Regarding zucchini, in the past I've made air fryer fries with them. Last night I made ihackdiabetes.com's zucchini keto chips. Delicious. Sliced eggplant air fried fries are good as well. For a crispy breading, I love to season pork rind and grated parmesan and zap it in the food processor.

I'm likely leaving the pair of squash for my parents this weekend. they barely season anything, so it could all be shared with the pups as well. I'm aiming to trash my kitchen with the eggplants tomorrow night, and ask if Dad wants any before I pack it all up for the freezer. he can have all of the pears (his fave) and they can chop.up whatever bell peppers are left, to mix in the pup meals. I'll chop the tiny watermelon in the am. tonight I'm cooking off two family packs of ground beef and a bunch of chopped kale, to hopefully cover them til I get back on Tuesday. if not, there's cooked meats in the freezer downstairs.
dinner for me tonight? I'll boil off some linguine and pour leftover reheated garlic bok choy over the top. if I'm hungrier by the time it's all cooked, I might open a can of chicken and add some of that as well.

oh, and I should say - if I have squash the size of this pair? I'm usually slicing and frying alongside eggplant. these two are HUGE. not happening this week.

Last night, DH pulled more cuts of "rough" locally raised beef from the freezer in order to thaw and make ground beef. Rounding out the next week: This Sat: We pushed date night back a week, so I'll make salmon, au gratin potatoes, and air fryer zucchini fries Sun: Grill/smoke something, bacon wrapped asparagus Mon: Caulipower pizza, veggies Tues: Ground beef tacos, veggies Wed: Canned chicken and veggie stir-fry Thurs: Slow cooker elk roast, mushrooms and carrots Fri: Shepherd's pie with an almond flour crust. I'll change out the peas for broccoli. Sat: Pub food Sun: Grill smoke something, veggies Labor Day: Burgers, dogs, deviled eggs, salad Have a tasty time, friends. Not following the plan whatsoever, LOL. I made two lasagnas on Sunday and brought one to our neighbors. Let's just say I wasn't feeling well Monday, so I warmed the other in the Traeger Monday and we had it that night and again last night. Tues and Wed got pushed back a day, and we'll have pizza Friday night. Thurs and Friday were pushed back to Sunday and Tuesday.

Tonight I will make some rice so that we can finish off the chicken adobo. That will clear out most of the leftovers. We are supposed to get bad storms after 4PM. Need to take something out for DH to grill tomorrow, since the weather is supposed to be nice. Storms move back in Saturday - may do smashburgers that day.

tonight, I'm making cheesy garlic bread. I bought a small baguette yesterday with the missing things I needed for Milanese, and never sliced it. I may also do a short stack of eggplant Milanese again, before I pack the eggplant for the freezer. my dad just confirmed he wants me to leave him some, unfrozen lol...

Hmmmm. Maybe I'll take half of the discount semolina long roll for the ham sandwich and turn the other half into garlic bread. Now that I have smoky paprika in addition to garlic powder, I can come up with a decent blend. Garlic bread from the bakery used to be a big treat at home, and so easy. Read the instructions and stick the bread in its foil lined bag in the oven. When its down, pull it out, slice and eat. Good deli meat on sale in the refrigerated section was my protein buy on grocery day. I have the last of my on sale nondairy cheddar style cheese plus pickles for the sandwich. Nothing exciting for Labor Day. Probably a TJ ground turkey burger with tater tots and whatever veggies I have.

Made the sandwich. I have some fresh mushrooms I do not want to go bad, so I tried slicing a small fresh one and using it as part of the veggies on the sandwich. Not a fan, I think I will stick to sautéing them with other food.

Tonight will be crab cakes and a pasta salad. Tomorrow is a chicken stir fry with bok choy and bell peppers. Wednesday is pork tenderloin with a sweet potato.

We went away for the long weekend. We did cook in Saturday night. We grilled steaks and chicken. I roasted baby potatoes and we had fresh sweet corn on the cob. We had a veggie tray instead of salad. The salad was yuck and I couldn't tell when I bought it. That was a waste of $8.
Monday night I'm having a piece of leftover bbq chicken and raw veggies with dip.
Tuesday night maybe taco salad. I've got hamburger in the fridge that needs used.
I also need to make a double batch of blueberry muffins Tuesday night. I've got an excess of blueberries. I made some over the weekend and our friend's son seemed to really like them. School starts back for him this week so it'll be a nice treat for breakfast. The double batch is because I have so many in the fridge and teenage boys are hard to fill up.

my host friends threw a house/pool party today to close out the holiday weekend and my birthday. so much good food, drinks and company. we basically just picked at everything as it was put out, from 1pm on. I threw in a pan of my spinach and artichoke dip, which was almost completely wiped out. there was also a very delish slow cooked pork belly, a brie/pecan/bacon/honey spread for crackers, various chips, dips, veggie trays, grilled or smoked chicken and ribs, and more. I'm so full, ans about to curl up for the night.

