My 5 year old tells me about the mean kids in PreK. So far I've told her that mean people exist and to steer clear of them. Mom of the year right here. I think that beats my "um. Oh, really. What happened next?" comment. Beth winces in memory. actually, i may have phrased it closer to "suck it up buttercup, there's meanies all over the place."

I have to use ghee to make the mashed potatoes, due to DH. Also almond milk. It's good but it's not the same. [/quote] I read to fast and thought you said you were making ghetto mashed potatoes I was like wth how do you make those ;D

I think it's regular mashed potatoes with cracklin' pork rinds mixed in, maybe a dash of Boone's Farm to taste.

I lied by ass off to both DH's family and mine and told them that we are way too busy with DD's band stuff for the football game on Thanksgiving to have it with them. I even said they can't come here because no one will be there all day. I think I am going to hell. Now all I have to do is figure out what to do with all the food we will still have. Is a 14 lb turkey with stuffing, mashed potatoes, garlic carrots, creamed spinach, green bean casserole, pumpkin pie, and cheesecake too much for four people?

DH has started putting buttermilk in the mashed potatoes. Especially when we are having them without gravy.

Pretty close to what were are having for the 4 of us. Except that it's pumpkin cheesecake and apple pie. And a pineapple salad instead of spinach, sweet potatoes instead of carrots. But same number of dishes And did you remember a relish tray or appetizer? Cocktails (see my first post) and a couple bottles of wine?

And I am sure booze will be in my glass at some point. ;D ETA I sure someone will open up some olives and cranberry sauce too.

On a related note, anyone do anything unique with mashed potatoes? They're my favorite food and I'm making them to take to the family Thanksgiving. I've mixed in bacon, cheese, sour cream, etc so far (some combined, some individually). Just curious if anyone does anything else I can try. It's like the only thing I actually make purely on my own to take and the way I make them is getting boring.

Ummm. We are in Wisconsin Land of cows, cheese and lushes. Um, Florida, too. At least the lush part. That cranberry whiskey recipe looked so good I made up a batch. While it's freezing, I'm drinking one on ice. It is good. Really good. Maybe it won't all get to the freezing point.

Lately it's potatoes, milk, butter, sour cream, cheese, chives, bacon, salt, and pepper. Haven't tried the garlic/olive oil combination posted above, might be a good one to attempt, simple and straightforward. Though I think I'm going to have to just mash them, pretty sure I don't own a "ricer" or "mill".

I like red ones mashed up with garlic with the skins left on. I now have a butter turkey. A worthy use of $2.99 at Wegmans and it is real butter.

::Well how often do you have mashed potatoes? ::
Like once/twice a month, but I make 10lbs at a time and just eat them every day until they're gone.
When you make red ones do you cook them whole and then smash them up? Or you cook them cut up already just with skins on?
We love red potatoes at our place!

Jesus no wonder you think you are going to have a heart attack. I like a little more variety than that. I scrub them down good and cut out any spots that look questionable. I generally chop them up. You could leave them whole but I think they cook faster in pieces and they'll be easier to mash.

I'm making vodka Christmas cake, but we're bringing it for Thanksgiving....recipe is below. It's almost foolproof....
Once again this year, I’ve had requests for my Vodka Christmas Cake recipe so here goes. (Made mine this morning!!!!)
1 cup sugar, 1 tsp. baking powder, 1 cup water, 1 tsp. salt , 1 cup brown sugar, Lemon juice, 4 large eggs, Nuts, 1...bottle Vodka, 2 cups dried fruit. Sample a cup of Vodka to check quality. Take a large bowl, check the Vodka again to be sure it is of the highest quality then Repeat. Turn on the electric mixer. Beat one cup of butter in a large fluffy bowl. Add 1 teaspoon of sugar. Beat again. At this point, it is best to make sure the Vodka is still OK. Try another cup just in case. Turn off the mixerer thingy. Break 2 eegs and add to the bowl and chuck in the cup of dried fruit. Pick the fruit up off the floor, wash it and put it in the bowl a piece at a time trying to count it. Mix on the turner. If the fried druit getas stuck in the beaterers, just pry it loose with a drewscriver Sample the Vodka to test for tonsisticity. Next, sift 2 cups of salt, or something. Check the Vodka. Now [filtered word] shift the lemon juice and strain your nuts. Add one table. Add a spoon of sugar, or somefink. Whatever you can find. Greash the oven. Turn the cake tin 360 degrees and try not to fall over. Don't forget to beat off the turner. Finally, throw the bowl through the window. Finish the Vodka and wipe the counter with the cat!

Shocking news everyone - the brussel sprouts in the crock turned out...wait for it....MUSHY and disgusting.
My husband said the flavor was okay - but mush, mush, mush, mush.
Amazing, huh?
I'm going with a cold dish - comprised of roasted brussel sprouts, apples, red onion, a vinaigrette, feta or blue cheese and walnuts. Crunchy!

I'm going to try this for Thanksgiving:
Savory Mashed Potatoes
INGREDIENTS 2 lbs. Yukon gold or all-purpose potatoes , peeled and cut into 2-inch chunks ¾ cup 2% milk 1 tub Knorr® Homestyle Stock - Chicken 1 Tbsp. I Can't Believe It's Not Butter!® Spread DIRECTIONS Cover potatoes with water in 4-quart saucepot. Bring to a boil over high heat. Reduce heat to low and simmer until potatoes are tender, about 10 minutes; drain. Return potatoes to saucepot; mash. Stir in remaining ingredients until melted.
Blue Cheese & Black Pepper Mashed Potatoes - Stir in 1/2 cup crumbled blue cheese and 1/8 teaspoon ground black pepper.
Parmesan & Herb Mashed Potatoes - Stir in 1/2 cup shredded parmesan cheese and 1 tablespoon finely chopped fresh parsley.

1.For mashed potatoes, I boil them, then mash them with sour cream, cream cheese, and butter. Oh yeah, that's healthy. Then, depending on dh's frame of mind, I add a packet of ranch dressing mix and parsley. Then, I put it all in the crock pot for two hours.
2. We are going to to try emeril's simpler brine this year. We found a brine jar of the seasoning one year at the grocery store, but we've not been able to find it since.
3. How do make yams? DD wants to make them because she like how her step mom makes them, but I don't know if she got the recipe from her.

I'm making a sweet potato pie (never made one, never even had one) and a pumpkin pie with cinnamon/pecan crumble on top. Both are new recipes.

I want to try this allrecipes.com/recipe/pennsylvania-dutch-potato-filling/# or this allrecipes.com/Recipe/Potato-Filling/Detail.aspx?prop24=RD_NextRecipe (the second one looks like it would need some kind of seasoning--dried herbs, poultry seasoning, something). Can't do it this round, but maybe try it at Christmas. I take leftover mashed potatoes and fry them up like hashbrowns (not a new way of making potatoes, but a new way of eating the leftovers). You can also use the leftovers as a base for potato soup (add water, some cream of crap soup, some chopped potatoes, carrots, ham/sausage, cream cheese, whatever).

Oh, and hoops--not sure if you're stuck on mashed potatoes, but if not, you can try roasting them too. Cut into bite sized cubes and put them on a cookie sheet, drizzle with a little oil (vegetable oil, olive oil, whatever), season (I mix up the seasonings, sometimes it's salt, garlic powder and italian seasoning, sometimes just basil and salt, or roasting herbs like you'd put on meat, almost anything). Put in the oven at 350 or 400 and cook for 35 minutes to 50 minutes depending on how many there are. A lot of times I'll toss in other veggies like zucchini, squash, eggplant, etc.
