Meat for French dip sandwiches is in the crockpot, though it looks like the rain will miss us. But high temp of 70 expected today. Thinking of making a run to a grocery store that I spotted pork belly in last week. Have never seen it local. Should have bought it then but got side tracked. I love it from a local BBQ truck but they have not had it much the last couple of weeks. Guess I'll look up recipes. DH likes to smoke meat so we will likely have some sort of a cookoff.

last night I said eff it and made French bread pizza with the end of a baguette I had on the counter. easy peasy. I think I'm going to freeze the rest of the small jar of pizza sauce, though. I'm pizza'd out. I'd originally opened this jar last Tuesday for the calzone I picked up. I don't like the Greek sauce from that place. tonight, I'm roasting some potatoes to go with the chicken bake from the other night. also easy peasy, I'm good with that. I'm going to have to figure out something else for the ground pork, as I looked at the bell peppers today and realized most were fuzzy and one was questionably mushy in the middle. I could still do egg roll in a bowl, or maybe I dig out the NYT recipe Mich retrieved for me when I cancelled my subscription - Korean pork Mapo Ragu (I think?) it's basically a stir fry with gochujang and a bunch of other stuff, I haven't made it in a very long time.

Leftovers. DH did a rack of ribs and some chicken wings on the grill yesterday. The wings are gone and DH's stomach is burning up. There is half a rack of ribs left. Will heat those up, probably add some hush puppies, and maybe a salad as the lettuce is not going to last much longer.

I ended up using the ground pork in a family size package of Zatarain's dirty rice that I found in a cabinet. it makes a pretty full skillet, and I've been picking at it the past few days. right now, I've got the crockpot going with black bean pulled chicken. it's the other half of the package of BSCB that I opened for the chicken veggie bake late last week.
tonight? tacos, I think. I'll need to pick up pico/guac, but I have everything else on hand to use the pulled chicken as filling. ETA: wait, I just found some barely-expired Wholly Guacamole tubs in the fridge. I don't have to leave the house today. woo hoo!
I'll keep enough to have a couple meals with this, and then freeze the rest. I'm kind of chicken'd out, but this stuff was dated today and the pups weren't short on protein.

Sunday unstuffed bell peppers.
Monday grilled chicken and zucchini.
Tuesday taco salads.
Wednesday air fried pork chops and vegetables.
I'm tired of cooking this week. I have some baking planned for the weekend. I have some leftover buns to make French toast casserole with and DH has requested pumpkin cinnamon rolls. Also a nephew is coming home to visit so I'm waiting to see what his dessert request.

I'm not sure why dinner is needed every night. I'm over it this week. We have plenty of food at home that should be used so cooking it is. I'm traveling for work next week so I'll have a cooking break then. Maybe it's more the stupid dishes.
Thursday night salmon and yellow rice for DH. I'll have the leftover porkchop and broccoli with my rice as I don't like salmon.

I've been doing a bunch of cooking also, trying to build back freezer stashes of cooked proteins for the pups as well as sauce and other big batch things I like to freeze smaller servings of. I'm tired lol...
tonight, I'll be cooking rice and pork chops for the dogs. I might season a chop and nuke a frozen veggie for myself, I'm not sure yet. but I did a quick grocery run over lunch today, knowing I needed *something* for them for a protein for tonight. I discovered bone-in pork chops or ribs on sale for $1.99/lb. this store's sales run Friday to Thursday, so I wiped out the stock of pork chops for about $10. I'll get a couple containers out of that, definitely!

I cooked up ground turkey for soft tacos yesterday and will be working on that for lunch and dinner through the next few days. the rest will get frozen for later. I'm holding off on going to the grocery store and Costco. Trying to work on more food eaten out of the freezer.
So, tacos the next few days.
Probably do tomato soup with cheese tortellini one day and a veggie stir fry with baked rice another day this weekend. (I have frozen cooked pork meat. Pork fried Rice is sounding good)
Toying with the idea of some type of casserole so need to look at some recipes.

I thought about oodles of poodles! But decided on McD's instead. We were tired after painting then moving bedroom furniture back into the bedroom. I didn't eat any had noodle soup, but the kids like it.

Friday night grilling steaks and I'm craving a baked potato. Will probably also do salad.
Saturday dinner at DH's sister. I'm contributing mac and cheese and brownies.
I also need to get my peach cobbler and pumpkin cinnamon rolls made.

I think I'm on my own for football Sunday, which is fine. I can make a big meal for the week's leftovers. if I do this, I'll be roasting potatoes and broccoli to go with a package of marinated pork tenderloin. I think the package is Montreal seasoned(?)
tonight is cheese tortellini with sauce I thawed from the freezer. there will be sauce for another couple of meals this week as well.

Tonight is a yellow bell pepper stuffed with couscous, chickpeas, sun-dried tomatoes, onions, Italian herbs, and Cotija cheese (aka Mexican parmesan because I have a crap ton of it)

wvugurl26 I second the maybe it's the dishes sentiment. Nice pork chop sale find, chiver78. Nice menus, everyone. Last night's leftovers consisted of baby spinach salads topped with smoked salmon and leftover egg/sausage/cheese scramble English muffins. Sounds odd, but it worked. As WVU said, we have plenty of food on hand and I'm trying to avoid nightly cooking. I still have yet to use the zucchini substitute that was in my last grocery order, so I'll make my first calabacitas to accompany the enchiladas.
