We went out to eat at a vietnamese restaurant. It was okay. I prefer Thai food. How do you feel about Korean food? I have a Vietnamese restaurant within walking distance. The best thing about what I've tried there is they have this wonderful fresh veggie packet they give to you to go with the entree. I prefer Thai as well, but they all have their plusses.

H. made chicken tortilla soup for lunch (left overs). He put a huge roast in the crock pot (left overs!). I still had the dishes twice. I'm a crabby cook.

my street has trash pickup on Tuesdays, and I leave for 2w next Monday. so that means I'm going to have trash in my barrel while I'm away. I'm trying to avoid having stinky shit like meat packaging or dairy in the bin for the duration. this morning, I went through the fridge and tossed any dairy that was expiring before I get home again, and a bunch of produce that was kind of questionable anyway. tomorrow, I'm going to pick up some protein that I can bulk cook, unseasoned so I can share with the pups this week. that said, my fridge had 2lbs of Brussels sprouts, two huge broccoli crowns, a bunch of asparagus, a few jalapenos, a head of cabbage, and a ton of salad greens. there's also an open package of sliced prosciutto, so I know how I'll be dispatching the asparagus - wrapping it in prosciutto and broiling! everything else is kind of up in the air. I also have a bag of Yukon gold potatoes, so mashed potatoes may be a thing as well. anyway, tonight, I'm mixing a big salad and using up the end of some sauteed chicken breast leftovers. happy Sunday!

green salad tonight, using up leftover grilled chicken and crumbled bacon. I also need to cook ground turkey and wilted kale for the pups, so the turkey packaging can go out tomorrow.
this week went sideways when Walmart didn't have any BSCB this evening. pork chops were obscenely priced, and I don't eat beef. so, I'm going to be freezer diving for my protein this week. I can live with ziploc bags in my barrel for 2w, from having broken down larger packaging.

had grand plans to roast some veggies tonight, and then today was just cold and overcast. I ended up thawing a small container of black bean pulled chicken, which I poured over some curly pasta tonight. I'll work through the rest of the container with quesadillas and maybe an omelet til it's gone.
breakfast was broiled prosciutto-wrapped asparagus under a pair of dippy eggs with toast. tomorrow will likely be a repeat. I have a feeling I'll be dropping off the broccoli and Brussels with mooch when I pack up the pups on Sunday.

DH is working, so I fried up a ham steak that will last several days and thawed out some Bojangles biscuits that DD brought home from an Easter breakfast at work.

Hope everyone had a relaxing weekend.
This week: -Yesterday: I made the pig shots I've been wanting to make for some time. It is basically beef sausage sliced into disks, wrapped in half a slicer of bacon, topped/stuffed with cream cheese and shredded pepper jack cheeses, topped with smoked paprika and baked in the air fryer at 375 for 12 minutes or so. Delish. I served a baby spinach side salad to cut through the fat. -Tonight: Cod, shrimp, veggie -Tues: Shredded beef in cheddar taco shells, veggies -Wed: Slow cooker chicken, veggies -Thurs: ? -Fri: Leftovers -Sat: Supper at a favorite Irish restaurant -Sun: Locally grown steaks, veggies

chicken Caesar salad at an airport hotel, which will cost more than the huge beautiful swordfish steak I grilled last night at home. lol... that swordfish turned out amazing, paired with roasted broccoli crowns.
this week I will be at an all-inclusive resort, which was paid for months ago. I'll try to snap pics of tasty food so I can remember what I eat all week. 🙃

Monday night was dinner at the baseball game. I had a burger and DH had a hot dog.
Tuesday night unstuffed bell peppers from Budget Bytes.
I'm in desperate need of a grocery run and a plan. Lettuce produce seems to go bad very quickly anymore and I'm going to be gone again this weekend.
DH can and probably should cook while I'm gone. I can count on one hand when he has done so that isn't macaroni and cheese, frozen pizza or frozen chicken patties.

Had turkey sausage with spinach and onions in a skillet for dinner. Will probably use up the remaining spinach tomorrow whether I have that for dinner or not. Some kind soul gave me fresh spinach a couple days ago, and I need to use up the turkey sausage. Last fresh 'meat' I bought before AAA killed my car.
Sausage was on sale, so possibly less than $1 for dinner. Spinach free, just a small amount from my fresh onion and only one turkey sausage on sale for < $1.

Going to heat up the last of my batch cooked ground beef and collard greens for lunch. Going to add in green beans. Will serve with pasta probably the closeout one from WF - oats, corn and I think rice.

Wednesday night I made chicken teriyaki with rice. I used Budget Bytes one pot recipe.
I will completely cook the vegetables in the microwave next time. I've tried this twice now and the vegetables just don't get cooked.
The Thursday goal is something lower in carbs.

