3catslady's meal plan for 2-15 to 2-21:
Breakfasts: 2 sticky rolls, 5 rice cakes with peanut butter, hot tea. Lunches: 1 Chicken and veggies, 2 sloppy joes and fries, 4 bologna and swiss sandwiches. Snacks: 2 yogurts, 1 cottage cheese, 4 Fiber One bars. Dinners: 1 bologna and swiss sandwich, 2 Pizzas, 4 chicken and veggies.

1/21-28 I am doing pretty good at using up some stuff in my freezer. However, deals have been too good this week and am adding some stuff.
Breakfast: egg, yogurt, bread+, cereal x 2, waffles or pancakes, fast (dr appt) lunch: chicken x 3, tuna, ground meat, egg, junk Dinner: veggie x 2, cottage cheese x 2, meat, tuna, ??

Last night: Low carb enchiladas Tonight: Chicken gumbo Tuesday: Cod w/ eggplant parm Wednesday: Leftover enchiladas Thursday: Leftover gumbo Friday: Out in the big city Saturday: IDK yet Sunday: DH will cook a pork loin in his smoker, he just doesn't know it yet. I was a busy bee yesterday and made 1.5 pans enchiladas, a tray of eggplant Parmesan, boiled and processed eggs, rinsed and put strawberries, radish, celery with sides of cream cheese into individual containers, assembled 5 burritos for DH's lunches (put 3 in the freezer), and made a 7 layer salad. This morning I filled the slow cooker full of gumbo ingredients. Yummy! I kept thinking: I am turning groceries into meals.

Most of my local store ads are out. Looks like next meal plan will include a number of soup or sandwich /salad days. Romaine hearts, radicchio & leaf are all on sale at one of my stores or another. Turkey bacon is on sale at 2 places.
Today I will be doing some batch dooking: broccoli soup, rice, turkey burgers and browned ground turkey.

After YEARS of meal planning I suddenly realized that some weeks are WAAAY more $$ than others. Those are generally the weeks I have fish 2x vs the week I do tuna salad 2x. So changing my ‘general’ plan. Will do 1 fish/shellfish and 1 tuna each week.

Tonight: Honey sesame chicken w/ little smokies in BBQ sauce, leftover turnips Tomorrow night: Pork burritos (I'll make extra to freeze) w/ Alfredo green beans Wednesday: Cowboy Beans (pork, pintos, sauce, coffee) w/ shredded cheese Thursday: Leftovers Friday: Take out from? Saturday: IDK yet Sunday: Out w/ friends at a Cajun restaurant

did up a 2lb pork loin in the crockpot yesterday, intending to make burritos yesterday....and the whole thing dried way out. I broke it up into chunks and have it stored in the fridge in a pond of chicken stock right now, in the hopes that I can save it. in any case, now I have the full 2lbs of pork to work with for the week since we ended up ordering pizza instead. if the chicken stock works some magic by the time I get home, I'm having a burrito tonight. the asian slaw came out amazing, which was why I was so pissed about the pork drying out. otherwise, I might grill up some chicken breast tenders and make the burritos anyway. I have been getting suggestions for enchiladas and quesadillas, I'm not sure these are hte best idea with dried out pork. what would you do? do you think the chicken stock has a shot at saving anything?

chiver78, that has happened to me when I attempted to make chicken broth from a carcass in an apparent rice/slow cooker/all in one apparatus. The water steamed out and the results were indescribable. What was your issue do you think? Not enough liquid? Good call about bathing it overnight in the stock. When you warm it back up, I'd do it slowly on the stove. Good luck and keep us posted.

that's gotta be it, either that or it was still frozen in the middle when I put it in the crock and it thawed/cooked too quickly? the whole thing was really cold when I was trimming some of the excess fat off before cooking. I really don't know, it's never done that before. I think what I'm going to do to test tonight is what you said - warm up a piece on the stove, slowly. if it reconstitutes okay, I'm good. I'll just freeze the whole thing in portions WITH stock in the ziploc bag. I'll make some chicken for the slaw for the week, and deal with the pork some other week.

