Easy chicken wraps for Tuesday night. I was in the office today and I'm just done.
Wrap contents were black beans, shredded chicken and a cheese rice broccoli steamer box. All ingredients were on hand.

I found an old and shriveled avocado in the fridge. Surprisingly, it was perfect on the inside. So, I mashed it with olive oil, hot pepper flakes and salt. Then I toasted a big piece of rye bread, rubbed it with a raw garlic clove, then heaped on the avocado and topped it with a runny egg. Ta Da!! Avocado toast! Delicious!

Southwest chicken foil packets for dinner tonight. I make 4 packets. The remaining 2 will be dinner tomorrow night before we go to the play.
I'm leaving Friday for the weekend to visit my family. DH is on his own lol.

Tonight is going to be stir fry. Or possibly a oven pot pie with mashed potatoes.
I have a the thought of making a chicken soup from scratch and just throwing things in for fun. Probably something for Saturday so I can enjoy over the weekend.

Success. After many trials/errors, I cooked a bison roast like a brisket. It turned out tender and tasty. I used a slow cooker.

takeout tonight, for a lot of reasons. $40, including tip. the order was a spicy yellowtail roll and salmon sashimi, plus a large order of veggie-loaded rice noodles. tonight I had the sushi and a small cup of rice noodles. the rest are planned leftovers for the next few days.

Obviously not dinner, but I just made a yummy breakfast sandwich.
English muffin with a little butter on the bottom half, over-easy egg topped with shaved asiago, and 1/4 avocado mashed on the top half. A side bowl of strawberries.

I'm about to make breakfast bowls. Shredded potatoes, sausage, bacon, onions, peppers, and cheese. DH will get 2 fried eggs with his, and I will get hot sauce.

I'm gonna regret making a mess out of the kitchen that I have to clean up before I can prep for tomorrow's birthday party.
I made twice baked potatoes and air fryer steak bites. Of course my meal times are all off today and grandma is already asleep so it's not much of a birthday dinner for her. She had a piece of the bacon I cooked up for the potatoes.

tonight I started cooking to stock the new chest freezer that isn't yet plugged in. we had to tip it on the side to fit in my hatchback, so I'm letting everything chemical/HVAC settle back for a day before turning on the cold controls. but, I've got a container of ground beef/kale to drop as well as a frozen turkey and a half pork loin that's been in the fridge that I won't get to before it expires/I leave for vacation.
dinner tonight was a frozen single serve veggie lasagna with a side of roasted Caprese salad. for those that don't love to cook, this frozen meal would be a solid option for you. I had flashbacks to college, when I didn't have a stove to cook for myself. anyway. Michael Angelo brand, if you have that in your area. I've got another single serve of eggplant parm from the same label, that I'm in zero rush to try out now. lol...

I just made some beef stroganoff. DH doesn’t like mushrooms so I divided the meat sauce and added mushrooms to my half. I am skipping noodles and I steamed some sugar snap peas and did a small salad of chopped red cabbage with shredded carrots and balsamic dressing.

I'm in fridge cleanout mode, before leaving for a week. tonight, I'm cooking off some chicken breast tenders to have on hand for the week. I'm going to roast some veggies, add some chicken, and toss with some pasta for tonight.

Sunday's side of air fried mozzarella and tomato stuffed portobello mushrooms were delicious. Took some time over the weekend to plan the next several weeks. The goal is a $150 grocery budget for the next few months. Last night: One pan salmon, zucchini and bacon wrapped asparagus Tonight: Leftover keto casserole from the freezer and side salads Wed: Air fried teriyaki chicken with cauliflower and regular rice, and a veggie stir fry mix from the freezer Thurs: Caulipower pizza, side salads Fri: Takeout Sat: Low carb White Castle pie, veggie Sun: Traeger smoked ribs, veggie Mon: Leftover enchiladas from the freezer, caul and reg rice Tues: Cod, veggies Wed: Leftover taco meat from the freezer served on cheddar cheese "tostadas," leftover rice, beans for DH Thurs: ? Fri: Appetizers Sat: Pizza night with the neighbor kiddos Sun: Grill/smoke something