Thursday night I used the rest of the chicken from Wednesday night and made baked chicken with a parmesan breadcrumb coating. I roasted zucchini and potatoes on the side.
Friday night was going to be eating out. The weather was dreary and rainy all day. I pulled together a chicken pasta. I used shredded chicken, broccoli and peppers from the freezer. I made a "sauce" with the end of a container of ricotta and some parmesan cheese. It had garlic and crushed red pepper. It could use some more flavor but for something I pulled together in 25 minutes it's not bad.
Still in need of a big grocery shop. That was supposed to be Friday but the rain all day was not motivating me to accomplish that task.

Monday night I had leftover vegetables and some chicken bites from the freezer. DH got a salad from somewhere.
Tuesday night DH picked up Texas Roadhouse take out on his way home. It was very good. I was tired of grabbing quick stuff or leftovers. I paid with a gift card we got at Christmas.
Wednesday night I had DH stop at a local meat market on his way home from his parents and pick up hamburger. I made spaghetti and garlic bread. I finally did the big grocery shop after dinner.
Thursday night a sheet pan with all the vegetables and chicken sausage. I made it to the store I prefer to buy our fresh vegetables from at lunch. Except they had no romaine hearts so I still need those. I think I put it off so much because grocery shopping is still frustrating in 2023.
Friday night beef fajitas. I have flank steak thawing so it can marinade overnight.

Friday night's fajitas were awesome. I accidentally thawed 2 flank steaks instead of the 1 I thought I was grabbing. Since we had excess we cooked at DH's sister's house and shared with her family and their parents. BIL also did some grilled chicken tenders seasoned with taco seasoning. They had peppers and onions so I didn't have to go buy onions.
Saturday night we took one of DH's niece's and her boyfriend to a local place. It was amazing as usual. We used a $50 gift card we got for Christmas towards the costs.
Sunday night I made a one pan chicken teriyaki and vegetables. I used broccoli, bell peppers and carrots. Also used the leftover plain rice from Friday night.

takeout tonight, my first night home. I'm still in transit, and have to do some pup prep before I go pick them up. looking forward to a grocery store sushi roll when I do that run first, it will be the first thing I've eaten today since cheezits and honey roasted cashews on the plane. 🤦♀️
I need to make a plan for the rest of the week. suggestions welcome. my fridge is completely empty except a family sized package of Buitoni raviolis...
ETA - that takeout turned out to be a veggie pizza from the sports bar. $22 for a large, and I have 3/4 of it left. I wasn't expecting it to take 3h to get home from the airport, so I just dropped bags and went to pick up the pups. I was hangry/shaky, so I met mooch where he was having an after work cocktail with some coworkers so I could eat before being Momma again.

I was out last week with a virus and have returned to half days. I hadn't gone to the grocery store in over a week and a half, so it was fun using up ingredients on hand.
This week: Sunday: A skillet with the rest of a Hillshire Farms beef sausage with two remaining potatoes. Mon: Freezer leftovers Tonight: Grocery store pizza Wed: Canned crab stuffed romaine leaves, shrimp, cauliflower tots Thurs: Out w/ a friend Fri and Sat: Camping Sun: Something on the road home

I guess I can plan a little bit now I shopped for myself as well as the pups, and may have shared some things as I did some prep this afternoon. leftovers will be lunches or if I don't feel like what I've listed when it comes time to cook. tonight - rotisserie turkey thigh with mashed potatoes/gravy and roasted broccoli (package had 2 thighs, will use the other to top a salad) tomorrow - chicken Lombardy over mushroom ravioli (will have 3 meals of chicken, 2 of ravioli. will boil off plain pasta for the 3rd) Thurs - stuffed poblano pepper with black beans and rice Fri - ?? Sat - takeout? Sun - will be staying near the office. likely will do a low key dinner here as it's near the hotel. salad starter is always fresh, and most of the menu items hold well as leftovers as portions are huge. I'll have the leftovers for lunch as I won't be able to join the team in going out for lunch, b/c I have a half hour break in calls in the middle of the day on Mondays. can you tell I'm looking forward to this trip in?

Tonight's some antique ramen packets I found in the pantry with a bit of frozen stir-fry veggies excavated from the freezer Wednesday - pan-seared tuna steaks and steamed green beans Thursday - DH's night, he'll repeat the cheese and salami from last week with a fresh baguette Friday - A meatless burger with cheese Saturday - Leftover chickpea curry from the freezer with rice and naan Sunday - DH's night again, grilled chicken drumsticks and polenta

Going to make something with the turkey Spam I have opened plus rice. Using up stuff so maybe w/ carrots, onions, and some cabbage? Not sure. Too hot here for soup, probably will be more like a moist rice dish, or so I hope.
