Pulled pork for dinner looks like. I have to do it in the oven as I have no microwave. Think 20 to 30 minutes so, for v. late lunch/linner I used up the second half of my can of tuna.
Do need to find out how to make/cook taro and yucca root. Bought them at the Spanish market by the loose potatoes and onions. Should try figure something out as they might still be good, I hope. Already time to make dinner and I just finished linner an hour ago.

Dinner was the pulled pork on top of the leftover jasmine rice w/ corn and red kidney beans. Put a few more kidney beans on top to up the veggie aspect.
Was going to have it as a sandwich for lunch but for some reason my I need to sleep snack was too much salt so the pulled pork will wait for dinner or tomorrow. (Roughly 3 servings left of the pork)
So I think I better do lazy for lunch so I can get this letter ready to go today and triage a store CC account. Probably chicken tenders plus tater tots with veggies TBD.

I needed to go Cape side this morning, which generally means a few regular stops. lunch was a tuna salad sandwich, using deli tuna salad pucked up at my old village market. dinner is going to be salmon, from the fish market around the corner from the first stop. the filet they gave me is almost a full pound, so the pups will be getting spoiled for breakfast! lol..
anyway, baked salmon crusted with Penzeys Northwoods blend. I'll roast some broccoli and tiny potatoes as sides, dusted with some rosemary (potatoes) and the same Northwoods for the broccoli.

Not sure what dinner will be, waiting for the dishwasher to finish enough that I can let it air dry and wash a pan or two. Finished off the last of the pulled pork mid-morning. For late lunch I did tater tots and chicken tenders with some sweet pickle chips.
I think I might just do some pasta with brewer's yeast and the frozen peas I got on the grocery run. Healthy and light. Still raining and gloomy out.

ooh......there was a pretty chunk of yellowfin in the case today, too. I'll have to try that. back in college, we all got on the kick of crusting tuna in Montreal chicken seasoning before searing strips of it in cast iron. it's been a minute, but that needs to happen again...with Northwoods this time.

Here's my entry in the "Better Late Than Never" class
Monday - sandwiches (had 6:30 meeting) Tuesday - Salmon patties and fresh broccoli Wednesday - Sauteed pork chops, zucchini and yellow squash Thursday - DH's turn. Polenta with crema. We have a luncheon that day so we're likely to skip supper Friday - Instant Pot turkey leg with mashed potatoes and gravy Saturday - Whatever looks good in prepared foods at the farmers market or deli, I'm not in a cooking mood Sunday - DH's turn. He hasn't decided

We have found it so tough to find fruit juices without artificial flavors, colors, or added sugars. DH found a brand of refrigerated OJ without added sugar and he gets that occasionally. Whole Foods does have a couple of good ones but it's a long drive unless I need something else from there too.

I keep apple juice and Gatorade in the fridge, for when I forget to eat and get shaky. the electrolytes and sugars get into my system fastest, I've discovered over the years. my thing this summer for go-to beverages has been to basically make a shandy by mixing 50:50 plain seltzer and Simply Lemonade (I love the raspberry one) bc the lemonade alone is way too sweet for me.
dinner tonight was a lazy one that has become a crutch for me - a chicken pot pie from the grocery refrigerated case. my day was wall-to-wall calls in between a pair of trips over the bridge for getting the pups to/from grooming. I needed stuff for their dinner, and because of how they were hovering while I was putting my shoes on to go, I ended up mishmashing whatever I had kicking around and running out afterward. oy. at least I had protein, the rest is where stuff got interesting.
tomorrow, I need to cook off more pork chops/ribs for them. I think I'm going to swipe one of the chops for myself and roast some vegetables. I'll get a big shop in this weekend, I think.