Sunday night DH made chili before I got home. The one he makes has way more ingredients than mine. I think he paid $30 to get ingredients? I can't remember what he told me. The two one pound packages of 93/7 ground beef ran I think $14 alone. We tend to buy fresh ground beef to make things like this or meatballs where we anticipate freezing leftovers. Our usual ground beef supply from the freezer is already frozen and I'm not big on refreezing.
Monday night we ordered subs after seeing a movie.
Tuesday night grilled steaks, leftover twice baked potatoes from Friday and salad. I would say $13-14?
I'm just proud of myself for cooking two weeks in a row on my in office day. It just drains me so badly. We are trying to cut back on eating out after last month and it's not as enjoyable going out when it's so cold.

tonight was a big green salad with a chopped up frozen chicken patty mixed in. I'd planned to use garlic parmesan popcorn chicken, but the wing bar looked gross when I hit the store earlier.
tomorrow I'm probably repeating this, and I'll hit the wing bar when I go out at lunch time. I can reheat easily enough at dinner.

Last night's Kitchen at Hoskins air fryer teriyaki chicken was delicious. I used bottle teriyaki sauce and added the minced garlic, etc. I did not add sugar or cornstarch. Teriyaki Chicken

dinner tonihgt is another huge salad with a baked-off frozen chicken patty. salad is already tossed in a huge mixing bowl while I wait on the chicken to cook.
I've got one more chicken patty in the freezer, and half a clamshell of salad greens. tomorrow will likely be another repeat salad. I drop off the pups Saturday, with their food stash (including frozen cooked proteins) that includes all of the fresh produce in the fridge that they can eat. so Sat night/Sun am will be takeout and/or canned soup lol...

Thursday night DH had leftover chili. I was not feeling it. I'm eating my daily fruit bowl as the fridge is packed full of fruit. I think there's one small serving of salad left and I'm thinking I will have some of the cheese, crackers, and pepperoni.

I found a single-serve eggplant parmigiana in the freezer. has to be the other half of the sale with the veggie lasagna. anyway, that's in the oven, and I'm going to boil off some pasta. and them I'm running the dishwasher and the kitchen is closed lol....

Sunday night I made chicken noodle soup from scratch. DH either got food poisoning at dinner last night or the tequila had gone bad. He did a shot with his niece and one of the shots was the end of a bottle. The other was from a fresh bottle. It could have been the food but I had bites of his food and we shared an appetizer.
Anyway soup seemed to be a good idea to reset his system.

I more than doubled Saturday's White Castle pie and used 1.5 pounds locally raised ground beef and a pound of store-bought ground pork. This is one of the first recipes I started making when going full-time low carb over a decade ago. Served with baked cheddar breaded pickle chips, it was delicious. I used almond milk in lieu of cream as that is what I had on hand, and onion powder in lieu of onion soup mix because of DH's distaste of whole onions/onion bits: White Castle Hamburger Pie
ETA: Oh, yes, when available, I'm going to start listing the cost of suppers. To my $148 spent for food/HBAs so far this month, this evening I'm going to stop and buy some much needed fresh produce.

I prepare a weekly menu on Sunday. I cook 5 days a week and DH cooks 2 days. This week got juggled a bit when I found out I have a 4 p.m. meeting Saturday, one of my days, so I had to go to a quick-fix solution for when I get home at 6.
Monday (yesterday) Leftover black-eyed peas with collard greens from the freezer, plus a take-n-bake baguette from Aldi Tuesday (today) Pan-seared boneless pork loin chops, green beans Wednesday Roasted turkey tenderloin with mashed potatoes Thursday (one of DH's days) Sandwiches because we have to be at a meeting by 6:30 latest Friday Chicken tostadas Saturday Tortelloni with pesto Sunday (DH's other day) Leftover roasted chicken from the freezer with pasta

soupandstew, nice list! I prepare suppers during the week, DH buys takeout on Friday's, and he usually smokes/grills on Sunday's. It's a nice balance.
