I finally got smart and started writing the date I open the carton of chicken broth on the carton with a Sharpie. The carton says good for 14 days after opening.

Thank you for the tip, wvugurl26 . Similar to you, chiver78 , I write the date on leftovers prior to freezing. Last night's chicken, baby spinach and mozzarella stuffed portobellos were good, though next time I think I'll mix the chicken with some cream cheese as the air fryer made it a bit dry.

I just cut up some tomatoes, mozz, tore up some basil, and drizzled balsamic glaze over. Not terribly hungry, but should eat something.

I'm bored with the leftovers options, so I think I'm going to roast some tiny potatoes and pour a steamer bag of cheesy broccoli over them. I can also cut up some leftover sauteed chicken breast to use up some of that as well. I'm going grocery shopping tomorrow at some point. based on the sale flyer, I'll be making the first zucchini pie of the summer for next week. the rest of the week is still TBD. ETA: nevermind. I'm out of frozen cheesy broccoli, and don't have any fresh either. tonight might be a can of soup or something, I'm past the point of really caring at the moment.

Thursday night chicken teriyaki served over rice with steamed broccoli.
I probably should have made my own rice but I used a steamer bag. By Thursday night I'm over the dinner thing haha.
A local place has a great steak special on Thursday nights that I'd like to try. Maybe another week.
Friday night is eat something at the baseball game and Saturday will be eat out or take out. We'll be gone Saturday most of the day to a family event in a neighboring state.

k, I did a grocery run over lunch. I've got some cooking to do tonight, for the pups. a pair of family packs of ground beef and some kale I will chop and wilt. I also picked up cremini mushrooms and a clamshell of baby spinach, so dinner tonight for me will be IP risotto. I'll reheat another piece of leftover chicken as well. <br><br>my parents are coming down tomorrow with some of Dad's power tools that I don't have in my own collection, and we're going to crank out some small projects. that means lunch will be from Mom's favorite Greek pizza place, and I will have leftovers lol.... I still also have two portions of carnitas casserole to eat or pitch this weekend.

I stuck a huge ass roast into the oven. It's slow cooking and will be for at least 3 more hours. I just decided that it would be the best way for me to have food. I will portion out parts for freezing and enjoy the rest.
Veggies will go into the oven closer to 4 for roasting.

I've got about a half pound (from an open box) of rotini boiling right now, and a frozen package of cheesy broccoli is in the microwave. I'm not eating the full half box of pasta, the pups will get the rest in the morning. but this is a nice brainless dinner to end the weekend.
I cleaned out the fridge of old leftovers today, and plan to hit the grocery store over my lunch hour tomorrow to set up for the week.

Friday night I had chicken bacon ranch fries at the baseball game.
Saturday night we went to a local Italian place after the birthday party. I was in need of a decent meal. I got the filet with asparagus and scalloped potatoes. DH got a shrimp spicy marinara dish.
One of DH's cousins showed up for 24 hours this weekend. Went to the Sunday baseball game so ordered pizza and wings after that. It was a good day with family.
We have no events this week so back to the cooking grind.

well, I just did a quick run through the store as I had the pups with me and it was surprisingly hot out. not "surface of the sun" hot, but hotter than me leaving them in the car for the 10min it took me to run through. I won't leave the car (and A/C) running at the big plazas like I will at the local 7-11. anyway, I did grab a package of two boneless pork chops and I'll do the big shop another day.
tonight - seasoned pork chops with roasted tiny potatoes and Brussels. I'll cook the chops in my Dutch oven, that seems to get the best results.

I'm not motivated at all to cook. DH needs to get on filling the propane tanks so we can grill. Monsoon season seems to have ended and both tanks are empty.
I ran into the grocery store at lunch time because I needed a pack of the microwave rice cups to pair with the leftover chicken teriyaki. I checked the clearance meat section and got 2 small packs of country style pork ribs for $5.
Monday night I baked the ribs and did Stove Top stuffing and green beans.
Tuesday night unstuffed bell peppers.
Wednesday night maybe grilled steaks if the tanks get filled.

count me in on the unmotivated, etc. by the time I was actually hungry last night, I just opened a Bertolli meal bag. I added veggies and packed up more than half, which was breakfast this am b/c it was there. did I cook for lunch, since I'm home? nope. and it's now 8pm and I'm craving snacks. it's far too late for a full-on meal for the hours I keep, so how do I re-equilibrate my stomach to my sleep schedule? in the meantime, I'll be cooking pork chops for lunch tomorrow.

