I've been eating way too much of all the wrong foods lately. I feel so gross and it's affecting my workouts. ditto. I already have plans on cleaning up my menu this week and moving on. hopefully I haven't done too much damage! I've got a pork shoulder in the crock pot right now for my lunches this week. that will get shredded and stay unsauced for burritos. the most unhealthy part of the burrito is the tortilla, but it is what it is. in these burritos, I layer the pulled pork, fresh baby spinach, Asian coleslaw and a healthy douse of sriracha. so very tasty!

After asking all of you how to make bean & ham soup, as I was going through my individual recipe book today, I discovered my Moms recipe for that called Stormy Day Soup. Who knew? I don't ever remember her cooking that and I think my Dad would have had a fit if she did.
All hers calls for is beans, water, ham cubes, bay leaf and some onions.. Sounds really boring and tasteless to me. I think salt free chicken broth would be far better than plain water.

I do that too, or greenleaf lettuce. it just doesn't work for this, too messy. somewhere, I have a knockoff recipe for PF Chang's lettuce wraps. I should look for that, my roommate threw a can of water chestnuts in the grocery cart yesterday. I don't think he'll use the whole can with tomorrow night's stir-fry, but I can do up some lettuce wraps for NYE if we do end up staying in - which is seeming more and more likely.

My potato casserole is in a 9 x 13 baking dish. Planning on having a little bit of it with roast beef tonight. The rest will go into containers for the freezer: That is if I have enough empty ones that are the right size. It's been raining non-stop since Friday and more is expected tomorrow too. I have no inclination to go to WMT to buy some freezer containers....<sigh> but I may not have any choice.

BG, you could always wait a day or so before heading out to WMT to buy containers. your leftovers can sit for a couple days and still be okay.. I think we all just decided on dinner tonight. I have a couple packages of Buitoni chicken/prosciutto tortelloni (purchased BOGO) and my roommate thawed out some BSCB to do something with. I'm going to saute the BSCB in olive oil w/a lot of cracked black pepper and a little salt. we'll toss that with the tortelloni, some more olive oil and a ton of crushed red pepper, with some pasta water as needed. I really wish M could do garlic, b/c this would be fucking amazing with a few thinly sliced cloves in the saute pan with the chicken. but, we'll make do. cost: $4.49 BOGO Buitoni $1? BSCB - purchased in a bulk pkg at <$2/lb. not sure how much is thawed out. - spices, EVOO, grated parm are always in the house and are never factored in to cost breakdowns.

Pretty mundane but pretty tasty: homemade beef tacos with all the fixings and some carrot sticks. Cost? $28 for at least 7 meals (the ground sirloin is the budget buster). ETA: I made a quintuple batch of sugar cookie dough earlier in the week and then refrigerated it in sections. ODS just baked us a batch, so that will be dessert.

I'm so not good at determining the cost of meals. I'm capable; I just don't have the tenacity.
For Christmas Dinner: we had brisket, made-from-scratch green bean casserole, and made-from-scratch bread.
Last night: we had (using the brisket), BBQ beef on hoagie rolls with a green onion garnish and tator crowns.
Tonight: we had chicken breasts poached in marsala, left over green bean casserole, and the remainder of the bread dough freshly baked.
Tomorrow: we'll have ham soup made from scratch with the ham bone and ham from last week's extended family Christmas party.
Tuesday: beef stir fry (made with left-over brisket. It was a six pound brisket, so six meals out of it.)
Wednesday: homemade lasagna (freshly made pasta, but a Prego-based sauce), homemade rosemary artisan bread, and garden salad.
Thursday: left overs
Friday: chicken tacos

We ALL tend to overdo the food & treats at this time of year. That is why the most common NY resolutions are to diet & excercise.
BG You can cut up your potato cassarole, put each piece on a lined baking sheet, freeze & then store in freezer baggies.
12/27 FFP Lunch turkey (fridge end of code), bacon (freezer), lettuce & tomato (getting VERY soft) on a roll bought >1 month ago Dinner canned chicken noodle soup (pantry w/a best by date of Aug 2012)

DH will have either coconut shrimp or crab cakes (both on sale last week and frozen) and I am having a BBQ chicken sandwich. I've got raw carrot and celery sticks for my side (something healthy after the holidays, right?) and he can have some mac and cheese or orzo with a bit of last night's very good tomato sauce. It's a very thick sauce, so I will thin it out with a bit of milk when I reheat it.
Not sure about tomorrow or Wednesday - I do have chicken in the freezer, but we had it last night, so I may wait until Wednesday to serve it again. NYE dinner is small top round steaks that I will marinate and grill, served with baked potatoes and steamed broccoli.

roommate is making a big chicken stir fry tonight. I need to pick up some veggies at the grocery store over my lunch hour. right now, I've got bell pepper, carrots, bean sprouts and bok choy on the list. I have broccoli, radish, green beans and water chestnuts at home already. what am I missing...?

I'm making fried rice tonight. I know I was supposed to do it last night but instead I had guacamole and tortilla chips. I did make the rice last night though so all I have to do is cook the veggies and egg. I'll probably also sautee the rest of the Brussels sprouts too. My boss gave me a $50 Visa gift card for Christmas, so I'm definitely treating myself to a dinner at the Mexican joint this week.

Similar to marvholly , I've moved into clean out fridge/freezer/pantry mode. And, similar to MJ2.0 , I've been eating off plan foods, and feel blegh. That being said, it was a blissful week off: Last Sunday dinner out w/ Dad and the fam: We shared a brie plate, calamari and stuffed mushrooms. I had the best Filet Mignon ever as my entree. Monday dinner out again: Had orange chicken stir fry w/ rice. What carbs? Tuesday: Cannot remember, LOL Wednesday take out: Carne asada Christmas Eve potluck w/ mom and the fam: DH smoked a ham (sale, and used a gift card from one of DH's bosses), and we had au gratin potatoes, Hawaiian sweet rolls (sale), corn (.50 sale), stuffed eggs and green jello salad from sis, and veggies and dip from mom as sides. I made a devil's food cherry cake (the cake mix and Cool Whip were on on sale) for dessert, and sent half home w/ the fam. Christmas: DH and I had crab legs (sale) and scallops w/ leftover biscuits (sale) from a homemade biscuit and gravy brunch. Similar to Red Lobster, I put cheddar and garlic powder on the biscuits. Saturday: Monte Crisco sandwiches with leftover ham, served with leftover sides. Last night: Ham and beans from the leftover ham hock. I haven't gotten too far with this week's menu: Tonight: Beef sausage (sale, coupon) with ? Tomorrow night: Chicken drumsticks (sale) with ?

DH isn't feeling well so he is having leftover chicken and rice soup from last night. I cooked a pork roast in the crock pot yestersay so i would havr it on hand for some dinners this week. So, I am having some honey balsamic pulled pork and green beans.

Made the fried rice and kept back enough for lunch tomorrow. Tomorrow I have DS so dinner will be sweet potato quesadillas for him and sweet potato and black bean quesadillas with salsa/guacamole for me.

I figured it was the chopped turkey/mayo variety, but I've never heard of putting hard-boiled eggs in it. crunchy veggies, sure. I put diced apple and red onion in my tuna salad. but eggs? that's new.

It's not new here, optional but nothing I haven't seen before. See, we don't do fruit in the salads that often around here. I've had it, but it's not a required ingredient.
