I have no flippin' clue what I am going to do over the next few days. I am sure eggs will be involved in some form but beyond that -- my mind is blank. I DO have a gift card for some Thai so I might just do that and not have to think about it on Saturday.

Pulled two NY strips from the freezer for DH and I. They are in the air fryer. There are enough odds and ends (including salad fixings) that I am not bothering to cook any sides tonight. Kiddo will have leftover pizza. I'm not a fan of getting takeout when we have groceries in the house, but Kiddo wanted pizza and we hadn't spent any money on restaurant food in January. Since I was late getting home yesterday and the pizza place is next door to her extracurricular activity, it made life easy for DH yesterday too.

Vegetable lasagna, ramen noodle cabbages salad. Celery stuffed with pimento cheese. Do you have a recipe for the salad? It sounds interesting to me. Above is the basic recipe. Some ingredients can be switched like the vinegar. The ramen flavor packet is mentioned but is used in the salad dressing. I use white vinegar and add liquid amino acids for the soy sauce flavor. I use chicken flavor ramen noodles. So the dressing is the flavor packet, vinegar, sugar, amino acids and olive oil or oil of your choice, stir together. I also use pre-shredded tri-color cabbage eliminating the shredding of carrots. I also skip the sesame seeds since they stick in my teeth. When in a hurry, I pound the ramen noodle package with a hammer to break it up. Put it in a large bowl and add about 1/8 cup water to moisten and soften the noodles. I make this about every 10 days as it's my favorite.

I heated up a can of soup when I first got home, when I thought I was coming in and going straight to bed. instead, I've found a second wind, after napping across all methods of transport on my way home. this time last night, I was listening to a live set on the back deck of a cruise ship. tonight, I'm snacking on canned fruit b/c I need to shop tomorrow morning. this week is going to be a bit boring, but minimal cooking in that I will just be filling in sides with leftovers as I go. I discovered a flipped circuit breaker when I first came home, on the circuit that includes the home network (what made me investigate) and the new chest freezer. all that was in the freezer was a ~4lb pork loin and a 12lb turkey. I have no idea when it tripped, but know that the freezer stayed closed. temp was 40F, the pork was fully thawed and the turkey was a little squishy on the outside but still an ice block in the middle. fantastic, just what I needed - I need to run another line downstairs. anyway, another day haha. so, I'm ISO suggestions on what to do with the pork loin tomorrow. I'm not feeling porchetta, which was the original plan for that piece of pork when I bought it....and wasn't on the radar to make any time soon. I don't really buy a whole loin for the recipes I use a bunch. all I know is that I don't want to stuff with a cornbread stuffing, since I'll be doing a bread stuffing for the turkey in a few days when it thaws. oh, and I don't like anything remotely related to mustard. suggestions welcome, please and thank you! when it thaws, I'll also be roasting that whole turkey. I'm going to make stuffing and a bunch of veggies, maybe some mashed potatoes. so, very easy week this week.

Getting up some catfish tonight. Found a package in the freezer when I was looking for something else last week.
Have a hankering for chicken Adobe. If I have some thighs I'll be making that for my work lunches.

I don't really buy a whole loin for the recipes I use a bunch. all I know is that I don't want to stuff with a cornbread stuffing, since I'll be doing a bread stuffing for the turkey in a few days when it thaws. oh, and I don't like anything remotely related to mustard. suggestions welcome, please and thank you! when it thaws, I'll also be roasting that whole turkey. I'm going to make stuffing and a bunch of veggies, maybe some mashed potatoes. so, very easy week this week. You could always cut the loin in half and freeze part of it. My one tried and true is to stick it in the crockpot. I put jarred Peppercini's over the top, the whole thing -- include the juice and sprinkle with Italian seasoning and cook on low all day. It comes out amazing and I will usually have it as a french dip sandwich with the juice and add a salad, but than you can also use it for taco meat or fajitas etc.

I broke down and did a faux Chinese meal and have leftover General Tao's Chicken. Everything else is gone. So my intent is to bake some rice and have the last of the ckn with that and than finish of the rice under stirfry. I might even add shrimp.

tonight, I doctored up a Bertolli frozen meal. I added a snack-sized portion of frozen shredded chicken, half a bag of baby spinach, and a little bit of cream to the bowtie chicken/spinach option. there's a solid portion left for another day.
tomorrow, the turkey should be fully thawed. I'll dunk in brine at some point and roast on Thursday, bc I can do that while WFH. 🙃

A six piece chicken nuggets and a small chocolate Frosty from Wendys. Costs were $4.50.
I wasn't super hungry tonight. A nurse thought the cafe closed at 8pm but it was actually 7pm. I bought some snacks when I went down at 715.
I picked up the snacks because I thought I might stay overnight at the hospital. They'll get eaten at some point. Grandma told me to go so I did. By the time I left and went to her house to pick up some shoes, I was down to fast food options being the only thing open.

This week:
Sun: Leftover pasta and chicken tomatillo soup. The tomatillos were given to us. $0.75/1 serving. Mon: Bachelorette "garbage" spinach salad using the remaining deli ham, mozzarella and black olives. I drizzled it with a remaining container of takeout ranch dressing. $0.50/1. Tues: For a late lunch I had another large garbage salad with leftover taco meat, a sliced mozzarella stick, and part of a sad avocado. I topped it with takeout taco sauce and a few crushed tortilla chips from the bottom of the bag. I didn't eat supper. $1.72/1. Wed: Zatarain's with ground pork, tempura eggplant. $9.66/3 Thurs: Cod, breaded shrimp and okra. $8.50/2 Fri: Takeout from? DH buys Sat: Co-BD party with a neighbor friend. $ A lot, LOL Sun: Recover
January food, HBA, kitty litter for the icy road, and a cookie decorating kit for the neighbor kiddos totaled $193.70.

Pork chops, rice, and broccoli. I haven't been to the store this week, so the broccoli is frozen. I think it was close to $1.50. Rice is probably close to $1 (rice, vermicelli, butter, stock). Pork chops came from Costco and I don't remember the price. Typically it works out close to $1 per porkchop when we buy from there, so about $4. Any way I shake it, all comes to $10 or less for dinner. It will feed DH, Kiddo, and I tonight and have enough leftovers for probably like 1.5 lunches. Granted, not a very exciting dinner, but it will work!

I'm debating making turkey tetrazzini tonight. debating, bc I don't have any mushrooms and I'm not sure I wanna go back out today. my friend B just left a little while ago, we've been schmoozing for a few hours over brunch. mooch never made it up here today. anyway, this Recipe Tin Eats recipe is what I'll be following, if I do get off my butt in the next hour or so. a half batch will be plenty to use up more leftover turkey. the pups are helping a ton (white meat only for them) as well. I didn't bother actually freezing any of it this time. ETA: scratch that for tonight, we all got a break from turkey tonight. I did go out to pick up mushrooms and some parsley, and found popcorn chicken on the hot bar. I grabbed about 1/2lb for the three of us. I tossed mine in a lazy salad with romaine, pico de gallo, crumbled queso fresco, guacamole and a little vinaigrette. the goobers inhaled their dinner bowls and are now both staring at me while I eat. creepers. tetrazzini will happen tomorrow night.

turkey tetrazzini was tasty, would definitely do it again to use up leftovers. I added frozen peas while cooking down the mushrooms, garlic, onion. I also halved the recipe. link is above.

tacos tonight with yellow rice. I swiped a B/S chicken thigh from a package I bought to make arroz con pollo this weekend, doused it in my taco spice blend, and sautéed. there's enough chopped chicken left to make a quesadilla in the next day or so, and most of the package of yellow rice.
