Monday night DH made tacos. I was tapped out and laid down after work.
Tuesday night we ate at the baseball game.
Wednesday night we grilled filets and had them with salad.
Thursday night leftover steak and Mac and cheese.

I was out last week with a virus and have returned to half days. I hadn't gone to the grocery store in over a week and a half, so it was fun using up ingredients on hand. This week: Sunday: A skillet with the rest of a Hillshire Farms beef sausage with two remaining potatoes. Mon: Freezer leftovers Tonight: Grocery store pizza Wed: Canned crab stuffed romaine leaves, shrimp, cauliflower tots Thurs: Out w/ a friendFri and Sat: Camping Sun: Something on the road home Wednesday I sauteed yellow squash and zucchini so as to use fresh produce first and didn't serve the shrimp. Yesterday I rescheduled my friend for next week, so I made red Argentine stuffed portobellos in the air fryer with a side of romaine, diced Roma tomato and cucumber, and an avocado crema. Light and delicious and full of nutrients. Have a wonderful weekend, everyone.

Philly Cheese sandwiches. I bought precut peppers. They were $5 now $8. Reducing labor, priceless! I'm excited to make an ice cream sandwich ice cream cake for Mother's Day gathering.

Friday night I picked up take out for $20. I was not inspired to cook.
Saturday night DH's brother paid for dinner. We paid for the baseball game tickets.
Sunday night DH's sister invited us to dinner.
Monday night I made Budget Bytes beef and cabbage stir fry. The green beans had gotten slimey but the other vegetables were fine.
Still working on the plan for the rest of the week.

last night was an overpriced hotel Caesar salad. tonight, I'm waiting on a box of Kraft dinner to boil. I think it evens outs in the wash for cost? tomorrow's lunchtime errand is a grocery run. I'll make up my list during the 9am call that has nothing to do with me, but if I don't appear in the participants list, I'll never hear the end of it.

Didn't plan this week for the first time in a long time, so I'm winging it:
Sunday: Snacked due to a late lunch Last night: I baked a doctored up Caulipower pizza which included homemade pizza, pepperoni, and two types of cheese. I served it with SeaPak shrimp scampi and leftover baked beans for DH. Tonight: Leftover bacon wrapped pork tenderloin from the freezer, veggies Wed: Out with friends, and DH will have leftover locally raised shredded beef from the freezer Thurs: Out with a friend, DH is on his own again, LOL Fri: Takeout from? Sat and Sun: IDK yet

grocery run didn't happen today, but I'll have time tomorrow. when I stopped last night for the Kraft dinner, I also picked up a small package of BSCB....or tenders? I can't remember. either way, tonight, I'm going to saute half of that package with sliced jalapenos and toss it with pierogis in butter. garnish with pico and guac, and I'll be in fat kid heaven. <drool> <-- why do we not have a drooly guy like my phone does?

DH attempted to grill chicken for Caesar salads for dinner. The grill ran out of gas. And of course he never got the spare tank filled either.
I finished the chicken on the stove.

The salad was really good earlier this week. That was the last night I cooked. Sometimes I need a break.
Sunday night I made a chicken pasta dish. I think I got more flavor in it this time. I had fresh broccoli so I roasted that in the oven with a Parmesan, red pepper and oregano blend on it. I had fresh bell pepper so that got sautéed with garlic and red pepper. When I mixed it all together, I added Penzey's pasta sprinkle.
Monday and Tuesday night will be salads. Maybe Wednesday too. If not Wednesday will be risotto.
Thursday night is take out something. I'll be baking 12 dozen cookies for a weekend event. The event is out of town so we'll be eating out over the weekend. We are driving DH's parents so I assume FIL will pay for a meal or two along the way.

this afternoon when I went to pick up the pups from an overnight away, I walked in to a gathering of some friends looking to grab a snack. that was perfect, b/c I wanted to pick up Chinese takeout for the week's pickings. so we went to the Cape side place I love and ordered appetizers with our cocktails. I put in a side order to go, on my own tab. I was curious when I got home, since I wasn't hangry anymore, and I weighed it. the to-go bag was 7.2lbs. anyway, I had a veggie spring roll and a couple scallion pancakes at the restaurant with my cocktail ($20 cash toward the tab) and the to-go order was $50 for pork fried rice w/bean sprouts, edamame*, chicken teriyaki, and garlic baby bok choy. over the course of the week, I'll lace my dinners with the amazing bok choy as a side. there will be at least one meal of bok choy over rice noodles. the pups and I will share the edamame, and I'll give them a bite each of chicken teriyaki when I'm chopping some to reheat for myself. my kitchen is closed this week while I work on deep cleaning it. every damn thing is yellow I ran my robot vac this morning and emptied it twice while it was running, and it already looked like I hadn't run it even before I left the house this afternoon.

