I took the leftover chili, wasn't enough for a meal, added sautéed green peppers and red banana peppers and bell peppers from the garden. Unreal the plants are LOADED. I added them to the chili, tasted really good.
Also picked green tomatoes and had fried green tomatoes, yummy, and cauliflower with cheese sauce. A pretty good dinner if I say so myself.

I made (frozen) chicken cordon blue. I think it was about $2 a box after the buy one/get one at Publix plus a $1 coupon. We had mashed potatoes with gravy, too. We share the entree.
I made this dinner because DH just got out of the hospital. I noticed he just ate whatever they gave him.
That's all I ever wanted.

I made (frozen) chicken cordon blue. I think it was about $2 a box after the buy one/get one at Publix plus a $1 coupon. We had mashed potatoes with gravy, too. We share the entree. I made this dinner because DH just got out of the hospital. I noticed he just ate whatever they gave him. That's all I ever wanted. Sorry, SS, I missed your post about your DH's hospitalization. I remember reading that he wasn't feeling well so I'm glad he sought medical care and hope he is on the mend soon. {{SS}}

Steamed some veggies, made a rue and through the veggies in with veggie broth and leftover pork tenderloin. Made enough for DH and I and about 4 more portions.

Tonight: Boneless pork chops prepared IDK how yet. Cost ? b/c I bought them a few months ago.
Tuesday and Wednesday: IDK yet
Thursday and Friday: Out of town on business
Saturday: Something easy as I'll be traveling home

last night - leftover risotto tonight - a bone-in pork chop, likely baked. green salad as a side. tomorrow? idk.....something veggie. I have a lot I bought and didn't end up cooking last week. maybe a ratatouille of sorts. sent from my electronic distraction

I made Ziti last night. I have never made it before and really good but recipe made so much I will be eating it all week. You can freeze the ziti for future use but make sure there is enough sauce on top of the macaroni, so it does not get dry. It should last in the freezer for 2-3 months.

I may make chili this weekend. It's always nice to be able to thaw out half a pot of chili when I don't have time or energy to cook.

Taking a break from the chicken, beef, chicken, beef routine we're in:
Ham steaks, roasted butternut squash, baked red potatoes, steamed broccoli, and large salads.
Cost? $21? for 2 dinners and 1 lunch.

I made pinto bean soup with ham and hocks. Then made cornbread from freshly ground popcorn.
First pan of cornbread I slipped and dumped most of it in my clean oven. Had to let it cool, scraped out with a pancake turner, then a wet towel and cleaned and cleaned. We finally got dinner, sigh.

GRG, I had roasted butternut at lunch today. love, LOVE fall seasonal veggies. Whole Foods had a roasted butternut with cranberries and onion on the hot bar. paired that with garlicky rosemary chicken and some mashed potatoes. drool....
dinner ended up being the last of the leftover risotto from Saturday night. I'm shocked I'm still awake right now....

DH made spicy chicken wings....yum! Country girl your bean with ham soup sounded delicious. What a shame about the baking disaster especially since the cornbread was made with freshly ground corn.

heading to Walmart and Stop & Shop for a big grocery run once I finish my coffee and gathering my lists. tonight's a late Patriots game, so I will be up late. I think dinner (for me, at least) will be black bean pulled chicken. tacos tonight, likely.

Glad to see posters are eating again what with the elections and all this week. That seems like all I have been doing... Stress eating comfort food. I feel miserable. Ugh! Made grilled chicken, mashed potatoes and green beans tonight. Leftovers for lunch. Tomorrow we have a whole chicken to roast, not sure what sides will be. Probably salad and perhaps roasted veggies. Eggs and milk have been very inexpensive here. I love egg based dinners in a pinch, but after several weeks, I get tired of them.

dee, do you have a slow cooker? I know you're new here, we have a recipe section on the main page that has a thread for slow cooker recipes that posters know, love and trust. just a cost-saving suggestion to save your sanity dinner tonight was indeed pulled chicken tacos. I added a bowl of yellow rice with diced tomatoes. going to pack everything up in a little bit, I will portion out chicken and rice for this week's lunches until it all runs out, and then freeze the rest.
