I haven't eaten much today, and I'm still not really hungry. I've got a bunch of tomatoes that need to be used up soon, I think dinner's going to be roasted caprese salad. I picked up a baguette when I stopped for some pup stuff, so I could broil slices of that as well.
at some point, likely the weekend (hopefully it lasts that long...), I will be frying eggplant and chicken cutlets. I picked up an eggplant last week on deep sale, and never did anything with it. it's just barely starting to get fuzzy at the stem, so I have at least another day or so. it wasn't squishy, just the little bit of fuzz.

Red salmon salad with sides TBD. Need to stir fry up the last hamburger patty from the food pantry b4 it needs sauce to help it. I think I will use up the Bella mushrooms with it and some onion.
Probably celery & onion in the salmon salad and maybe lime juice w/ the mayo? Wish I had fresh parsley to put in it.

I'm waiting for the day where I can actually take a "lunch break" and walk away from the damn laptop long enough to actually do some food prep for myself like marinating chicken breast. anyway, /endrant. today is Thursday, and the week is almost over. dinner tonight was frozen spinach ravioli and some jarred sauce. so, very much brainless, and it wasn't horrible.

It's taking me a bit to get back in the groove after a weekend away. I also need to restock fresh fruit, vegetables, chicken breasts and yogurt.
Sunday night I grabbed a locally specialty, a pit beef sandwich at the fire department carnival. Sandwich was $10 and then DH got drinks from a $10 and told them to keep the change.
Monday night we had a big family dinner at the in laws while DH's sister was still in town. The local BIL smoked a brisket and it was to die for. I contributed the extra cookies from when I made 6 dozen and I made a batch of macarons for my one niece who loves them. I rushed them too much so they were not the prettiest ones I've ever made but reviews were good. They have too much egg white baked at too low of a temperature for me.
Tuesday/Wednesday were take out/eating out.
Thursday I made taco salads.
Not sure about Friday. I have a plan for grocery shopping Saturday. I'm due for a big Sam's Club run. DH also needs to fill at least one propane tank.

I'm about to start prepping eggplant and chicken cutlet to fry this afternoon. 1 eggplant, ~3lbs of chicken that I sliced last night. I probably won't bread and fry all of the chicken though. I'm not making red sauce today, and will likely freeze most of the eggplant. I'll use what I don't freeze, both in sandwiches and salads this week. I did make some pesto yesterday. I'll likely saute more chicken in a couple days. the sell-by date on the package was the 10th, so I have time. whatever I don't get to will get cooked off (unseasoned) for the pups, so there won't be any waste.
dinner tonight's going to be Milanese of both, TBH. maybe some roasted broccoli as a side.

I think my plan is to use up the mushrooms and pair it with the ground pork I bought yesterday. Thinking with the Asian frozen veggies plus soy sauce and whatnot in a skillet. MIght get scrapped depending on fleece laundry etc.
Goes to address DW loading or take nap.

I can tell warm weather has arrived and outside of the household, things are getting busy. For the first time in months, I don't have a weekly meal plan prepared....
Last night: Had a meal out with the neighbor kiddos after seeing the new Spiderman movie. $81.27 including tip for the four of us. Ouch. But my huge plate of leftover asada nacho fries will serve DH and me tonight. So, $81.27 for 6....?
Tomorrow: I'd like to bake the remaining Caulipower pizza crust to make room in the freezer. I'll whip up a batch of homemade pizza sauce for it.
Wed: Slow cooker pork loin, veggies
Thurs: Salmon and veggies
Fri-Sun?

I'm jealous of your warm weather, Iggy. I've had to turn the heat back on at night this week, and am currently sporting a full-on fleece pullover and long leggings today. last night's Milanese was fantastic, and I did without the side of broccoli. I just poured ALL of the arugula salad over the top of my plate. lol... I'll do that again, probably tomorrow night. maybe I'll boil some pasta to go with it. tonight, I'm baking off a beautiful cod fillet. it's ~3/4lb, and I'll share with the pups. I'm going to roast Brussels sprouts and tiny potatoes for sides. pups' portion will be unseasoned, I'm not sure if I want to top with bread crumbs or if I want a spice blend.

It's down to 80 here this week from 90 last week. But it's certainly not hoodie weather!
Sunday night I made chicken Caesar salads. It was lacking croutons I didn't realize there was no backup bag in the pantry. We use Ken's steakhouse Caesar vinaigrette.
Monday night I made a chicken burrito bowl.
Tuesday night I'm thinking risotto. That's a good brainless meal for my in office day. Or something similarly brainless.
Wednesday night chicken Caesar salad for me and a salmon one for DH. There's only enough chicken left from Monday for one chicken version. I bought a bag of salmon filets for DH.

it's back to seasonable today, I've been working outside since this morning. but the weekend up til yesterday was barely 60 degrees and rainy, it felt like late March. this afternoon, while listening to a mandatory training class I could have taught, I cleaned up my Blackstone from the winter's water damage. it's cooling down now from when I seasoned it with some grapeseed oil, and I need to add the hard cover I bought a few months back once I can touch the cast iron again. can't wait to start using it again. perhaps regular usage will keep the paper wasps from rebuilding the nests they had in the base. tonight is probably going to be a big chicken Caesar salad. I've been eating like a frat boy lately, and I feel puffy.

