Last night was beef stew and buns. About $9 for the beef, another $3 for the veggies, $1 for buns. We should get 3 meals for 2 our of it so ~$2.20 per serving.

dinner last night was cornflake-coated fried chicken, done in the air fryer. it came out pretty tasty. had garlic mashed and green beans for sides, too. $7 - whole cut-up chicken, we cooked half last night and froze the rest $4 - 10lbs russet potatoes, we used 5 small ones $1 - green beans everything else was already on hand. tonight, the roommate's going to figure out the art of making French fries in the air fryer. I think he's going to pair a burger with it. I'll have either a grilled pork chop or a baked stuffed one (depending on what's there when he gets to the neighborhood market to pick it up for me today) with a salad. strawberry shortcakes for dessert

Big Boss Oil-Free Fryerbasically, it uses a halogen lamp and air circulation with heat to cook your food. it uses little to no oil, and you come out with the same texture as if whatever you cooked had been deep-fried.

Checking in with the rest of the week's plans. Going grocery shopping tonight. Tonight: Pepperoni "pizzas". Maybe. If the store has lc tortillas in stock finally. Total approx $4.40 for 2 servings. Pizza sauce leftover in the fridge. Tomorrow night: Fish w/ a veggie. Catfish is on sale. $7.99 for 2 servings. Thursday: Crock Pot boneless ribs (sale $2.49/lb) w/ a veggie. BBQ sauce leftover in the fridge. Approx $6 for 2 servings. Friday: Take out from? Saturday: Dinner with the fam if niece2 ever decides what she wants to do for her 14th birthday... Sunday: Smoked ribs. Not sure of the cost yet.

I went shopping yesterday after flying home from FL and dealing with the typical travelling idiot. between all of that an the idiots in the store, and then the ones trying to fix the self-check register that froze on me in the middle of trying to charge my card (the woman looked at me sideways when I asked her if she could suspend my $100+ order and bring it to another terminal so I could cash out. um....what?) so yah, by the time I got home, the last thing I wanted to deal with was actually cooking dinner.

I'm harassing the rest of the family for ideas as I type. I'm doing the same. We're in a menu rut and no one will offer ideas. I have ground sirloin and BSCB and tons of produce in the fridge, tons of other stuff in the pantry and freezers, and yet I have no freaking idea what to make for dinner. We typically eat chicken 4/5 nights per week. We had chicken the past two nights. I'd do burgers on the grill if it wasn't supposed to start snowing any minute. I made pasta with spicy meat sauce last week, too soon to repeat. I could do loaded quinoa but that appears too frequently in our rotation. I had a crazy morning and might end up running around this evening, so I need to start cooking pronto. Oy. If only the rest of the family would agree that cold cereal and milk and fruit IS a real meal.

(*I don't run a short-order kitchen, but there are certain foods YDS just won't eat, so I will indulge him for pot pie and chili, only. There is no reason the rest of us can't eat those dishes just because YDS won't.)

The oldest two get that concession more often since the younger one doesn't leave much. Up until now, that's been fine. Now he wants to get picky.

that sounds awesome! I would probably add some ground turkey to it, replacing the pinto beans (and likely the kidney as well). thanks for the recipe, I'm totally printing that one out right now

A bit of advice: don't go to AllRecipes when you are hungry. Tonight's dinner menu now appears to be Outrageous Chocolate Chip Cookies, Banana Bread, and Buttermilk Biscuits. I wish. Nope. Going to push the limit -- chicken again!! This time as baked garlic parmesan BSCB. Sides will be herbed roasted potatoes, steamed green beans, salad, and garlic bread. Tomorrow night I am eating beef, I don't care what the weather is!!!!!!