I buy fruit juices, no ades or mixed with other stuff, not cheap but healthier for us. She does like strawberry milk and that is a flavored syrup so one of the exceptions. I keep orange juice for me too, I get shakey sometimes too if I don't eat but no one else drinks it.
Tonight we had leftover roast, potatoes, and carrots, and barbecue, as DD doesn't like the other.
Tomorrow night I'm thinking fried cabbage with kielbasa, but have to fix DD something she doesn't like it. Maybe just a cheeseburger for her, not sure yet.

so, the OJ - I used to do that as well. chatting with nurses and M who's a type 1 diabetic over the years, the sugars in apple juice are quicker to absorb than OJ. something to consider. and, the kid-sized bottles are shelf-stable. when I found a variety I liked without a bunch of additives, I gave a 6pk to mooch to keep in his truck for M. I can PM you a pic of the label if you'd like.

We got back from a trip late Monday night.
I sat in the grocery store parking lot Tuesday after work and added the coupons to my card and made a list. Not ideal but we needed to eat and I leave again Thursday night for a retirement celebration/65th birthday trip for my dad.
I bought some chicken breasts and threw them in the instant pot with salsa, chicken broth and taco seasoning. On impulse I grabbed a package of chicken taco seasoning. Not sure if it's different or a marketing gimmick?
I shredded that when done and we made taco bowls. I had a package of Spanish style microwave rice in the pantry. I added sour cream, cheese, shredded lettuce and some blue tortilla chips for crunch to my bowl.
Tuesday night is food at the baseball game.
Wednesday night at the airport for me and DH is on his own.
Avoiding take out was a major victory. I've had these 3 personal trips planned for July/August since April and unexpectedly had 3 weeks of work travel added on in June/July. I'm about to see the light at the end of the tunnel. Travel can be a part of my job but I did not travel at all in 2023 so 4 trips in 3 months has challenged me. I am over restaurants but I don't want to buy so much fresh stuff when I am home that it gets wasted.
I'll season up the last piece of chicken from the pack and bake it off. It'll be chopped in salads for lunches the rest of the week for me.

how was the chicken taco seasoning? likely a bit of a gimmick, but I'm sure there were also subtle differences in the blend. Montreal steak and chicken blends are slightly different as well.
yesterday, I made a batch of meatballs (already in the freezer to give Dad later) and a pot of sauce for myself. last night's dinner was a bowl of basic linguine with gooey melty mozzarella cheese under some sauce - a total nostalgia meal from HS, and a nightmare to clean up. bowl and fork are still soaking. 🤦♀️
I'm not sure what's on the menu tonight, but as I packaged the sauce for the freezer, I saved enough for another meal in the next few days. possibly chicken parm, I have a big family pack of BSCB that needs processing for the pups. I could save one for myself.
ETA: I thawed out a small container of black bean pulled chicken and used about half of it over some bowtie pasta tonight. topped with some shredded pepper jack cheese, it hit the spot tonight.

Congrats on avoiding takeout Wvu. I find it shocking how expensive takeout is now compared to prepandemic times.
I'm going to use up the last of the discount ground beef today for lunch. TBD what it comes out as. Maybe sloppy joe like maybe not. I also bought rolls on discount on my last grocery trip so I want to use the last non onion one for lunch.
Dinner will use up the second half of my canned tuna. So tuna salad plus ? or Tune pasta salad. I'll find out when it happens.
Ground beef brick 80/20 was $4.99 on sale, grass fed. I have onion, celery on hand. Even some kidney beans, and green pepper to use up.
Tuna is my current standard can of tuna, $2.29 yellowfin packed in olive oil of which I get two servings of protein so pretty close to my $1/per serving preference when it comes to proteins.
Got the six rolls for about $2.50. A 4 pack of the onion rolls can run $4.99, so getting 4 of them in there was a good deal for me.

I might prefer the chicken taco seasoning? I've gone over the ingredient list for regular taco seasoning dozens of times. I can't find anything that's bad for me. I always seem to taste it again hours later though. Didn't happen with the chicken version.
I had to hustle on Thursday but I was able to throw together a sandwich, baby carrots and dip, and pretzel thins for dinner on the plane. The little cups I put jello shots in are excellent for liquid portions on a plane. They are 2 ounces and labeled as such on the bottom.
I've got 3 more nights away this coming week then I'm home for awhile.

