Wednesday night I baked foil packets. I used chicken breasts, Colby jack cheese, bacon and broccoli.
I cooked bacon over the weekend and had a bunch left. And the broccoli in the fridge was looking rather sad.
The last packet will be Thursday's lunch. Dinner on Thursday is the other half of the black bean tacos.
Friday night is something at the baseball stadium.
I fly out Monday for work and come home long enough to swap suitcases before going with my brother to visit my dad for the weekend. That will be a big break from cooking. And after that much eating out, I will want a home cooked meal.
DH can figure it out. And people always feed him when I'm gone. He's an adult, he won't stave. On the other hand I guess if you are cooking, one more plate isn't a big deal generally.

It rained last night and this morning. I started potato soup first thing. It's nice and sunny now. H. said he'd eat soup if it's warm out!

I've seen you post about this a few times. curious how much different the cook times/temps are when you're sealing in the steam. thanks!

tonight, I just roasted a handful of seasoned tiny potatoes and Brussels, and reheated a pair of sauteed chicken breast slices. I added a little bit of shredded mozz/provolone before I dropped the chopped chicken into the bowl. it all hit the spot.

This is not a full meal. My son told me about great value energy instant straws. I got the one with drops since I'm sensitive to stimulant now. Zero calories. Wow does it work. I put a few drops in about 1/2 cup water. I was tired today and tried all my usual helps. I finally decided to try 1/4 cup of energy. Yes, it worked. My knees and ankles are tired but not my muscles all over. If you decide to give it a try, be sure to read the package. If you decide to use the straws, start with a 16 ounce bottle of water. As you sip it down during the day, keep filling it up with water to dilute by the end of the day so you aren't jacked up. I would not recommend chugging a full bottle and straw. Edit. I can get insomnia from eating chocolate too late in the day.

Left over potato soup and a hamburger patty I'll finish the last of the potato soup tomorrow. Sometimes it frosts me that H. doesn't help me clean up left overs. The exception is when I'm out playing golf all morning then come home expecting some quick left overs and they're all gone.

Saturday night DH grilled steaks. Sides were sautéed squash and red pepper and salad.

Sunday night cookout at my BIL's. I bought hamburger and hot dog buns. I'm also making cupcakes and cheesecake stuffed strawberries. chiver78 foil packet recipes below The chicken bacon ranch ones I did most recently www.craftymorning.com/chicken-bacon-ranch-foil-packets/I didn't cube the chicken. I do slice the chicken breasts in half when I make packets. I brushed some olive oil on them and sprinkled the ranch. Not sure they needed the oil as they were a bit watery. I would add some different spices or something next time. But it was an easy recipe and used up odds and ends. The southwest ones I do frequently: gimmedelicious.com/southwestern-chicken-rice-foil-packets/I make 4 packets. I don't add olive oil. I let them sit for a few minutes after they are done and they slide right out of the pack. I also use regular rice and just mix it up and let it soak for 15 minutes or so while I chop and prep. If I have zucchini or squash I will add slices of that. I don't measure the salsa or cheese I just put some on top of each packet and seal.

thanks, wvu! ranch isn't my speed, but it looks easy enough to adapt to other seasonings. I'll give it a shot soon. I did a stock-up trip to Walmart this morning and was blessed with mostly green lights so I haven't needed much ice unlike yesterday. I've got 3 family packs of BSCB to run through the IP tomorrow for restocking the chest freezer stash. yesterday's grocery run also netted me a pair of center cut bone-in pork chops for $2. I'll be cooking those tomorrow night in my snazzy new toy that arrived yesterday - a 3.5qt "sauteuse" in Caribbean. oh, and I also picked up a bag of russets, so I'll also be making that pot of mashed potatoes I've been craving all week. haha. tonight, though? I'm going to clean out some leftovers. sauteed BSCB and veggie-loaded pasta salad.

I served it on white rice. I discovered there are no more ribs left in the house, so Sunday I slow cooked top round steak with BBQ sauce and carne asada seasoning. I served the beef on top of leftover rice, and air fried French fries with leftover green beans and cornbread were sides. In true YMAM spirit, we topped the cornbread with leftover KFC honey packets since the rest of the honey went into the cornbread baked in the air fryer last Sunday. Today's freezer leftovers will be chicken spaghetti soup I made last November. A spinach blue cheese side salad will accompany it. It's a huge container of soup and removing it from the freezer opened a lot of space. Tues: Comfort food including egg rolls and fried okra Wed: Salmon, shrimp cocktail, veggies Thurs: Slow cooker chicken, veggies Fri: Takeout Sat: Steak or beef franks, veggies Sun: Something easy Have a tasty week, everyone.

I finally broke in the sauteuse last night, and dinner was phenomenal. I roasted a pile of chopped Brussels that were tossed in EVOO and the same seasoning blend that the pork chops were crusted in. I've got a leftover pork chop, but I'm not feeling it tonight.
right now, I'm waiting on my microwave thawing out a container of sauce from the chest freezer. I'll decant what's thawed enough to reheat and let the rest settle in the fridge. I'm going to toss a package of spinach ravioli in it, once things are good to go.
tomorrow night is going to be leftovers heaven, while I clean out the fridge prior to andi9899 and Malarky landing here. we'll hit up the grocery store on Friday morning, and andi9899 has promised us a full-on spread of fantastic food while we and a couple other local posters hang out at my house this weekend. the last time we gathered, I trashed my kitchen with a huge Italian red sauce feast. I'm off duty this time lol...