I just got home tonight, my kitchen is still closed. I picked up a chix/broc calzone for myself and chicken tenders for the pups at the local pizza shop. I was shaky from having barely eaten all day while I travelled. I had my half, I'm good for the night now.
but I need to do some cleaning in the kitchen tomorrow. I grabbed a paring knife that was on the drying mat, in order to slice off the foil on the top of a wine bottle, and the blade was sticky. 🤦♀️ I know mom's vision isn't as solid as it used to be, but come on....if you can't see what you're washing, maybe consider using the dishwasher while you're here? everything that was on the mat is now in the sink, and I'm probably going to just run all the silverware through in the am after I unload what I ran last Friday morning. I'll hand wash all the knives, too. whatever else that didn't get fully cleaned will just have to surprise me as I find it. 😒🤢

I made a grocery list this morning, against the local store's flyer. I stopped there on my way home from lunch out (I am still on vacation.. 😉) and already need to tweak the plans. bugger. the sale BSCB was sold out. I'll try again in the am, or take a rain check if still a no, sale price is 2.49/lb!
Anyway, the plans were: -Mediterranean chicken bake - diced BSCB and a bunch of veggies, baked in casserole and topped with cheese. uses up some squash, bell pepper, and mozz pearls fridge goblins.
-Egg roll in a bowl stuffed peppers - my go-to recipe includes a sliced bell pepper. I will leave that out and use the batch to stuff the bell pepper fridge goblins and bake. Will mix in some white rice as I fill. ground pork was on sale, which is what I prefer for this recipe anyway. recipe is either 4 or 6 servings. I think there's still 5 small bell peppers in the fridge.
lunch was a huge Cobb salad, and if I'm hungry at all later, I might open a can of soup.

DH grilled a couple of swordfish steaks last night.
2 swordfish steaks - $11.50 Frozen Mexican street corn - $2 (half bag) Caesar salad - @ $2
= $15.50 for 2 servings
Tonight will be grilled lamb chops ($10) and probably roasted potatoes ($2) that need to be used up before they go bad. Might have DH stop at the farm market after his PT and see if they have asparagus.
DH has requested french dip sandwiches this week. Likely Saturday since it is supposed to rain. There is about a 3-4LB beef roast in the freezer. I was going to buy fresh while I was in the store, but then saw the prices. Almost $30, on sale. We need to use up what is in the freezer anyway, but I will have to get back into watching for sales and especially markdowns.

Thursday night snack foods for the football game. There's a batch of Buffalo chicken dip in the fridge from the weekend. I'm going to slice up the leftover steak and saute one of the bell peppers to make fajita quesadillas. We also have raw veggies and dip.
Friday night out of town. If we leave on time, wings and beer at our favorite spot.

A close neighbor friend is leaving this Saturday because of a long-distance family situation, so I'll chip in at her house and help make supper that night and again Tuesday. Saturday we'll have cheddar cheese pork franks and whatever veggies the boys will eat (I plan on taking notes during today's ice cream date with them) and Tuesday I'll thaw and reheat the stuffed shells I made earlier this year. The batch cooking I did months ago sure has come in handy. It's time to make more to fill the freezer.

I was still mostly full from the late lunch, but I wasn't really feeling the canned soup options either. most of the box went into the trash when I cleaned up for the night. I just popped that Mediterranean chicken bake in the oven, after picking up some BSCB this morning on a BJs run. grocery store was completely out of it yesterday, except the super pricey free-range label. pass. anyway, if I like how it turns out, I'll share the recipe. it's a FB post, so I'll have to copy/paste the contents. I wouldn't ordinarily be interested in tonight's football game, except that I jumped in on a fantasy football league again this year and somehow ended up with both Mahomes and Kelce on my team. oh, and my opponent this week has KC's defense. here's to touchdowns, and tons of them on both sides! I scaled it down and used mozzarella pearls instead of feta that I don't like. I will definitely make this again.
