Last night was spaghetti made with venison sausage and a baguette.
sausage = $3 crushed tomatoes = $1.69 seasonings from pantry mushrooms = $2.29 onion = $.50 noodles = $.75 = $7.23
Made enough for 4 servings, plus half the sauce went into the freezer for another time.

Last Friday's Mongolian stir-fry was a hit. DH loved it. I followed the Spend with Pennies recipe, only I cut the beef, tossed it with cornstarch and marinaded it overnight.
-Sat: Leftover spaghetti -Sun: Nachos using leftover beef franks as the protein (strange, I know, but I've been sick so....) -Mon: Slow cooker venison and deer stroganoff using homemade ingredients instead of cream of yuck soup, bacon wrapped asparagus, leftover hot dog buns made into cheese toast. -Tues: Canned chicken quesadillas using the two leftover tortillas for DH, and a gluten free one for me. Sliced avocado, tomatoes, black olives, and air fryer sweet potato fries were on the side. -Tonight: Takeout. I ordered a taco salad. -Thurs: Pesto chicken, sautéed asparagus and baby spinach, zoodles -Fri: Eggrolls cooked in the air fryer, shrimp, fried okra -Sat: Caulipower pizza cooked on the Trager -Sun: Burgers, veggies
MTD grocery/HBA purchases are $246.97. Let's see if I can sustain that.

I've gotten into a weird eating pattern, to go along with the current weird sleeping pattern. so I haven't really been eating a big dinner much lately. last night, I used up the last portion of pancetta and the end of a bag of frozen peas in a cream sauce for tortellini. I'm going to try to work my way through the freezers before restocking (other than family size packages for the pups, to be cooked as I buy them) I'm not sure what I want to do tonight, it's hotter than Hades here today through Friday. in the morning, I'm going to make a zucchini pie with mushrooms and asparagus as well. I feel like that's a solid breakfast food, and I'm not feeling it tonight anyway. I did a quick grocery stop this afternoon (whole watermelons were on crazy sale!) and also picked up the few things I don't already have on hand to make Thai peanut noodles. I might do that tonight, and saute a couple BSCB to slice and mix in.

alright, I ended up roasting a few tiny potatoes after we'd moved outside in the "chill" of the evening. it's still 75F here at almost 9pm. also being fireworks season here in the trees, I'll keep the windows closed and A/C on to drown it out.
dinner tonight was another roasted potato bowl, topped with a small can of chicken and a nuked package of cheesy broccoli. tomorrow, I have no appointments outside of the house to plan around. my plan is to crank out the zucchini pie during the morning calls I spend more time listening to than participating in. and then maybe lunch hour, I'll do up the peanut noodles. I realized when I got home earlier that I forgot to grab a red bell pepper. I might run out to the store before coffee and pups waking up to just grab one.
sorry for the word salad. I'm off my game in so many ways lately.

I did a bunch of cooking today, for things to have around to pick from all weekend. I cooked white rice for the pups, it's cooling now. for me? my friend that came in last weekend for Cape League baseball is coming in late tonight for more baseball this weekend. we'll pick from a zucchini pie and Thai peanut noodles with grilled chicken.
tonight? idk yet, I'll do something else with one of the pieces of chicken, or reheat some of last night's pierogis. I'm not feeling the peanut noodles rn and I had zucchini pie for lunch when it was done cooking.

I've been all over the map this weekend, with people staying here and coming and going the whole time. I still have a bunch of leftovers to pick from for lunches til it all runs out. Friday night - I can't remember. clearly it was memorable Saturday night - chicken Lombardy over mashed potatoes (2 portions remaining) Sunday night - pork gyoza and yellowtail sushi takeout, plus leftover Thai peanut noodles (paid for by my guests) tonight, I think I want to fry some chicken cutlets. there's a bag of baby arugula in the fridge, if it's still good it will make a tasty Milanese salad. I'll figure out the rest of the week after I clear out more leftovers.

