Chicken thighs baked. They were 2 pkgs for $4. Bone in, skin on, but the price is right compared to other chicken choices.
A side of some kind.
I have indications my lactose intolerance is back. Ugh. Just bought yogurt. Greek for breakfast.

Pork stew was a bust... ugh the meat was awful! I fished it all out to preserve the veggies and pulled some shredded pork from the freezer and tossed it in. Hopefully I can get a few lunches from this.
So, a little basmati rice and leftover roasted chicken from last night.

We ended up eating at home: two roasted chickens, sweet potatoes, steamed green beans, big salad. Not much left, we had a teenage male dinner guest. (Good thing I roasted 2 chickens. ) Cost? $40-45. We probably have enough for 2 more human-sized meals. The guys eat the equivalent of "small-villages-sized" portions.

Last night was the rest of the fried rice and some peanut butter cups for dessert. That rice was EVERYTHING, but my budget says I've had enough take out for a while.
Right now I have chicken taco soup in the slow cooker.

For my lunch today, I've got leftover stir fry that I made Saturday. One more serving, with some orzo thrown in, is for lunch tomorrow.
Dinner tonight is ham steaks bought BOGO with leftover mashed potatoes and gravy for DH. There are some carrots in the fridge for me.
For tomorrow night, we have both turkey and chicken patties in the freezer, and rolls, plus lettuce, cheese, pickles and onion. I'm good right there, but DH will want a side with his burger.

Last night: Low carb pepperoni and olive pizza. Approx $5.49 for 3 servings. Tonight: Burritos-Shredded beef (sale) in low carb tortillas, cheese (sale, coupon), sour cream, olives. Corn (sale) on the side for DH. Total $13.15 with a ton of leftover beef. Tuesday: Spaghetti-Angel hair (sale) for DH, zoodles for me. Ground beef was on sale for $2.99/LB. $4.89 for 3 servings. Wednesday: Smoked beef sausage (sale, coupon) slow cooker recipe. $2.50+ for at least 3 servings. Thursday: Boneless pork chops (Bogo) w/ IDK what sides. Added: I found a pecan crusted pork chop recipe which will use up the pecans I bought for baking last month. Friday: Take out from? Sat and Sun: IDK yet. Probably chicken drumsticks (sale 1.41 for 6) one of the nights. Added: And probably an Eggs Lorraine the other night to use the frozen spinach (sale .88). Have a wonderful week, everyone!

Hey, thank you for that!! Your timing is perfect. For me. I am doing some summer travel planning today and some of it MIGHT involve off-the-grid-for-five-days type of cooking. My guys NEED their protein, so I was imagining myself putting together some pre-made meals of rice and beans/quinoa and beans, etc. ahead of time. But, I don't have any really good rice and bean recipes. I'll definitely give this a trial run in the next few days. We're not salt pork folks, so I'll likely use the bacon mentioned in the recipe. But, I am also going to try it straight vegetarian because I won't have a way to keep meat safely cold IF we do this trip. the recipe on the back of a Goya can is completely vegetarian, and the closest I've come to replicating what my Puerto Rican aunt made for us back when I was a kid. it's also one of my lazy winter dinners - white rice, drained cooked beans and a raw diced tomato on top.

dinner tonight will be hunter's chicken, made with all white meat and without mushrooms (roommate is allergic) will try to remember to cost it out later tonight. I can't remember what I paid for the value pack of split chicken breast over the weekend.

I had to add a bunch of extra cumin, garlic powder, chili powder and salt to the soup, but it was pretty tasty once I did that. I also prepped the pasta I'm making for the week and it's in the oven now. Basically, it's ziti except I used pureed and spiced butternut squash instead of pasta sauce. I made the puree as "Italian" as I could so hopefully it's good and DS likes it.

I got home and my roommate had already eaten. he said he was starving around 5. so I nuked the end of the teriyaki chicken leftovers from the weekend, diced it and topped a bowl of salad greens. I had a slice of the roasted garlic artisan bread I bought on my way home, intending it for the cacciatore, since it is already a day old loaf. sent from my electronic distraction

Change of plans for tonight: I've got BOGO pasta and BOGO sauce on the shelf. Some green, red and orange bell pepper, sliced mushrooms (all from my weekend stir fry) and one turkey burger patty. I think the burger will be broken up and combined with the veggies and sauteed. Then add sauce and cook pasta for tonight. Otherwise, I'd have to stop for burger buns and fried onion rings for DH. Why stop and shop when I have stuff I can/should use up?

I had a half day today to accommodate a doctor's appointment that I ended up having to reschedule anyway, for a number of reasons. so I took my 5h half day and worked from 10-3ish. on my drive home, I felt a head cold (that's all I hope it is, anyway) settling in to the base of my neck......ugh.
I ended up stopping at Walmart to pick up a bunch of things, and threw a small package of Perdue BSCB in the cart. I thin-sliced one of the three breasts and put it in a Ziploc bag for the roommate to use this weekend while I'm gone. I boiled/simmered the other two in 1:1 Swanson unsalted chicken broth:water for some soup.
soup had the remainder of a bag of mixed veggies from the freezer plus one white potato diced to the same size, and some ditalini cooked in another pot. I added some cayenne to the seasonings, in the hopes that it will help clear out whatever's trying to take over.
cost - $4 for the portion of chicken that was used. everything else was already in the house from who knows when.
I'll also have lunch for the rest of the week and then some. here's hoping the roommate helps out with it.

well, the dogs have sufficiently pissed me off enough to earn themselves naps in their crates. I've since poured myself a good strong cocktail and popped a bag of microwave popcorn to counter it. suffice to say, it involved a LOT of shit and shitty paws in the house. after this morning's mess (whose victims - a pair of couch cushions - are still laid out on top of my dining room table, periodically getting doused/scrubbed with Tuff Stuff) I've had about enough of it for today. roommate is at band practice, no idea what time he will be home. I will obviously take both pups out before I go to bed, but if he's still out when I call it a night, they are going out and going straight back into the crates. he can deal with them when he gets home. my door will be closed.

January 4 Chicken tacos 2.29/pound for the chicken breast; the box of taco shells was $2/18 shells; then half the shells were broken when I opened up the box. Bell peppers were $1.25/pepper, and I cut up two. Cheddar cheese is ~$6/lb; (3/4) one can of refried beans; (1/4) one can of black beans; half an avocado=$0.75; salsa and sour cream. $2.29+$1+$1.25+$0.50+$0.75+$0.25+$0.50+$0.75+= $7 Is that even right? Really? Seems like dinner would cost more.
January 5 sloppy joes 2.99/lb for the ground beef; can of Manwich was $1; buns were $1.35 for 8, and we use four at a time. 1/3 bag of tator tots is $1; ketchup. $3+$1+$0.67+$1= $5.67
January 6 needs to be leftovers as we have lots.
I don't think I'm doing this pricing correctly.