Due to miscommunication no ground beef was thawed today.
DH is picking up subs. I'm starving and mentally done.
If the propane tanks get filled Wednesday probably steaks.

Wednesday night grilled steaks, air fryer baby potatoes and salad. We finally have a filled propane tank.
Thursday night the unstuffed bell pepper dish.
Friday night I'm not sure. We should cook something.
Saturday night I need to whip up some sort of dessert. Graduation dinner for a niece.

I made a big green salad tonight, using up some leftovers and fridge goblins. a romaine heart, some fresh pico de gallo (store bought), crumbles queso fresco, and the other Penzeys Northwoods crusted pork chop from last night, chopped up. it hit the spot!
I'm entertaining friends tomorrow night and will reset the fridge on Saturday. have an excellent Friday, everyone!

yesterday was nothing close to plan. I was supposed to host a friend and her BF last night with snacks, cocktails, board games, and good conversation after they grabbed lobster rolls on Cape, and we would do brunch this am. instead, they did the lobster roll run for lunch today after last night's adventures. I treated them to a huge Chinese takeout dinner after they carted my broken self to Urgent Care after a nasty fall on stairs yesterday morning. the order included some sushi and a round of cocktails while we waited for the order. after tip, it came to $160. I have all of the leftovers to help make my life easier while Im hobbling around on my busted foot and I am totally okay with all of this. I don't see myself driving for a few days, still. I drive a manual and need both feet.
tonight, I didn't want Chinese food. I roasted a few tiny potatoes and topped them with some canned chicken and a package of frozen cheesy broccoli.
tomorrow, I will get back to the leftovers.

I'm currently waiting on a package of Buitoni tortellini to boil. I've thawed out some pesto from the freezer to toss in. tomorrow, as long as I didn't do more damage to the injury today, I'm going to make a zucchini pie. if I'm able to do more, I'll chop veggies for a batch of pasta salad. both of these were on tap to make yesterday, I have all of the fresh produce for them.

I baked two loaves of homemade honey wheat bread, faux potato salad using cauliflower in lieu of potatoes, my first air fryer cake for the birthday kiddos, and instead of Saturday, made the crack dip yesterday. Tomorrow instead of chicken, we'll have leftovers from yesterday.

I'm still hobbling around, but I'm down to 1 crutch! my ankle was barking at me a bit yesterday, so I stopped after making the zucchini pie. pups needed rice today, so the pot I'd use for a full box of pasta is in the dishwasher. I have no idea what I'm doing for dinner tonight just yet. but, I'm looking for ideas for BSCB. there's a package in my fridge with a date this coming weekend. let's break my ruts and cravings!

lol wvu! that's kind of where my brain is this week as well. canned soup and reheated leftovers have been my BFFs lately.
tonight, I'm feeling strong enough to stand at the stove to saute that BSCB and boil potatoes. I'm craving mashed potatoes today for some odd unknown reason. so, chicken and mashed w/gravy, it is! scratch that, I don't have regular potatoes, just tiny ones. Ill figure something out.
I'm almost through the Chinese leftovers from Friday night, maybe two portions of spicy green beans are still hanging around. I can wipe that out with some of the chicken I'll cook tonight. I can honestly say that while the o.r.a.n.g.e. chicken my friend's BF picked was tasty enough, I don't think I'd go out of my way to ever order it again. lol.... I'd never had it before, fried chicken in a sweet sauce isn't anywhere near my wheelhouse.

Tonight's freezer cobbled creation includes leftover slow cooked pulled pork with cherries on top of honey wheat bread I baked Sunday, with a side of coconut curry cod and sweet potato stew from March. I'll butter and toast the bread on the stovetop. From the freezer I also removed a serving size of leftover what I think is spaghetti and meat sauce (I neglected to label it-I mistakenly always think I'll remember, LOL) for lunch tomorrow.
