Last night: Crab crack slaw (cabbage, spices, sesame oil, soy sauce, canned crab), cheddar brats Tonight: Nacho soup, homemade tortilla chips Tuesday: Grilled avocado w/ buffalo chicken dip, steamed baby bok choy Wednesday: Leftover soup, cheese quesadilla Thursday: IDK yet Friday: Take out from? Thinking ahead. Since I am having oral surgery on 5/1 the menus for the following 3 days will be planned for soft, easy foods: cottage cheese, yogurt, soup and/or ground meat. Not sure what I will do about fruits, veggies & salads mostly because I like vegges al dente, most fruits are a bit acidic & I use vinagrette dressings.

I have the Lentil stew I made Sunday and I will be doing Spaghetti with meat and veggies later this week. I will be able to do several servings because of adding lots of mushrooms, olives and anything else I think of to the pasta sauce.

Still somewhat limited in what I can eat after the dental surgery last week. Should be pretty ok for just about everything late this week or next.

I there is no additional participation but the rare person in addition to me I will let this thread die. The thread is a really good idea and a way for some of us to potentially come up with meal ideas. Meal planning (or any planning really) has never been my strongest point. The best I can come up with as a plan is sandwiches 5 nights a week and cereal the other 2 nights. Anything more appetizing than that is just a bonus if it actually gets made.

That is exactly how I felt about it. I regularly read several web sites & blogs to get ideas. I do NOT like to cook every night and like to keep a variety of pre-made entrees ready to go in the freezer. Right now I have:
cooked chicken chicken jambalaya sweet & sour meatballs Ham steak
Also have fast easy preps: chicken kiev fish fillets shrimp fake crab canned tuna black beans stuffed potato humus & (veggies/pretzels/chips......)
I am just about ready for lasagne & plan to brwn up some ground meat for tacos and/or taco salad.

Been out sick this week. There is a nasty virus going around and DH was kind enough to share it. Sunday: Fried catfish tacos in shredded cheddar taco "shells" w/ fried okra and green beans Monday: Teriyaki chicken breasts, sliced tomatoes and mozzarella, drizzled in olive oil, baked beans Tuesday: Ground beef burritos Wednesday: Nachos using homemade tortilla chips to use up the rest of Tuesday's seasoned ground beef and Monday's chicken Tonight: IDK b/c it's my first day back to the office and I might collapse upon arriving home. Friday: Take out from? I'm thinking an awesome burger place Saturday: Most likely BBQ'd brats w/ trimmings Sunday: IDK yet

Happy Monday, everyone!
Last night: Leftover Italian sausage from Saturday, zoodles (spiraled zucchini) sauteed in butter w/ fresh garlic, leftover refried beans for DH. Tonight: There is a beef roast, turnips, celery from the freezer, and leftover carrots in the Crock Pot for tonight. Tuesday: Fried chicken drumsticks, spaghetti squash Just learned I have a food and feedback tasting this evening, so DH is on his own, and I might fry up the chicken tonight for him to eat tomorrow night. Wednesday: Leftovers because I have a meeting Thursday: Lamb blue cheese soft tacos, veggie Friday: Take out from ? Memorial Day weekend: IDK yet. Most likely BBQ one night.

I usually steam & then saute in butter, but I want to get a little healthier so I figured roasting might do the trick!

rockit, I never made roasted veggies until a couple of years ago. Growing up (I'm 70 now) veggies were heated in a pot on the stove and potatoes were mashed. I discovered roasted veggies are wonderful!!! I add some Perfect Pinch seasoning after drizzling them with olive oil, a little salt (very little) pepper and anything else in the spice cabinet that looks interesting at that moment. I've never tried brussel sprouts, but little onions, carrots, potatoes etc. are so easy to do and taste so yummy.

Roasting veggies is my new favorite way as well - I tried it last fall I think and usually do it at least once a week. Asparagus, onions, bell peppers, potatoes and carrots are ones I do often. I sometimes throw in a little Worcester sauce as a seasoning with the olive oil, S&P, and other seasonings.

They were slapped on the stove and heated to some horrible texture. I started roasting vegetables a couple of years ago when I started with a produce subscription and ended up with a lot of vegetables that I either previously hated or had no idea what to do with. Since I've started roasting vegetables I've found that I really like a large variety of veggies I wouldn't have touched before...asparagus, brussel sprouts, cauliflower, turnips, parsnips, beets, etc.

My Dad was raised on a farm, so it was beef/chicken. Back then pork was considered too dangerous to cook, I guess it needed to be smoked instead. And veggies were not something other than potatoes that were grown. My Mom never varied much from the standard as her Dad was a supervisor in one of the large beef packing companies in Omaha. I'd never had a tomatoe until I was in my 30s and never tasted asparagus until a few years ago. Still have never tried a turnip or beet.

I LOVE roasted veggies & do them about 1x/month. Make bell peppers, cauliflower, broccoli, potatoes, asparagus. Don't care fo carrots, turnips or rutabaga.
Late DH thought the only veggies worth eating were potatoes, lima beans and corn. To me those are carbs just like rice or pasta or bread.
Since I am a fairly adept cook I also like coming here to get new ideas.

My menu for next week is at least 1/2 planned. I see more roast chicken & roast veggies in my near future. Whole chickens are on REALLY good sale and cauliflower, zucchini & Brussel sprouts are all on sale at my regular stores. I have potatoes on hand.