I took some downtime due to allergies over the weekend, so I had plenty of time on my hands:
~Last night: Leftover burger patties from a volunteer event. I asked DH to grill extra for this week's lunches. On the side was spinach salads with bacon, boiled egg and cherry tomatoes, red potatoes and green beans from the freezer, and cream cheese bacon wrapped stuffed mini peppers.
~Tonight: Chicken and veggie stir fry, rice ~Tues: Gimme Delicious.com salmon with avocado salsa ~Wed: Yummly recipes keto meatball stuffed mushrooms. ~Thurs: Spend with Pennies slow cooker Mongolian beef, rice, eggplant fries ~Fri: Takeout ~Sat: Leftover lentil entree from the freezer ~Sun: Smoked chuck roast a la Poor Man's Brisket ~Mon: Air fryer meatloaf, veggies ~Tues: One pan salmon and veggies ~Wed: Bon Appetit .com Bulgogi ~4th of July: BBQ burgers, franks, pasta salad, deviled eggs ~Fri: Takeout ~Sat: Shrimp cocktail and snack plate ~Sun: Grilled steak, veggies

I never fried the cutlets. and tonight with a completed dishwasher cycle that I didn't feel like emptying, I doctored up a Bertolli meal in a huge fry pan that I'll wash by hand tonight. there's leftovers of that, plus still a couple more things from the weekend.
I ran all but one BSCB with a sell-by date of tomorrow through the IP to shred for the pups once it all cools. I saved myself one, and I'm either going to fry cutlets or saute some chicken piccata tomorrow night.

Had a weird food dream last night. Tonight will be peach glazed pork chips from said dream.
2 thick bone in chops = $10.53 Broccoli from freezer @ $1 Cheese @ $1.50 Mashed potatoes = $2 = 15.03 for 2 to 3 servings (I will likely only eat half a chop, they are HUGE!)

yum. I need to do that soon, too - grilled peaches with pork chops. I picked up two peaches this morning, intending to puree them in a couple weeks when that's all they are still good for. I'm going to have to go back in a couple days for pup produce, I can grab some more and some pork chops. thanks for the reminder! today I'm doing a bunch of pup food prep, so I've got the IP going with BSCB and another pot for white rice that will take up space in the dishwasher. I'm going to mix up some Milanese salad for a leftover chicken cutlet. still TBD whether I boil off some pasta or roast some tiny potatoes.

Yes! We have a peach tree that produces a lot so we have some in the freezer, but I also buy "ugly" cheap peaches from a farm store nearby. I cook those down into a sort of simple syrup, freeze in ice cube trays, and then pop them into freezer bags. I use them to add flavor to so many things.

yum, that sound delish. my sister had a pear tree, in the house where I couch surfed with her between houses. anything she didn't actually eat, she shared with a coworker couple that makes homemade wines. they had peaches from someone else, also. whooo, that wine. I can drink a bit more than the average bear, but the pear wine they make knocked me on my ass, every year. 😯

Tonight is leftover chicken noodle casserole and a small salad. Tuesday will be cold shrimp, potato salad, and yellow squash. Wednesday night is an encore performance of DH's salami, cheese, hummus dinner last night. For the 4th of July, we're doing burgers on the grill and esquites, maybe watermelon. Friday is unknown at this point. I've penciled in ground turkey tostados for Saturday and DH wants to make stuffed bell peppers for Sunday. The weekend stuff is 100% dependent on the track for Hurricane Beryl.

I'm clearing some fridge goblins before trash pickup tomorrow, and I think I'm going to do this w/o chicken (I don't have any) and pour it over some fresh linguine pasta I got for free. I have everything else, with a few things open and needing to be used or pitched soon. Creamy Garlic Mushroom Chicken^this was delish, and I'm going to have the rest for dinner tonight (well, I'll eat what I can and toss the rest. there's still one chicken cutlet leftover from the weekend, that I'm going to hope is still good and I'll pair that with the noodles. today on a Walmart run, I picked up a package each thin sliced turkey breast cutlets and boneless skinless chicken thighs. I think I'm going to find something to do with the chicken thighs that would pair nicely with another batch of Thai peanut noodles. I'll figure out something for the turkey (piccata, maybe?) and then I won't need to cook again over the holiday weekend. I might also put together a big hashbrown crust quiche, for even less cooking all weekend.

Our workday ended earlier today. Hubs got a pizza and salad for us for dinner. Then while I was packing a box of paintings, he folded a load of clothes for me, that worked well. Tomorrow is another day.
I am still watching the show Tracker, not bad.

Thai peanut noodles were made today, and I marinated the chicken thighs in what turned out to be a very bland marinade. I just mixed stuff in a measuring cup until it tasted like it would go nicely with the noodles. 🤷♀️ whatever, the chicken is cooked now. I also cooked a pot of white rice for the pups.
after all of that I wanted nothing to do with any of it. although, if I had thought to make a pot of black beans, I could have done up a rice bowl. I ended up baking off a frozen chicken patty and tossing it in a salad with a chopped romaine heart, half a 100cal tub of guac, and a pile of pico de gallo.

it's disgustingly hot this week, with the added fun of oppressive humidity (although still preferable to being in Hurricane Beryl's path...) so I'm not really interested in hot meals at the moment. I mixed up a batch of bruschetta, which is sitting in the fridge to blend nicely together. I'm going to toss that with bowtie pasta, for a cool quick meal the rest of the week. tonight? I need to cook off some thin sliced turkey breast, maybe ~1lb? I'm going to just saute it with garlic powder and black pepper, then I can use it for whatever this week. like tonight, with some of that bruschetta pasta.

