I survived this week, woo! I had about enough brainpower to start the dishwasher and then chop a bunch of veggies to pile onto a frozen pizza. I swiped a little bit of shredded chicken breast from the pup stash as well.
on tap for the weekend is some pup prep and some freezer diving for myself. I need a protein to go with some roasted veggies and colcannon this weekend. I'll dig tomorrow am, I know there's a full pork loin, but I think there's a turkey breast tenderloin in there too. I can't remember what was in which freezer when the chest freezer lost power while I was away.

We had stuffed shells and garlic bread Friday night. DH's mom cooked. His sister and her DH came as well so it was a nice family dinner.

Yesterday was link, made with venison from the freezer. Was really good over rice, and have enough left over for at least 2 lunches this week.

DH made really good stuffed peppers tonight with a little coaching from me. I'm doing frozen black bean burgers tomorrow with sliced tomatoes and avocado. Tuesday is tilapia Veracruz with green beans

tonight I did some pup prep, and cooked off a bunch of ground meat/kale. I'll freeze half of it for while I'm away next month. for me, I thawed out a small container of red sauce that I'll use up over the week. tonight I boiled some pappardelle and called it good.
I still have that head of cabbage in the fridge, so colcannon will happen this week. I haven't yet gone freezer diving to find the turkey tenderloin I thought I had. this week should be interesting.... with thawing out that sauce, pasta's definitely happening at least twice more this wee.

Sunday night we went out to dinner. We ended up at a local Mexican place.
Monday night black bean pulled chicken.
Tuesday night will be spaghetti with the meatballs DH made Saturday. The remaining 18 meatballs will go in the freezer.

tonight, I had to pivot a little. PIVOT! the package of chicken in my fridge ended up getting boiled off for a pup that spent the morning puking. she seems to be on the mend now, thankfully. it was thin sliced, and I kept a couple pieces to cook for myself in taco seasoning for lunch today (with leftovers for a quesadilla another day). anyway, I doctored up a Knorr rice packet with fresh broccoli, onion, garlic, and a big can of chicken (you keep this stuff around for nights like this!). there's plenty left for me to pick from this week as well. tomorrow will be roasted turkey breast tenderloin, colcannon, and whatever veggie in the crisper that does well at the 325 the turkey cook at. lol...

An odd assortment. H. went to an open house. Loads of food. He did bring me a plate of a few things like potato salad, fruit, snack bread, small slice pie. Save for later. I ate potato salad and a fruit cup. Our neighbors had their Spring ice cream social. I stayed in my house but could see the people . H. brought me ice cream and cake. We made a roast so I cut it up, freezing 2/3. I'm not doing the dishes. I'm not dumping the roast juice or saving it for soup/stew. I will be drinking water and going to bed early.

eh, today went out the window when I called the vet 5min after the office opened this morning bc Punk left me five piles of vomit overnight. we got in this afternoon, and the girl will be okay with some meds, bland food, and a little more down time. I can live with that! but I got all worked up thinking there was a blockage and things were more serious than they seem to be. whooooo, Momma. breathe.
anyway, I made a huge pot of white rice tonight, b/c my golden girl is gonna be doing that for the week. and 10min ago, I realized I still haven't eaten dinner yet. so, pasta is boiling, since I have sauce thawed. I'll be in bed shortly.

DD had a breakfast burrito at McD's this morning and a smoothie. I had half a sausage egg McMuffin with no cheese and a diet coke.
I let DD have her DQ blizzard this afternoon, then she had a can of veggie soup. I had 2 pieces of KFC, a leg, and thigh, and cole slaw on the way home. I had a small can of tuna in oil with some barbecue chips.
Tomorrow I'm frying the chicken and probably fixing mashed potatoes and gravy, DD's favorite.
She and I will go out for dinner or have Subway. I am enjoying not worrying about cooking, we will just nibble our way through stuff here. Oh gosh, I forgot I thawed out some pork chops, maybe fix a stirfry with those.
I looked at the docs appointment and someone screwed up. It was from the docs office we went to today and they sent her a notice for tomorrow, someone didn't get notified, so need to call them in the morning. This type of thing is happening more frequently. So tomorrow we can stay home or just run to town for a few things to make the stir fry. The chicken can hold one more day I think.

