I echo last night being potato night. I made mashed potatoes using about 7 from a 5 lb. bag. Because I have it on hand, for the first time, I added buttermilk instead of milk only (I work with unsweetened almond milk). Game changer! The Irish soda bread turned out nicely. If you haven't used an air fryer to bake bread, go for it! It's quicker and one can avoid operating the oven.
(I bought buttermilk to make chicken fried elk steak for my neighbors this weekend. They are still two adults down with injuries so occasionally I'm helping the dad feed everyone. The elk is the one he harvested a few seasons ago.)

I cleared out some older stuff as well - a slightly freezer burned Bertolli meal, with a snack-size bag of frozen rotisserie chicken and a pile of baby spinach added to it.
I'll be losing the brick freezer packs that Malarky left here a few weeks ago on Friday when I pack up the pup food before running a few errands on the way to dropping them off for the weekend. yay, freezer space!

DH just put a venison tenderloin in the smoker that I took out yesterday. Our freezers are way overpacked and I threw out a package of boneless ribs last month, so in an effort to prevent further loss I am determined to empty one freezer by the end of the year - which DH will likely fill with more venison, but hopefully I can get better organized. There is a bit of everything meat, veggies, frozen fruit (a lot of fruit that we grew!), and small leftovers (saved sausage grease for gravy, fresh horseradish & ginger, etc). Plus the chest freezer could use defrosting. I found 4 gallon sized halved peaches from last summer, and put another 5 gallon bags in this week - and that was after using enough to make almost of gallon of peach simple syrup! Need to venture back in to see what I can come up with for a side. And maybe I will make a cobbler.

Last night, DH pulled more cuts of "rough" locally raised beef from the freezer in order to thaw and make ground beef. Rounding out the next week: This Sat: We pushed date night back a week, so I'll make salmon, au gratin potatoes, and air fryer zucchini fries Sun: Grill/smoke something, bacon wrapped asparagus Mon: Caulipower pizza, veggies Tues: Ground beef tacos, veggies Wed: Canned chicken and veggie stir-fry Thurs: Slow cooker elk roast, mushrooms and carrots Fri: Shepherd's pie with an almond flour crust. I'll change out the peas for broccoli. Sat: Pub food Sun: Grill smoke something, veggies Labor Day: Burgers, dogs, deviled eggs, salad Have a tasty time, friends.

I would absolutely make a cobbler!
I'm going to hunt down fresh sweet corn this weekend. It was late coming on this year and I've been gone so much. I can't believe it's mid August and we haven't had any.
I need to figure out food for Labor Day weekend. We are going away but we have rented a house. I am not opposed to one meal out per day but I'm sick of eating out.
I've been trying to use up the beef in the freezer. It could use a defrost. It's never been defrosted and my dad gifted it to us several years ago before covid.
I liked that I could do grubhub via the Amazon app and use my payment card from there. I appreciate not having another app because it's not a service I would use at home because I'm too cheap!

leftovers tonight, there's a few options to choose from. there were 4 small eggplants in the haul S brought over, so I'll be frying cutlets at some point this weekend. there's also a ton of bell peppers in the mix, so maybe a stir fry with the thin sliced chicken breast I picked up yesterday. I'm on vacation as of next Friday, so I'm trying to use up some stuff.

okay. I need suggestions, please! I packed up some of the produce haul and brought it to M's with the pups this morning. what I have left is 7 bell peppers, a huge summer squash and zucchini, and there's actually 5 baby eggplants. everything is in the fridge now, as it's all already kind of bruised. I feel like the best thing for the eggplant is to fry a bunch of cutlets and freeze it all for another time. but besides stir fry and maybe stuffed peppers of some sort, what else can I do with all of these? there's a couple each red, orange, yellow. and don't say roast them, I hate roasted peppers. it's like pickles, the flavor seeps into everything. ETA - I used half of an orange bell pepper tonight on a frozen pizza, with some other stuff. so I'm only looking for recommendations for 2x/ea R/Y/O bell peppers for the week. 🤷♀️

I feel like the best thing for the eggplant is to fry a bunch of cutlets and freeze it all for another time. but besides stir fry and maybe stuffed peppers of some sort, what else can I do with all of these? there's a couple each red, orange, yellow. and don't say roast them, I hate roasted peppers. it's like pickles, the flavor seeps into everything. Cut up the peppers in strips and just put them in freezer bags. Then you can use them as needed in the future for stir fries or Italian sausage and peppers, etc. Have no idea on the summer squash.

I just decided not to buy some zucchini now because they are much bigger than last time. My standard way to do them as a side is cut up in long "matchsticks" (about .25 inch wide) and sauté them in olive oil and onion until soft. Then add soy sauce to taste and herbs (or seasoning) if desired.
Think it will be salmon cakes night since I used most of the remaining canned chicken for chicken salad for lunch. Probably will have salad as a side and maybe some rice if I am up to it.

Leftover smoked venison tonight. Tomorrow - Filipino chicken adobo Sunday- Took out a pork tenderloin for pulled pork. It is pretty big, so may cut off a couple chops off for another day. It was marked down to $6 and just under 3 pounds.

I'm making kabobs tonight on the grill. I picked up more peppers this morning at Sam's Club for that reason. I will eat them raw in salads or part of a veggie tray. We also like fajitas.

The chili is simmering on the stove now. I didn't want to get more bread so I told DH we are doing fusion cuisine tonight - I'll serve either pita or naan with the chili. We're eating out with a friend tomorrow night.

I'm going to a living room concert tonight, so it's pot luck. I just ordered two pizzas to bring, and I'm enjoying a cocktail while I wait. basic cheese and then my favorite - a chicken Caesar pizza. all in all, about $50 including tip.

Made the pot pie, but not my best effort. Accidently browned the butter for the roux. And somehow my timer did not beep so I burned the crust edge. Oh well. I will do better next time. Used a recipe Pillsbury had which was pretty simple. The crust was Pillsbury, so it seemed appropriate.
Need to fill and run the dishwasher so I can use my bigger glass bowl with lid to store the leftovers.

I picked up Chinese takeout on my way home from picking up the pups. PFR w/bean sprouts, baby bok choy w/garlic, and a Stoli cocktail while I waited for the order. $43 including tip. I'll be eating these leftovers all week, with additional work for the bok choy (noodles, protein...)
my mom confirmed that she will use a few of the bell peppers for stuffed peppers while she and my dad are here next weekend, so that's solid. I'm going to make fajita seasoned veggies to use with eggs for breakfast. either omelets or rollups around some veggie strips. one night this week, I'm going to tackle breading and frying the eggplant, bc that did not happen today.

Sunday night smash burgers and fries at the baseball game. $42 with tip. They are freshly made in front of you by a local business not the stadium's food vendor.
Monday night something with chicken and sweet corn. Probably bbq chicken?
Tuesday night my in office day so leftover kabobs.
I did a restock at Sam's Club Saturday morning and the total was painful. We needed some paper and cleaning products in addition to food and drinks.

I picked up some peaches when I went to buy the corn. I'm thinking a cobbler or crisp.
I made bbq chicken Monday night. Leftovers will be dinner Wednesday or Thursday night.
I also made some strawberry lemonade. It turned out pretty good. I love chick fil a lemonade but holy sugar count.
