no idea. I'm on my own tonight, and had pretty much just planned to order a pizza....and then that's what was brought in for the meeting over lunch hour. to add insult to injury, it did not sit well at all.

the strawberry shortcake ice cream treat I had around 3 settled my tummy quite a bit (dairy's good like that...) and by the time I got home, I was pretty damn hungry. I definitely just killed all of the leftovers from last night's tasty dish. note to self - this was way better last night, so cut the recipe down next time.

had some toilet trouble last night/this morning and realized that I don't have a plunger. So since I have a planned lunch with a colleague, I'll have to get one tonight. Any interruptions in getting home after work delay dinner greatly (and increases DS's grump level greatly), so tonight will have to be some sort of takeout. Since last night was chicken nuggets and fries, we can't have that tonight. DS will eat pizza but it's definitely not a top choice for him. Maybe Boston Market? More than I want to spend but at least I know he'll get something he likes that's not solely fried fat.

Spaghetti did not happen last night. I got home too late. I had tuna fish sandwiches instead. So tonight is going to be spaghetti.

Hot dogs on the grill tonight with chips and whatever. DD's birthday was Tuesday and she has somehow conned me into a mini party at my aunt's house. (Who always wants it there and volunteered to have a fire in the yard) So it'll be fun for them and hopefully fine for me.

We'll have a doctored up pizza tonight instead of take out since last night's drink and appetizer turned out to be dinner out for $50+.

College boy is waiting for his flight home for winter break to take off. At his request, we'll have pasta with meat sauce. But, since I've been sick, I haven't gone grocery shopping in a loooong time, so all I have for vegetables is a few carrots and some red peppers. My conjunctivitis is still really active and really obvious -- I'm not going anywhere looking like this, not even a quick trip to the grocery store. So, kind of a lame dinner, but maybe a little healthier than something like 5 Guys? Cost? I'll be reaching into the freezer and pantry for most everything and having to use what's on hand, so it will be pricey because all I have for meat for the sauce is ground sirloin and hot Italian sausage from a local farm. $15?

I had chicken salad on crackers....tonight is community pot luck and I'm making apple crisp. Will make a full recipe and take half of it, the other half will be put into those small pot pie size tins, then frozen and then I'll get out my Food Saver and pack them up when solidly frozen.
I have some cooked roast beef in the freezer too, supposed to rain tonight and all day tomorrow, so will thaw the roast beef out, then add some instant mashed potatoes for dinner. If any beef left after that it will be used for roast beef sandwiches.

Sweet & sour chicken thighs, steamed veggies and mashed potatoes. It's the first time I've cooked all week.

I made enough pasta last night for two meals. I'll probably have that tonight with the rest of the salad. Save me cooking and that's always a good thing! It's darned hard to cook for just one!

It's becoming increasingly important in this crazy world we live in to celebrate the little things in life.
So, tonight, we are celebrating ODS finishing his first semester in college.
Dinner will be steaks on the grill, baked potatoes, sauteed spinach and garlic, and a simple salad.

It is NOT hard to cook just for 1. I have been doing it for >10 years. I am a big believer in cook once and eat 2x or more and I noi longer have a separate freezer - just my side by side (which is stuffed).

I am a big believer in cook once and eat 2x or more and I noi longer have a separate freezer - just my side by side (which is stuffed). I agree.....even though cooking isn't my favorite thing to do, so far in the past 2 weeks I have 4 servings of stew meat and gravy over mashed potatoes in the freezer, 6 containers of homemade chicken taco soup and 5 servings of homemade apple crisp. There is also some cooked roast beef in the freezer All in individual containers of 1 portion each.
I'm planning on getting additional ground beef to make a Kraft recipe of mini-meatloaves. IIRC, it made either 6 or 8 individual servings. It finally got cold here today, so I think chili will be cooking in the slow cooker sometime this week.
I just loaded up on single items from the meat dept. @ The Fresh Market last week too. Just add a salad or a single serve packet Kraft mac & cheese and I'm all set.

I put some chicken in the crock pot. When I get home I will make gravy from the drippings and mashed potatoes and some kind of vegetable. Or maybe a salad.
