I broke down yesterday afternoon and ordered a large pizza for the new place a mile from home.....without a doubt, it's the best pizza I've ever had. 8 pieces for $20.
I ate 2 pcs. and the other 6 are in the freezer for later. For tonight, I still have that pasta sauce on the counter, so it might be spaghetti tonight with 1 pc. of garlic bread.

I just put 1 lb. of black-eyed peas that were $1.29 into the crockpot. I soaked them last night. That is enough black-eyed peas to last the year since I'm the only person who eats them. I freeze them, though. so they don't go to waste. I used the end of a Cure 81 ham I'd bought for Christmas so that doesn't count. The slices are too small (about the size of a half-dollar) for sandwiches.
Black-eyed peas are traditional in the South on New Year's Day for good luck. I'll make some other vegetable to go with them . . . maybe some crisp corn (30 cents for a small can). Then we'll finish off the rest of that ham. It's a very inexpensive dinner. Corn bread would be a nice addition, but DH doesn't eat it, and why make a whole pan of it for one slice?

I'm doing my big holiday meal today so it's more expensive than normal but I figure I will have a lot of leftovers.
Spiral Ham - $27 Scalloped Potatoes ~ $4 Carrots - $2 Coleslaw - $4 Pickles & Cheese - $5 Pie & ice cream - $20
$62 to feed 8 people with leftovers for a few days.

Still not feeling well. I wanted some spicy Thai fried rice to help clear my sinuses but that would mean going outside... So I settled for tortilla chips topped with Mexican blend cheese and medium salsa.

DH has a cold so I roasted up some chicken and made soup. Also a new years splurge, I made a loaf of bread.
I made an enormous pot so tomorrow I can make some wild rice to add in and change it up a little for lunch.

I have some steaks in the freezer, and it's supposed to be about 50 degrees here today. I'm thinking of putting one on the grill, then saving half of it for some stir fry tomorrow.
But in case anyone has ever noticed, I seldom have the original idea for dinner and then end up with something else. Anyway, I'll try to do this today.

Meatloaf with roasted cauliflower for tonight. Leftover meatloaf with a different veg tomorrow. Tomorrow we'll make meals for the week. ATK black beans & rice recipe for 2 meals and roasted whole chicken with carrots, broccoli and potatoes for another 2 meals. Fridays are usually a free for all -- either finish anything from the batch meals, scrambled eggs for the ones not allergic, peanut butter sandwich or hummus with veggies. Next week will be a hard work week. I've been off for two weeks!

Tonight will be roasted bone in chicken breast with roasted potatoes and green beans. We pretty much have this at least once a week. Tomorrow will be pork stew.
My favorite thing about fall and winter... stews, soups and roasts. So easy, pretty inexpensive and they make fantastic leftovers.

Last night (1/1) was beef stir fry made with brisket that was purchased for about $1.97/pound. I used all fresh veggies: carrots, yellow onion, green onion, yellow squash, celery, bell pepper, and one can of water chestnuts. That's probably $5 worth of veggies. I used pre-made teriyaki sauce, probably $1's worth. 3/4 cup of white rice is less than 50 cents. If I round up, that's $10 for five servings of dinner. Is that good? I haven't tracked that way in a long time.
For tonight (1/2), DH is currently tossing pizza dough. He's trying a new recipe that involves Greek yogurt. Homemade pizza is actually pretty expensive. I'm not sure I want to figure it out. Self-rising flour, Greek yogurt, mozzarella, pepperoni, salami, sausage, olives, bell pepper, onion, and whatever else DH decides to throw on there. It's definitely a luxury meal and not a smart spending meal.
For tomorrow night (1/3), it is DD#1's 18th birthday (quite bittersweet for me). She has requested tri-tip, cheesey rice, asparagus, and cheesecake. The tri-tip is from Costco, so about $5/pound. The rice will include sour cream and cheddar, probably $3 to make that. The asparagus was $3.97/pound, and we'll eat $2 worth tomorrow. The cheesecake is more than I planned because WM was out of the boxes of cream cheese and only had tubs which increased the price by 5 cents per ounce.
By Monday, we should be back to reasonably priced meals.

I'm on leftovers for the foreseeable future. Tonight is ham and coleslaw and a tiny bit of scalloped potatoes each. It's a good thing I like ham because I have A LOT of it lol

Kids are out with friends, so it is just DH and me. We'll likely have leftovers = pizza, pot roast, spicy Hot Italian sausages, taco meat.
Tomorrow is YDS' (and mine, LOL) last day of high school Christmas vacation forever, so I expect we will celebrate by treating ourselves to dinner out using one of several restaurant gift cards we received for Christmas.

Thai fried rice (medium spicy level) from a newish place nearby. It got good reviews so I'm looking forward to it. Tomorrow I'll start eating normal again.

We ate at Fuddruckers, then I made 2 loaves of banana bread that was basically dinner. Very good too. As we have gotten older, we have basically moved into eating one large meal of the day. It is usually lunch. Sometimes I can't eat dinner at all when it is really late (2 pm or later).

Tonight we are going to finish off the Chicken Parmesan and spaghetti BF made for NYE dinner. We have the makings for a Caesar salad so I'll make that to go with it. Have I mentioned how much I love meals of leftovers? So fast to put out but you have a real home cooked meal. And it feels like it's free.

Hey, thank you for that!! Your timing is perfect. For me. I am doing some summer travel planning today and some of it MIGHT involve off-the-grid-for-five-days type of cooking. My guys NEED their protein, so I was imagining myself putting together some pre-made meals of rice and beans/quinoa and beans, etc. ahead of time. But, I don't have any really good rice and bean recipes. I'll definitely give this a trial run in the next few days. We're not salt pork folks, so I'll likely use the bacon mentioned in the recipe. But, I am also going to try it straight vegetarian because I won't have a way to keep meat safely cold IF we do this trip.

I had a piece of bone in ham left and am making pinto bean soup. The beans are part of a 10 pound bag I bought. I don't know the cost. I'm getting ready to grind popcorn to make cornbread, it is the best tasting stuff you can imagine. How do you grind popcorn? Do you think I could do it with my food processor?