I looked up Northwoods to see if Walmart sells it here. It's only available via shipping.
I went camping last week and prepared most suppers beforehand including air fried chicken legs, spaghetti with homemade marinara sauce made and put into the freezer a few months ago, slow cooker BBQ ribs, an air fryer meatloaf which got annihilated because I was outside playing with my kittens. (Even though the air fryer shuts off, it continues to cook the contents.) The spaghetti was good for two meals, and the ribs went into a quesadilla one of the nights, and into an omelet Saturday morning. I also made a dip, boiled eggs, made Spend with Pennies' pancake mix, and Zoodled a zucchini.
This week: -Mon: Chicken Caesar salad using rotisserie chicken -Tues: Anniversary dinner: Corned beef, potatoes, and homemade soda bread -Wed: Air fryer chicken drumsticks, veggies -Thurs: Salmon, shrimp, veggies -Fri: Takeout -Sat: The pub after a matinee? -Sun: Unsure

Monday - Tenderloin surprise (DH labeled the package turkey tenderloin but the inventory says pork tenderloin), cauliflower and broccoli Tuesday - Chicken tenders sauteed with onions and mushrooms, leftover mashed potatoes Wednesday - I'm waiting for inspiration, might be Italian sausages and pasta Thursday - DH's night, we have a meeting, probably a sandwich Friday - Baked tilapia and some veggie, maybe carrots Saturday - Beef chili

yeah, Penzey's is online or their own stores. I forget where in CO you are, but it looks like there's 2 stores in Arvada and Littleton. funny enough, I've got IRL friends in both of those towns I can recommend some other blends if you want to try to order up to the free shipping minimum, let me know!

The ground beef brick is used up, but I have the second pie crust to use preferably before the end of the week. My thought was to create my own chicken pot pie. I have chunk chicken in cans, frozen veggies and some chicken broth. Think I need to decide how I am going to cook part of the bottom crust and figure out how to make a sauce to hold everything together. Thinking about it if I have time perhaps I should try making a version of chicken stew tonight, and based on those lessons do the pie Wed or Th for dinner.
Given the time and the rain, I think I will go easy and cut up some fully cooked chicken sausage and marry it with pasta and brewer's yeast for a vegan cheesy flavor.
Also for this week I need to make salmon patties which I bake in the oven. Got a great deal of 3 for $10 canned salmon so I am well supplied on canned salmon for a bit.
Tonight I need to come up with a shopping list for the grocery store. Hope to get some chicken patties that exist at this store but not my usual one.

A quick note to mention last night's easy and delicious Caesar salad! About half the meat from the rotisserie chicken was shredded and placed on top of chopped romaine, drizzled with Brianna's Asiago Caesar salad dressing, and then finished with grated parmesan. I forgot to follow the recipe I found which called for crispy pepperoni and feta. Oh, well. Perhaps tomorrow.

Went easy for dinner, gluten free chicken patty, tater tots, and some butter lettuce on sale for a salad. Under $4 for the meal probably less.
Would welcome suggestions on makes a sauce for my chicken stew into hopeful pot pie which I will start tomorrow. I did get a loose potato so I can add that along with frozen peas etc.

I need to break this cooking rut. tonight, I chopped a small russet potato (from a 5lb bag, not a huge "baked potato spud") and roasted that. I poured a package of frozen cheesy broccoli and the last of an open can of chicken over the top.
my friend S (that carted my butt around when I sprained my ankle and wasn't driving) works at a local farm, and already warned me that she's bringing me a ton of fresh produce tomorrow. between myself and the dogs, we won't waste much if any. maybe that will kickstart me off this rut. hopefully, anyway!

Anyway someone told me you get free delivery fees with Grubhub if you have Amazon prime. I set that up and ordered because the room service menu didn't excite me.
I'm getting a smoked, loaded baked potato topped with pulled pork and a drink was $32 with all the fees and tip. I'm still well within my per diem amount for the day but it seems excessive. I'm way too cheap to order like this on my dime.
I'm fortunately able to access the lounge for breakfast and bottled water. They have one hot dinner appetizer but it was a curry stuffed one tonight and that is not on my list. Monday night it was a taco filling.
I will be grabbing a bagel for sure before I head to the airport Thursday morning.
