I've been exploring my local Aldi again recently. are these flatbreads in a fridge case or the bread aisle? I've had mixed feelings about the various flatbreads I've bought over the years, but I'd be up for giving these a whirl. I bought some tri-color cheese tortellini for about half what I'd have paid for Buitoni at even the cheapest store otherwise, and it was tasty. tonight I decided I'm making chicken piccata with the last BSCB hanging out in the fridge. I sniffed it, and it was fine, so I'll start prepping everything else in a few min. if I die tonight, someone tell the authorities to check the leftovers lol....

It was in the bread aisle. It is a 2 pack and says stone oven baked. I haven't tried it yet. I figured for the price, we could try it out. It was something different and I've been trying to come up with new things for the rotation.
I went probably every 2 weeks before they got self check out. Now that they have self check out, I will go in and get what I need once a week or more. It is my second closest store and definitely much cheaper than Safeway.
The container of rice/black beans was finally finished off with Friday's lunch.
The bbq for dinner was good. They had a smoked mac and cheese with brisket as a side that was delicious.

Last night I baked a Rana Veggie Lasagna which was really good so I have Dinner for tonight and lunch tomorrow. I think I will make a batch of tuna fish for sandwiches.
It's supposed to be rainy and dreary for the next 4-5 days so I am thinking a crockpot meal probably is the way to go tomorrow. Not sure what that will be though.

Saturday I ended up going to Sam's Club and that threw off my dinner plan. It's rainy and dreary. I made chicken noodle soup and garlic cheddar biscuits. I found a Pillsbury mix I can use.
I will make the roast on Sunday. I needed to buy a few things for it and I went to Sam's instead.

last night ended up being a bowl of Doritos while I watched all of the sports, and napped. not my finest night. lol...
I'm about to mix up a tequila lime marinade for some boneless chicken thighs. if I can get to re-seasoning the Blackstone, I'll cook it out there later. if not, I can saute indoors. I'm going to also make black beans and rice to go with tacos tonight. I'll have a bunch of leftovers to pick from over the week.

Roast was a success. I seared before putting in the oven and seasoned with thyme, rosemary, salt, pepper and garlic. I used this braising pan I have. It was easier to get to than my Le Creuset that's big enough. I put a cup of red wine and a box of beef stock in. I pulled after 2 hours and dumped a bunch of baby carrots in. Roasted for another hour and it was perfect. Made mashed potatoes and gravy with the remaining liquid.
DH's inner fat kid is happy tonight. He is good about eating vegetables and has learned to eat different ones since he married me. However, a plate of meat and mashed potatoes covered with gravy is his all time favorite.
Now there's probably only 9 roasts left in the chest freezer lol.

Okay, changed my mind yet again, LOL. Instead of the Bolognese tonight, we're going to have leftovers. A BFF is flying in to visit tomorrow, and I've lots to do, especially in the kitchen. [snip] Rounding out my friend's stay: Monday: One sheet pan salmon and veggies, air fried bacon wrapped shrimp Tuesday: Something on the Traeger (which she helped buy years ago), veggies Wednesday: A local brew pub She leaves next Thursday. Updates: Last night we had slow cooked teriyaki beef with rice and leftover onion rings and bread. Tonight's roasted veggies will be yellow squash, zucchini, kale, baby spinach and asparagus Tuesday: I changed it to shrimp and veggie stuffed portobellos Wednesday I'll still take my friend to the brew pub Thursday: Leftover beef dogs from a volunteer event Friday: Takeout from? Saturday: Perhaps that dang lentil Bolognese I keep putting off? Sunday: Air fryer bacon wrapped shrimp and All Recipes' copycat In and Out burgers

Monday night sautéed chicken, zucchini and mushrooms served over yellow rice. I'm also running chicken breasts through the instant pot to restock my shredded chicken stash.
Tuesday will be roast leftovers.
Wednesday not sure.
Thursday instant pot risotto. We have a play to attend and need something quick.

A report on the flatbreads for chiver. They were good, I'd buy again. I think they'd be better grilled. I cooked mine on a sheet pan. I don't like putting stuff directly on the oven rack to make a mess in the oven. They were a decent easy base. Could I make better crust? Maybe. But sometimes I want an easy option.

I definitely feel you on not putting things right on the rack. I used a thin pizza pan for a frozen one tonight, just to contain any mess. it absolutely prevented the crust from getting crispy, but I don't feel like cleaning the oven this weekend. tonight, the dishwasher is running and my drying rack is full of pieces of my humidifier that I finally broke down and cleaned this afternoon for the season before I pack it up til next winter. that means it sits out there until it's all completely dry so I don't get mold by then. I should be good in the am. what that meant, was that I sliced up some fridge goblin veggies and threw those on a frozen pizza with a little extra shredded cheese to keep things contained haha. it was an American Flatbread "cheese and herb" white pizza, bought on sale. there's another one in the basement freezer for another day.

