Last night, in honor of the Orioles' opening day, I fried up a couple of hot dogs. Too cold and windy to get the grill going.

Friday night is crab cakes and green beans. DH picked up 2 6 ounce uncooked crab cakes from a local seafood place yesterday. It was his idea. He wouldn't give a total so it was certainly not budget friendly. Cheaper than going to a restaurant though.

I've been grazing over the day, most recently a spicy tuna roll from a grocery run an hour ago. tonight might just be a can of soup. said grocery run had a special - buy a package of thin-sliced chicken breast and get a can of panko bread crumbs, some shredded cheese* and a jar of sauce* free. I doubt I make chicken parm this weekend, but I do have a package of thin-sliced chicken breast now. *Land-O-Lakes cheese, Bertolli sauce. I've never had either, but free is free. I didn't take cheese, I have enough already. I do like to keep a jar of sauce on hand for either a brainless dinner/when the donation bins look low.

Was out of town most of the weekend. Food included takeout pizza, California eggs benedict, a biscuit and gravy, grilled chicken salad with chipotle sauce, a few nachos, a donut or two, and a half of a Carl's Jr. Bacon Western cheeseburger and onion rings. Yes, I am up a few pounds, LOL.
This week: Mon-Leftovers Tues-Ground beef burritos, cauliflower and regular rice and beans for DH Wed-Air fried chicken, veggies Thurs-Caulipower pizza, veggies Fri-Out somewhere Sat-Easter dinner (we're having neighbors over for an Easter egg hunt) including ham, au gratin potatoes, veggies, Velveeta shells and cheese, sweet rolls Sun-Leftovers

I'm debating chicken Milanese tonight. that's easy enough, esp with the chicken already being thin sliced. last night, I ended up just boiling some pasta and opened the jar of Bertolli sauce. I haven't yet poured out the rest of it, but I will. it was so gross. by the time I cooked, I was so tired I just held my nose and ate it. it was the "Vineyard Marinara", as a warning.

I am making pork chops with pineapple fried rice on Wednesday. It's an old Pioneer Woman recipe. Generally when we dine out at the hibachi place, I pick around the large chunks of egg in the fried rice. I was searching for egg substitutes in fried rice and the most common one is tofu. That hits another allergy. I'm just going to leave it out.

Tuesday night DH grilled steaks. I did a bag of steamed broccoli in the microwave and chopped baby potatoes and seasoned it with buffalo ranch dry mix. I cooked them in the air fryer.

A neighbor gifted us oranges, tomatillos, sweet potatoes and cucumbers. I'm going to make the tomatillo chicken soup I posted about a month or two ago.

Wednesday night DH grilled hot dogs and sautéed squash and zucchini. I had a massage appointment. It was nice to come home to dinner ready to eat.

The home opener was moved and that has changed my plans. Thursday night I'll make chicken wraps. I use shredded chicken from the freezer, black beans and a rice/broccoli/cheese box from the freezer. Quick and easy so we can get other things done.
Pork chops have been punted to Saturday when the temperature drops back down. I haven't thawed them yet so it's fine.

I'm feeling anemic lately, so I picked up a marinated steak tip strip at the village market when I stopped for other deli stuff on an errands run. I've had the marinade on chicken before, it's really tasty. it's like 2/3 lb, so I'll be picking at it the next few days. I don't think I'm cooking it til tomorrow, b/c I also grabbed a cup of chili and am still full from that. my plan for at least the first meal with the steak tips is a big Caesar salad. no way I'll be that hungry at all tonight.
tonight might be scrambled eggs and tater tots. or some toast. idk
ETA- yup, scrambled eggs and tots. I wiped out the half bag of tots in the freezer and have 8 eggs scrambled in a measuring cup, just waiting to be cooked. pups can share the unseasoned eggs and tots (I have *massive* heartburn from that chili, which is new...) and I will have scrambled eggs already cooked if I feel like making breakfast tacos or a quesadilla this week3nd. win-win.

Friday night we went out to a local Mexican place.
Saturday night I made Pioneer Woman's pork chops and pineapple fried rice. I left the egg out of the fried rice. I also used mixed frozen vegetables instead of just using peas.
My contribution to Easter dinner is a couple of desserts and rolls. DH's sister is hosting.

my kitchen is mostly closed til I get back Tuesday night. I picked up Chinese takeout on my way home from brunch, and will reheat some stir-fried garlic baby bok choy to toss with some rice noodles later. I may have snacked a little when I unpacked the bag when we first got home. tomorrow and Tuesday, I'm on the road. I've got granola bars in my backpack already, tomorrow night will likely be something small at the hotel restaurant. Tuesday night, I'll grab something at the airport before I head out. I think my flight is at 6-something. if I was flying AA this time, I'd say with certainty that I'd be picking up some roasted Brussels sprouts with balsamic drizzle, except I'm flying JetBlue this time. I have no idea what that terminal looks like, so we shall see.

My rolls were a big hit today. I did the first rise and shaped them and put them in the fridge overnight. I did buy bread flour. I ended up with 16 rolls. DH's family would have fought over the leftovers given a chance. Recipe here: sallysbakingaddiction.com/tried-true-honey-butter-rolls/

I'm finishing up a chicken Caesar salad at my hotel, after a much more difficult travel afternoon than it needed to be.
cost - the cocktail refill I'm about to go back downstairs to get, plus a sizable tip for the bartender who routinely hooks me up here. this is a fairly regular work trip location.

Monday night we ate at the baseball game. Cost more than it should have been because I'm still figuring out how to get my 30% discount with the self check outs they've installed at some stands.
Tuesday night is the leftover pork chops and rice from Saturday.

I got stuck in unexpected traffic getting to the airport tonight, so dinner was an inhaled slice of cold pizza and a cocktail before I ran to board my flight. I'll probably grab a snack when I get home around 10.

Wednesday night DH cooked! Grilled bbq chicken, green beans and Stove Top stuffing. He loves Stove Top. Not something I would buy for just me but I didn't have to cook.
Thursday night we have dinner reservations prior to a show.
Friday night I'm leaving open as some of DH's extended family will be in town. We might go out or his mom might host? His one uncle is supposed to stay with us.
Saturday night his brother is hosting a BBQ after the bridal shower. I need to see what I can contribute.
Sunday/Monday DH is on his own and I'm out of town.

last night was a can of poblano and corn chowder, I added a little bit of shredded chicken and some salad topping tortilla strips. easy, hit the spot.
tonight, I'm doing pasta. not sure what cut yet, but I just mixed up some bruschetta to sit and blend for awhile. I will add prosciutto just before tossing it all. I've got a few options of dry pasta, or tortellini. either way, I'm making extra to pick from this weekend.

Actually, it was two sheet pans making enough for supper plus two lunches. ~Thurs: Have been craving vitamins so I made garbage salads (using up what is on hand) consisting of romaine, canned chicken, and the remaining black olives, mozzarella, Roma tomatoes and sugar free balsamic. Here's to grocery night! ~Tonight: DH will pick up a pu pu platter for two.

tonight, I have a BSCB that needs to be cooked. I'm probably going to slice cutlets and saute, then top a salad for dinner.
last night, I ended up cooking a family sized pack of tortellini to toss with the bruschetta. that's good hot or cold, so that's my weekend batch cook.

Got lazy because I am home sick today. Bought some prepared pork carnitas from Whole Foods when I went there to pick up more hydration and immune system help. Not a well-planned meal, maybe I should have bought a veggie salad or side dish there as well. Had some tater tots and some black-eyed peas. Ate some cut up watermelon for the hydration.
Moon Shadow had enough romaine lettuce so he's happy.