Made a really good Instant Pot Swiss steak last night and served it over egg noodles. I'm trying to get out of a cooking rut and try new recipes or return to some I made years ago. Looking back in a FB Instant Pot group reminded me of this one and some others we enjoyed.
I'm going to try a vegetarian stuffed bell pepper thing next week that I made up in my head. Instead of the usual rice and meat stuffing, I'm going to do couscous, chickpeas, sundried tomatoes, feta cheese etc. Sort of a Mediterranean spin.

I cannot believe it is almost mid-June....
Last night I made salads using romaine, smoked salmon, and parmesan Caesar salad dressing. The dressing is Briannas brand and has half the sodium of other dressings. On the side were smoothies made from frozen blueberries and strawberries, coconut milk, a splash of vanilla, a dash of cinnamon, a bit of ground flax seed, and some plain yogurt. Refreshing in 90-degree weather.
Tonight: I'm thinking about making meatloaf in the air fryer. Veggies will be on the side.
Tues: Slow cooker sweet and spicy chicken breasts, veggies.
Wed: Salmon, shrimp, veggies
Thurs: Takeout
Fri: Stir-fried Mongolian beef and veggies, rice for DH's birthday
Sat and Sun: IDK yet.

Sunday night we had another family dinner. I made lemon blueberry cheesecake bars. They were pretty good and probably would have been better if they had more chill time.
Monday night beef cabbage stir fry. Trying to get back in the swing of cooking.

Malarky and andi9899 arrived Thursday night, finnime and empress on Friday afternoon, and all but finnime stayed til Sunday. Malarky brought a deliciously divine strawberry French toast breakfast casserole and a broccoli slaw. andi took over my kitchen Friday to put out a spread of fantastic Mexican family recipes - a big pot of pozole, Spanish rice and refried beans, pork chile, fresh pico de gallo and guacamole, and some taco-seasoned ground turkey with all of the typical taco toppings. I sent a bunch of leftovers home with folks, and froze half of the pozole already. I won't need to cook for myself very much this week with what all is still here.
tonight, though? I'm going to use up more of the red sauce I thawed on Thursday and just have a basic bowl of linguine marinara for something different.

Sloppy joes and macaroni and cheese. I don't eat pork. I read the package on EnCore Salsibury Steak with gravy. Made with chicken pork, beef. Darn. One of my favorite, fast, tasty meals.

I'm having an actual meal for lunch instead of just picking at stuff, so we'll call this dinner. the pups needed white rice for their stash, so I'm building a bowl with some white rice, leftover black beans and the last of andi's pork chile. will add some queso fresco and guac, and call it good.

Monday night ended up being pizza. I didn't make it to the grocery store to get the stuff I needed for the stir fry.
I made the stir fry Tuesday night.
Wednesday night was dinner at the baseball game.
Thursday was leftovers.
Friday I'm going to make bbq chicken for lunch. I will probably serve it over salad to offset dinner which is the second baseball game of the week.

I got creative tonight, I'm down to not a whole lot. tonight, I diced a couple red potatoes and roasted those with some broccoli. added a small can of chicken and tossed with some shredded pepper jack cheese. it hit the spot, but I'm looking forward to cooking again. I did make it through almost all of the leftovers of andi's delicious food, between sending packages home with folks, freezing some pozole, and noshing all week. (finnime, I'm sorry I didn't think to pack anything up when you headed home!) a friend is coming by this weekend to use my house as a crash pad while he goes and takes all of the gorgeous scenic pics and takes in a couple CCBL baseball games (per usual...). I told him that if he thought he was getting a key for the weekend, he was carting my ass out to the grocery store in exchange. his original plan was to get here last night, but now is looking at around midnight tonight. tomorrow, it is!

tonight was another roasted potatoes bowl. small can of chicken, the rest of a batch of black beans from earlier this week, the end of a block of pepper jack cheese, and some bagged shredded mozz to pick up the slack. I've tossed the last of the leftovers of andi's cooking extravaganza as it's all aged out, and I will resume cooking tomorrow.
part of why I didn't wanna cook tonight is that one of the family packs of BSCB I bought this morning was leaking.....as I discovered when I got home and found it had leaked all over my kitchen floor. I stuffed it on a fridge shelf in a plastic bag, where if anything leaks, the shelf will contain it. it's easy enough to clean, and I just didn't wanna deal with it tonight as I'm effing tired.

Monday - sauteed chicken tenders and green beans Tuesday - grilled lamb chops and leftover couscous with chickpeas Wednesday - leftover pork ribs with black-eyed peas Thursday - DH is doing some type of pasta with pesto and fresh-baked bread Friday - baked tilapia and a salad Saturday - my beloved Ram-Don with sirloin steak Sunday - DH is using leftover baked chicken from the freezer with something