Wednesday ended up being cheeseburgers and fries from Five Guys. I wanted a burger and both our propane tanks are empty.
Thursday I did leftovers. Chicken from Monday, mashed potatoes from Sunday and cooked a bag of broccoli from the freezer.
Friday night instant pot beef stroganoff. This will use up the rest of the mushroom package. It's a good meal for a cold and rainy day.

tonight's going to be something brainless, like a can of soup or something. well, if I even eat anything. I'll restart the plans tomorrow, since I actually have plans this week haha - carnitas casserole verde and bruschetta tortellini. both work for solid initial meals and lend themselves to leftover full meals and small bites over the week.
I just made up a grocery list for the morning, for stock-up sale stuff/pup fresh produce. I'll hit that in the morning, then come home and drop a small pork "picnic roast" in the crockpot for the day. tomorrow night I'll build and bake the pan of carnitas casserole verde. Sunday, I'm going to mix up bruschetta that I'll toss with a family size package of chicken and roasted garlic tortellini - that's tasty hot or cold and I can swipe some shredded chicken from the pups stash if I want some.

Tonight's the "chicken pickings", bits and pieces off the chicken I grilled a bit ago. I'll sauté some diced cremini mushrooms and onions, add frozen mixed veggies (peas, carrots, corn). Bow-tie pasta, cream of crap soup (yeah, flame away), various dried herbs, all stirred together.

I mean, I'm not gonna flame, but it's so easy to let some actual cream simmer and thicken a sauce. it sounds like this is a fridge clean-out, that I've also done the past couple days. my breakfast burrito of leftovers and a little bit of shredded pepper jack cheese was an interesting blend haha. FWIW, I don't think I ever saw a can of cream of crap in my house growing up....as much of a mediocre cook my mom is/was. it just wasn't a thing. I remember asking a coworker about the tuna noodle casserole he had one day at lunch, b/c I'd never seen it before. I thought his head was going to explode lol... do you use it often? genuinely curious

alright, I don't actually have a can of soup in the cabinet. noted for the grocery list, hopefully something is on sale that I'll actually eat.
I'm currently thawing out a small portion of a leftover jarred sauce I wouldn't ever buy again. I hope I can fix it enough for a pasta bowl tonight, and I won't sweat throwing the rest out. clearly I GAF tonight lol...

ah, fair enough. I keep cream for coffee, only ever a pint at a time. so it's easy enough for me to just add that to a pan if I'm craving a creamy sauce. thanks for the answer!

Cream of chicken soup goes in two things, my chicken noodle soup and hashbrown casserole. Both are made how I was taught by my grandma. I make 90% of what we eat from scratch so I'm fine with those two.
I think I figured out the one meal a few weeks back where the sauce was weird. Pretty sure the culprit was the heavy cream at Aldi. I compared to the ones at Walmart yesterday and the ingredient list was different. I bought the replacement at Walmart.
Saturday night dinner at the baseball game.
I'm making a bunch of sides and dessert for the Mother's Day gathering. Working on my plan now so it's all done in time. I can be moving until I head out the door and I'm not stressed. DH gets all stressed out and our kitchen is not big enough for two to work.

I did it! I finally made the lentil Bolognese. It wasn't too bad. Next time I'll ensure ALL of the lentils are tender. Because we live 15 minutes from a grocery store, and the monthly pickup is this week, I made several substitutions: Artichoke hearts, kale and kimchi for carrots and mushrooms and angel hair pasta for spaghetti. And in true waste not want not fashion, for a side, I made cheese toast a la old school Sizzler Steakhouse out of leftover hamburger buns. This week: Mon: Leftover Sam's Club beef dogs oven roasted with frozen veggies. Maybe some sautéed baby spinach? Taco Tues: Cod on cheddar cheese "tostadas", cauliflower rice, raw baby spinach Wed: Doctored up Cauliflower pizza with leftover salami, mini wontons Thurs: Something easy Fri: ? Sat: Steak and veggies Sun: ?

the carnitas casserole was delicious, easily the best one I've ever made. it's likely because I actually followed the Slow Cooker Carnitas recipe that's linked in the casserole recipe. usually I just wing it. the only thing I did differently was to juice the limes and then match that volume with OJ from a bottle. I didn't have oranges on hand to juice. I actually had a portion on its own for breakfast this morning lol... tonight, I'm going to saute off a package of thin sliced chicken breast that has a sell by date of tomorrow. I haven't decided if I'm going to make a big salad or have some leftover tortellini with it, but I'll have leftover chicken to work with for the rest of the week as well.

Been way too sick for cooking and tired of can soup, so threw some chicken in the crockpot this morning for chicken and dumplings made with home made bone broth. Hoping that gives us a boost. Will add a bunch a veggies later.

Monday night we tried a new burger stand at the baseball game. They were freshly cooked and delicious.
Tuesday night spaghetti.
Wednesday homemade sloppy joes and salad. We have 4 buns left from Sunday to use up.

Tonight is teriyaki salmon patties and fresh asparagus. Tomorrow DH is heating up Japanese curry from the freezer. Friday is turkey tenderloin from the freezer and mac-n-cheese. Saturday is boiled shrimp, rest of fresh asparagus, and maybe something from the farmers market. Sunday DH is baking chicken leg quarters and doing a caprese salad.

I finished off the last of the bruschetta tortellini tonight, with some cut fruit.
I also discovered a half-full open container of chicken broth in the fridge that needs to be used tomorrow or Friday for how long it's been open. I think tomorrow night might be IP risotto if I can pick up a package of mushrooms at some point before dinner. I will reheat some of the sauteed chicken breast to go with it.
there's still about half the pan of carnitas casserole, which makes me happy. I'm gonna do my best to demolish that entire tray, it's that delish this time around.