Made a turkey cutlet by baking it in the oven. Was tired so I put it in an oven safe dish with veggies at 350. It got done quicker than I expected so I am glad I checked ten minutes in. Might pan fry the rest or do this again. I think more onions/scallions and put the green beans in right away.
ETA - Got on sale so the cutlet itself was about $1.15. Less than $2 for all of it with turkey stock, onion, green beans, some carrots for flavor plus a touch of chopped potato.

fried cutlets of anything are pretty easy if you're used to the process/technique (says the Italian-raised home cook). one of my absolute favorite meals is a Milanese plate. that's a cutlet topped with a salad of (at least) arugula, tomato, lemon juice. I always add paper-thin sliced red onion and shredded parmesan cheese as well. but I'll do this for chicken/turkey/pork chop. I can't remember if you are DF or GF, but I know there's bread crumbs available in both accommodations. I'm dairy free, I saw some recipes I might try for the rest of them. Right now I am out of Panko bread crumbs but I do have flour I can use for breading. Love arugula. I come from a German cooking based home but love various foods I came to know when I came to NJ. Tri color salad - endive, arugula and radicchio and broccoli rabe which I would not have been exposed to had I not moved here. Chicken marsala made without cream with broccoli rabe is one of my go to restaurant meals.

chicken marsala (or piccata, for that matter) should be completely DF. definitely look up Milanese prep for cutlets, I think you'll like it. because you're topping with a huge salad, you aren't putting a huge bowl of pasta under the cutlets.

Yesterday DH did the 3,2,1 process on a rack of ribs. I sliced up a few Roma tomatoes and added mini mozzarella balls and an olive oil drizzle for caprese salads. This week: Tonight: Baja cod tacos, shrimp, okra Tues: Corn tortilla enchiladas, rice, beans Wed: Shrimp stuffed portobellos, side veggie Thurs: Air fried chicken, veggies Fri: Takeout Sat: BD party at a friend's Sun: Beer can chicken, veggies

I forgot I bought pork chops the other day, and just noticed the sell by date is today. so I'll cook those off tonight, likely with roasted broccoli. maybe some tiny potatoes, since I have some as well.

I did do about 2/3rdsof the remaining turkey cutlets in a pan. Used some leftover seasoning from a TJ's cornbread dressing which in retrospect probably had too much salt. Calves are seizing up on me and I don't think its just the longer walk. Should have used the herbs de provence like planned. Will use that on the last two cutlets. They are in the seasoning plastic bag and probably will stay there until tomorrow night. Need to take a bath and see if I can find something I need for work. Need to strip down my tote so I don't carry unnecessary stuff. (miss my car , miss having a car...). Hope to go to bed on time and take what I need to all at once instead of what I did last night. Moon Shadow has been begging for treats but I need to get Crestie some food tonight. Not sure how many crickets he managed to eat and how many are living in the cage until they pass.

Having fried chicken drumsticks with mashed potatoes and gravy, maybe some peas or something.
We had tuna salad for lunch and may tomorrow or the next day.
I will use the remaining chicken in a stir fry. We will be in the city tomorrow so can pick up beans sprouts, bok choy, have a bell pepper, and onions, or get some green onions. Chop a carrot fine for it, fresh mushrooms, snow peas. Will be good and quick.

Pan frying the last two turkey cutlets. Will come up with something less salty to season. Might even try a sauce using part of a juice orange. Suggestions? I have soy sauce and red cooking wine in house among other things.

Tuesday night I baked chicken breasts with Penzey's BBQ seasoning and BBQ sauce. Still no propane for the grill.
I sliced them and made a copy of the BBQ chicken salad at Panera. I used black beans, corn, the chicken shredded Colby jack, frizzled onions and a sprinkle of ranch dressing.
There's enough chicken left to repeat on Wednesday night. Thursday night is DH's responsibility to bring dinner home.

Tonight is chicken tostadas. Diced chicken breast sauteed with Penzey's Southwest seasoning on tostada shells with refried beans, diced lettuce, tomatoes, green onions, and avocados. Lots of salsa, of course

I was going to order takeout, and then realized I still has some leftover bok choy. I wouldn't have eaten leftover meat on day 7, but today was pretty much my limit for properly stored veggies. I swiped some shredded BSCB from the pup stash and reheated the bok choy. poured both over some spaghetti and pitched the bok choy that was still left.
I'll figure out next week tomorrow at some point. I know I have an eggplant in the fridge, perhaps I'll fry some cutlets.

asparagus ravioli, tossed in a a fully dressed bruschetta mix. shredded parmigiano reggiano, diced prosciutto, and a balsamic glaze over the plate. there's easily two more meals left over, everything but the glaze has been mixed up together.

We honored Memorial Day with T-bone steak, glazed carrots and mock tater salad.
Tonight: Leftover beer can chicken tossed with stir fry veggies Wed: Palmini pasta with shrimp Thurs: Air fried pork chops, veggies Fri: Takeout Sat: Food at an event. Maybe. Sun: Either smoked salmon or beef teriyaki sticks