Wednesday night take out subs. Thursday night chicken sausage veggie roasted sheet pan meal. I used baby potatoes, green beans, zucchini, carrots and bell peppers. I did something similar last night using chicken, yellow squash, and zucchini served on a bed of raw baby spinach. It was delicious. Happy weekend, everyone.

I'm all set with red sauce for awhile, dinners this week have been the same - pappardelle with sauce from a freezer container. perfectly brainless, which is exactly what I needed by thta hour. last night, I decided I wanted a twist, so I boiled off a package of Buitoni tortellini. tonight, I finished off some taco-seasoned chicken and some other fridge goblins in a quesadilla. I picked up some stuff on a quick pharmacy (in the grocery store) earlier for the pup, and I'm probably not leaving my house for the next week now. looks like I haven't updated here, I just scrolled up. but it turns out that the pup diagnosis earlier this week was a symptom to a blockage, and she had surgery yesterday. the pharmacy run today was for oral syringes to allow me to administer the crushed med tablets mixed into applesauce when she's not interested in licking the offered teaspoon. the meds still need to be taken, sorry kid. I'll be freezer diving this week, but also participating in a foodie group event on Sunday - post your chicken dinners. I've got a package of chicken breast tenders thawing, and I'm leaning toward chicken scampi over garlic mashed potatoes. I'm really all set with pasta for awhile after this week...

We ordered fish dinners from the local restaurant to pick up. It was good.
That finished off the gift card I gave H. for Xmas. He was testy one day. Said he hated gift cards then threw it at me when I said I'd use it. So much for a Xmas gift.

i'm sorry your DH is such an ass, Artemis. tonight, I needed to make a chicken dinner, per a challenge from a local home cook group. I made chicken scampi over linguini, roughly* following this recipe. scampi is something I order out, not make at home, so I needed a consult lol.... it needs salt, which means it's really bland if *I'm* asking for salt. *by roughly, I mean, I used way more seasonings than listed, and chicken breast tenders that I shredded. I added a diced tomato and subbed in broth for the white wine - a recommended sub, since I didn't have any.

Friday night we had pizza from a local place with DH's parents. They left town Saturday morning so their fridge was cleaned out.
Saturday night I made a roast in the crock pot with potatoes. I served steamed broccoli on the side.
Sunday night DH grilled burgers. Tator tots on the side. The burger from the latest cow we got is not as good. I knew I was having to drain it making tacos and such but we hadn't made burgers with it until today.
Monday is supposed to be rainy. I'm going to turn Saturday night's leftovers into beef vegetable soup. I have a bunch of frozen vegetables to add and home canned tomato juice.

I checked the date on a package of bone-in pork chops I picked up over the weekend, and that date is today. oops. I'll season and cook those off after trimming the fat/bone. will pair with mashed potatoes and a roasted veggie. if I boil the rest of the bag of potatoes (2/3?) today, I can have the leftovers with turkey breast tenderloin and another roasted veggie later this week.

I used about a 1/3 of a jar no sugar added Ragu spaghetti sauce on Saturday's Caulipower crust pizza. The rest of the sauce will go into tonight's spaghetti meat sauce to serve over angel hair pasta for DH, and Palmini hearts of palm linguine pasta for me. I've not tried the latter before and will report back. If I remember, I'll make an air fryer quick bread to serve on the side.
Taco Tues: Cod tacos, shrimp, sauteed zucchini and yellow squash. Wed: Slow cooker pork loin, veggie Thurs: Leftovers Sat and Sun: Not sure yet.

The Palmini linguine was good and I'll work with it again in the future. A cooking suggestion on the can was one can boil them for 5-10 minutes. I chose that option because I don't care for al dente pasta. I didn't get to the bread as I was on a phone appointment for quite some time.

I made the beef vegetable soup Monday night.
Tuesday is my in office day and it drains me. A local bbq place was running a wing special $9.99 for a dozen. At that price I got 2 dozen, a pit ham grilled cheese sandwich that comes with fries and a piece of their signature dessert a cheesecake/bread pudding combo. It was $50 with tip. We'll get several meals out of it and the money went to a local spot.