Not sure what I am going to do. Declined to buy expensive celery at the Spanish market a couple days ago. I want to go easy, tuna salad plus tater tots. But I only have onions and with the smoke from Canada out there I am not picking and washing garlic aka "lawn" chives to add some crunch. I do have half of a grany smith apple still, but not too keen on too much sweet in my tuna or chicken salads. Moon Shadow is whoopling again. Its going to be hay, buddy, and an exhausted frown. Need to run DW. <--- NO wine at all right now. Finished off both the project Pinot Noir and cooking wine off.

I think tonight might be small portions chicken and eggplant parmigiana to use up the last of the open tomato sauce. I'll also package the remaining eggplant for the freezer. really, it can warm up any day now.

I forgot to thaw salmon on Wednesday for DH's salad. He ended up not eating anyway. Well he might have got something at the driving range. I used up the last of the chicken for mine.
Flank steak is marinating for fajitas for Thursday night. I need to pick up peppers and onions. Peppers are on sale for $1 at a local grocery chain.

last night ended up being a doctored frozen pizza. I'll pack up the eggplant at some point today. there's one chicken cutlet left, I'll find something to do with it before it ages out. I sliced one last night onto the pizza, with tomato, mushroom, spinach, and onion.
tonight I'm going to do something with the rest of the thin-sliced chicken breast. I have a feeling I'll cook all of it, and chop most for the pups. that container is pretty full....oops. anyway, for myself, I have the other ingredients for piccata or marsala. I'll decide by dinner, but I think I'll pair with mashed potatoes. I'm sick of pasta.

Our store had OnCore entrees for $2.67 limit 3. They mean limit 3 for rewards members only. I bought the 3. We get 3 meals out of the salisbury steak or the parmesean chicken. Pretty low cost meal. I sure wanted to get 3 more.

still haven't cooked off all of the thin-sliced CB, and it's not happening tonight, either. last night, I sauteed a few pieces and chopped them into a package of Knorr rice. I added onion, garlic, two full chopped broccoli crowns, and a can of chicken broth. I had a bowl last night, a cup this afternoon, and it's there for weekend pickings. tonight, I'm using up leftovers. the last chicken cutlet is warming in the oven, under the last of the jarred tomato sauce. I just dropped some curly pasta, which will get tossed with the last of hte homemade pesto. I'll add some shredded mozz to the chicken cutlet before the pasta timer dings, so it can melt. I'll figure out the weekend and next week when I wake up tomorrow.

Fajitas were amazing. I cooked up a box of yellow rice and made a fajita bowl for Friday's lunch.
Friday night we went out with a teacher friend to celebrate the end of her year. The close location of that particular chain was only meh. The one at Hershey is much nicer.
Saturday we have a late afternoon baseball game so whatever we pick up on the way home.

Apparently the pork went very bad, and I did toss it out. I did try to de slime it and cook it, but I think I would have vomited it up pretty quickly. At least I do know what went bad during the great Canadian wildfire smoke out of 2023. I kept thinking it was the cabbage from St Patty's day sale or something similar.
Nope it was the pork. The whole cooked mess has been tossed after I tasted a small bit. Color was still good, smell like decaying veggies, and apparently slimy all the way through. Oh well, sometimes it is spoiled beyond all saving. Now to think of what I do have that I might be able to eat safely. Not much left as I need groceries again.
Red lentil pasta?

I omitted the corn, used onion powder in lieu of onions, portobellos for the mushrooms, and baked it in the air fryer. It was flavorful and made enough for 4 servings. Thanks again, Chive. This week: -Last night I cooked locally raised ground beef in the air fryer for "build a burger (patty)" night. I served them with baked beans and leftover cheese curds from the night before. -Tonight: Salmon, asparagus, yellow squash, tomatoes, mozzarella -Tues: Locally raised ground beef burritos, rice, leftover beans -Wed: Air fryer chicken thighs, sweet tater fries -Thurs: Caulipower pizza w/ leftover homemade sauce -Fri: Takeout -Sat: Solstice party including burgers and dogs, mock tater salad, stuffed eggs, and vanilla cupcakes -Sun: Grill/smoke something or leftovers Have a tasty week, everyone.

glad you liked it! I actually picked up asparagus, summer and green squash just now, so I can make it myself later this week as well.
dinner tonight is going to be mushroom ravioli in a mushroom marsala cream sauce. the raviolis are fresh with an approaching sell-by date, so it seems like a good idea.
tomorrow, my parents and sister will be here as we have concert tickets tomorrow night. Mom's already declared she's getting a chicken Caesar salad from her favorite Greek pizza shop near my house. that thing will feed her for 3 or 4 meals. for the rest of us, everything bagel-seasoned baked chicken, roasted tiny reds and broiled asparagus. I'll figure out another veg for Dad, he hates asparagus.

My version of summer rolls. Did not have shrimp so pan fried thin shaved beef to substitute. The peanut sauce turned out nicely too.