Yeah, not sure it's because it was still frozen. I know some people put frozen food directly into the slow cooker and not have an issue. Either way, crazy and a super bummer for you.

I put frozen chicken straight in when I do black bean pulled chicken, so it does definitely work. I will say that the overnight bath of chicken broth seems to have done the trick. I poured more over the tupperware container, and will just portion the pork out for freezing tomorrow night.....broth included. we cooked extra chicken before saucing the stirfry tonight, I'll use that in place of the pork for burritos this week. sent from my electronic distraction

Monday is scheduled for veggie. I DID eat veggie but pulled a tofu dish made in late Dec out of the freezer-no idea of cost. Cooked lunch from scratch and here is the breakdown:
0.37 faux crab 0.40 veggies 0.10 pasta 0.25 EVOO, minced garlic TOTAL 1.02

i do NOT understand people who do not have time to meal plan. I sat down this am and did min in 10 minutes, made some changes and was done in a total of 15 minutes. Maybe it is because I have a basic outlin. Maybe it is because I plan this week based on what is already in house. My ads change on Wed or Thur depending on the store. those items will be bought late in the week or over the weekend & be the basis of the following week's plan.
3/15-21 Breakfast: Bread+ x 2, cottage cheese, yogurt x 2, cereal, pancakes or waffles Lunch: egg x 2, fish x 2, ground meat, meat, junk Dinner: chicken x 3, veggie x 2, cottage cheese x 2

Week of 3/22-28
This week’s menu is written very lightly in pencil. The weather is taking a bit of a cold turn. I have 3 meals out (only paying for 1) already on my schedule over the next 8 days and may ADD another if I get a nail appointment. I will most likely change it up quite a bit. Wrote up this menu in 8 minutes.
NOTE: plans calling for salad, sandwich or soup are interchangeable in this changeable weather or activities.
Breakfast: french toast, cottage cheese x 2, bread+, yogurt x 2, pancakes or waffles Lunch: sandwich, chicken x 3, egg x 2, out (FREE) Dinner: fish, veggie x 2, egg, cottage cheese, ground meat, out (to DD1)
Also going out on Sun 3/29 and paying that time.

Breakfasts: 7 (2) rice cakes with peanut butter, 7 cups of tea. Lunch: Chicken sliders w/ff, 3 bologna and swiss sandwiches, 3 cottage cheese with fruit. Snack: rice krispie treats, 5 Fiber One bars, 1 yogurt. Dinner: Baked potato with chili, 4 chicken and veggies, 2 Pizzas. Water: Trying for 5 bottles (16 oz) a day. That includes my tea since I use bottled water for it. Before bed: Fruit or pudding

Between a busy weekend & my holiday starting Fri eve I don’t have it quite together this week. Plan, so far, is: (know I am missing 1 lunch & 2 dinners)
Breakfast: cereal, cottage cheese x 3, yogurt, x 2, egg Lunch: chicken, ham, egg x 2, salad plate, bread+ Dinner: out, veggie, nachos/tacos, chicken, fish
Like pretty much everyone, I have a TON of food prep to do going into the holidays.

I had to spend 2.99 for 3 artichokes today & 40c per ear of corn .... that's nothing but the top of thistles & a version of grass. Food will be expensive this summer

week of 4/5-11
The entire week is still Passover.
Not sure exactly when I will eat which but here are my ideas for my this week’s meals; some will be eaten twice. Breakfast: yogurt, matzo & spread cheese, cottage cheese Lunch: salmon patties, chopped liver, eggs & onions, fried matzo Dinner: gefilte fish, apple kugel, cottage cheese Other possibles would be zucchini fritters, tuna salad, salad plate and/or carrot kugel.
NOTE: Lunch & dinner are interchangeable.
I already have leftover broccoli, feta & cheese pie and roast chicken on hand to eat. Salad, veggies & fruit to be added to most meals.

After a week of NOT doing routine menu planning this week took me MUCH longer – about 45 minutes. Most likely in for a LOT of adjustments will be done this week (LOVE erasers). 1 or 2 new recipes are in the plan.
