursday night I'm using the leftover filets to make philly cheese steaks. Although I've been told bell peppers and mushrooms are unauthorized toppings. Will probably serve with onion rings.
Friday night I'm doing baked steak, mashed potatoes and peas for me. I will steam broccoli for DH who apparently doesn't eat peas.
Saturday I might see if DH will make meatballs. I have a craving for spaghetti and meatballs. All the store bought varieties have soy protein in them so I can't have them.
Sunday we might go to a friend's house for football. They tend to be superstitious this time of year and want to repeat the prior week.

I was sent home with enough left overs yesterday to last me for days. Does that count as cooking, take out or just lucky. All veggies so if I get tired of them, I'll just vacuum seal and freeze. Drag them out later, in pot with other stuff for homemade vegetable soup.

there is a spectacular Mexican restaurant here on the Cape that does Sunday brunch, and they did a holiday opening yesterday so we went. I got a breakfast burrito the size of my head, that I will be finishing for lunch today. salsa verde, fresh guacamole, yum!
I was still stuffed from the burrito last night, so dinner was a can of soup. tonight, I'll work on some of the leftovers from NYE - veggie egg rolls, Korean BBQ chicken, glass noodles.

Today I am going to make my last Home Chef meal for lunch. It has to be used up before we check into our hotel. We will do a romantic dinner out. It is the only planned eating out that we have this month.

We started the year off right last night. I made crab legs, lobster tail, and tempura fried shrimp. Cost approx $38 for 2. Tonight: Leftover venison enchiladas and tortilla chips.
Thurs: Pork chops (from the half pig we bought) in doctored up leftover spaghetti sauce Fri: Take out from? Sat: Leftovers Sun: DH will smoke a pork something from the above mentioned pig
Mon: Salmon (on sale last month)
Tues: Chicken breast (bought in a multi pack a few months ago) tenders, side veggie (e-coupon)
Wed: Venison White Castle Pie Thurs: Leftovers Fri: Take out Sat: IDK yet Sun: Grill/smoke something

Ham, black-eyed peas, and cornbread. Yum! I had that, minus the cornbread because I forgot it and it was a flat frisbee. I asked DH to get some buttermilk cornbread mix when he went to store, and forgot to point him to the flour section. He brought me the mix from the muffin section. It was a little too little for the pan I already had ready for it. I did have fried chicken with it to make me feel better though. I have no idea what I'm doing tonight. Something easier than frying chicken though.

I use this basic recipe, but I tweak the hell out of it. Drumsticks instead of breasts, whole coconut milk instead of light, I add lime, and I just shove all the meat to one side when sauteeing the onions, tomatoes, etc. Mix it all up and add the coconut milk and simmer. The most important thing is to coat the chicken in ground coriander, cumin, turmeric and cayenne, then brown. The aromas! OMG! The whole house is redolent of exotic spices.

I ended up eating the burrito super early and grabbed some soup around 2. the soup was salty AF and the thought alone of eating Korean leftovers tonight is making me thirsty. lol....