I have been munching on cut veggies and caesar salads.
There has also been snacking going on. I need to finish the last of my ckn taco meat so will do nachos.
I have cob corn and will probably boil them up later this week. Probably going to do a cheese tortellini and caesar salad mash up.
Need to pull a loaf of bread out of the freezer for sandwiches also.

Sunday, I made my first Bulgogi and served it with sauteed asparagus on top of rice. The recipe is from Bonappetit.com and I grated a kiwi in lieu of a pear.
Last night: Enchiladas assembled inside then warmed up on the Trager served with Budget Bytes not refried beans and Elote corn cobs (SO good!). I also cooked a roast in the air fryer for lunch meat purposes
Tonight: Gimmedelicious.com's salmon with avocado salsa
Wed: Slow cooker chicken, veggies
Thurs: Freezer leftovers
Fri: Takeout
Sat: Grill/smoke something
Sun: Slow cooker something in order to have lunch leftovers

Iggy - if you liked the bulgogi, try the recipes at this blog - Korean Bapsang I have yet to find something I don't like, from her blog. my favorite thing is the japchae that's actually on the main page when I load the link today. I just make mine without the beef. ETA - oh, and dinner here tonight is leftover pasta of some sort, with chopped turkey cutlet. all of it is good cold, too.

I've made spaghetti and beef cabbage stir fry this week. We've also had pizza and Texas Roadhouse take out. The return from vacation has been rough.
Last night we ate at the stadium. We took DH's parents with us so they paid for the food.
I tried to make turkey burgers with added zucchini and corn. They wouldn't hold their shape. I ended up baking it sort of like a meatloaf. I added the end of the bag of frozen green beans when I switched to baking it.
I need to get to Sam's Club. We have no chicken breasts. I should also see what DH wants while I'm gone. I'm traveling for work the last 2 weeks of July.

This week has been crazy with the storm aftermath which left me bouncing between starvation level hunger and no appetite at all. Going forward, tomorrow is stuffed grape leaves from the freezer with hummus and pita bread and Sunday DH is taking leftover Swiss steak from the freezer to go with rice.

I feel you with the odd appetite. we didn't have a hurricane hit, but the humidity has been insane for what I'm used to seeing at the coast. last night, I wasn't really hungry after only having had a veggie burger for breakfast. so I finished off the last of some bruschetta pasta and chopped a turkey cutlet into it. leftovers would have been pitched this am anyway. 🤷♀️
today's going to be the rainy one here this weekend, and I'm going to make a small batch of pozole. I've got notes from andi, I hope I can do it justice! that will be a few meals this week.
the other batch cook I'll do tomorrow is a veggie-loaded pasta salad. yesterday I picked up everything I put in when I'm making it for a party, so it will be a good batch 😁

I am so sorry, ladies. The weather has been intense here, too, with temperatures over 100 degrees. It's dopped a bit today, but the humidity has increased due to additional thunderstorms headed this way.
Menus: Yesterday DH smoked a bacon wrapped pork loin for hours. With it we had steamed cauliflower, green beans, and leftover beans and rice. Tonight: Smoker jalapeno popper salmon pinwheels from Burnt Pellet BBQ's TikToc video Tues: Air fryer chicken legs, veggies Wed: Air fried salmon with the avocado salsa I've been meaning to make with air fryer eggplant fries Thurs: Greek shrimp scampi on top of Romaine Fri: Snack plates Sat: Steak and sides Sun: IDK yet

Sunday we went out with some of DH's family. The fries were excellent, the smash burger not so much. I'd been craving a burger. DH's mom had previously been to this place and said the burger was good.
Monday night my cousin stopped by on her way back south. I went out with her so she could get the crabs she wanted. It was way too hot to get some to go and eat outside. I've never picked crabs in my life so I ordered something else. She paid the bill.
Tuesday night instant pot lasagna.

When I move back to Baltimore with my wife, she's from NEPA, my father would pick crabs for her. Nice big pieces of backfin. She faked that for a long time after she knew how to pick them.
