Needing to meal plan is the pits. I've only been back since June and I'm tired of it. Sunday we picked up a pizza as TD was doing his pie-a-thon for Canadian Thanksgiving Monday. Monday, we took the pies across the border and at at his brother's. Last night, I did chicken pot pies and tonight I have the stuff out for a potato leek soup with garlic avocado toast. Tomorrow is SLAP, and I'm clueless as to what I'm doing the rest of the week.

The Walk of the Penguin Mich I had to look up SLAP. Thank you for teaching me something new. I follow a different frugal forum and one of the threads is dedicated to eating food on hand and aim for zero waste. I hadn't posted since earlier this year, so I reread some of my posts, one reminding me of the one sheet pan meals I'd focused on last winter. So, onto my upcoming meal plan notes they went, starting with beef sausage and veggies tomorrow instead of whatever that was on the list. Now that it's cool enough outside to operate the oven, this is perfect.

tonight, I'm going to saute a chopped marinated steak tip and toss with a crisp Caesar salad. for a lot of reasons, I know it's almost shark week. so, the next couple of days should be fun as my body processes it. I've got some chicken breast cooling after a run through the IP, so I may be swiping some of that for myself the next few days.

tonight, I'm cleaning out fridge goblin veggies on a frozen pizza. I'll have half, and the rest will be midday snacks. this coming week, I've got two huge packages of BSCB. I bought produce to accommodate chicken lombardy and Milanese. how things turn out will be TBD

Hubs went to town and brought us dinner home. He and DD had tortellini's and salad. I had a chef salad. A lot of Saturday nights he goes and gets dinner. Just as soon eat it at home.

I'm loving this "operate the oven which will warm up the house" weather! Last night I baked a Caulipower BBQ chicken pizza for the first time. It wasn't too shabby. I served it with bacon wrapped asparagus and mozzarella sticks. The latter two were cooked in the air fryer. Tonight: Veggies stir-fried with locally raised beef Tues: Cheesy taco skillet and canned crab stuffed portobello mushrooms Wed: One sheet pan pork rind and parmesan crusted flounder with a cheddar cheese "tostada," riced cauliflower and avocado crema Thurs: Something easy after running errands all day Fri: Takeout Sat: Halloween party food including Cauldron Chili and Devlish eggs Sun: Leftovers

Sunday night DH's sister fed us pizza and wings.
Monday night I made Pioneer Woman's chicken street corn skillet. DH has been asking for it.
Tuesday night instant pot spaghetti. This has some vegetables in it. We need more vegetables but I have a dental appointment this day. It is guaranteed to aggravate my TMJ so soft things for dinner.
Still working on Wednesday's plan.
Thursday will be leftovers.
I did get some more shredded chicken made. I had emptied my freezer stash.

delish tonight, I sliced up one BSCB and made a pan of chicken Lombardy. the BSCB was huge, so there's still 4 pieces leftover. 😯 I boiled off a portion of pappardelle pasta for tonight's dinner. the leftovers might become sandwiches, or maybe I'll make some mashed potatoes. 🤷♀️
I will most likely slice up another huge BSCB in a few days to fry cutlets for Milanese, and then run the last 2 from that package through the IP to shred for the pups.

I ran 2 rounds of chicken breasts through the instant pot Monday night and now my freezer stash of shredded chicken is replenished.

It has been a day of traveling. Pulled some Italian bread from the fridge to toast. Added olive oil, Italian seasoning and parm and dipping it in some leftover spicy marinara sauce. Easy peasy.

my GAF is past busted tonight. dinner is currently simmering on the stove, I picked the chicken and spinach bowtie pasta Bertolli meal out of the freezer, doctored up with extra chicken and spinach. stick a fork in me, I'm done.

I'm end of the week exhausted on a Wednesday. DH had a container of his chili from the freezer. I made Budget Bytes skillet Mac and cheese and added shredded chicken and a bag of steamed broccoli. It came together pretty quickly and I didn't spend money on take out
The pasta cooked up quickly on the new stove.
I'll do something Thursday with the chicken breasts I thawed out today.

Store bought cheese pizza that we dressed up with olives onion,frozen the warmed green and red pepper sand onion, more cheese and left over beef lunch meat. I'm delighted to get the green pepper, red pepper and onion combination frozen at family dollar for $1.25. Very versatile. I am another one that is tired of planning, shopping and cooking. I want to have food ready quickly.

I did some shopping and picked up some fried chicken and jojo's for lunch today with more chicken and green grapes for dinner. It might just be the grapes, I am stuffed from the jojos.
Grapes were a really good deal at $0.97 per pound and I picked up just under 2 pounds.

what's a jojo? I've never heard of that before. tonight, I'm being lazy. I'm off as of 30min ago (while I wait to finish up something that required an enterprise app to cycle and allow me to do some stuff) until Tuesday morning. whatever, it's fine. I'm here, let's close it out. anyway, tonight, I've got the last of the chicken Lombardy from the other night. I could boil pasta, roast or mash potatoes. I'll see what the potato stash is when I shut the laptop down and go inside for the night.

Had to look up jojos. I had never heard of them either. They are potato wedges, seasoned and fried. They sound a lot like the potato wedges they used to have at KFC. I loved those things!

I did some shopping and picked up some fried chicken and jojo's for lunch today with more chicken and green grapes for dinner. It might just be the grapes, I am stuffed from the jojos. Grapes were a really good deal at $0.97 per pound and I picked up just under 2 pounds. I bought huge, crispy green grapes from Brazil yesterday. $3.99 a pound. They're SO good! Hard and very sweet. $0.97 is an excellent price.

my dishwasher is almost full, and I had a late breakfast, finally, at almost 3pm. I IP'd the remaining BSCB in the fridge for the pups, just waiting on them to cool enough for me to glove up and shred.
for me? I grabbed a frozen Marie Callender chicken pot pie at some grocery trip recently for some reason, and it's in the oven now. I'm not even hungry, but it's an 50min cook time. whatever. today's been a full day, and I'll figure life out again tomorrow. lol...

You can't keep them, because they're no good the next day, especially if they're made right, with simple ingredients and no preservatives. My grocery store across the street sells fresh baguettes for $1.29, and they're phenomenal. I eat a lot of bread. I could never do a low carb diet. The pigeons love me. They get the rest of the bread.

I'll put day-old baguettes into a big ziploc bag, and when I have enough to make a batch of croutons, I do so.
dinner tonight was a lazy one. I never got to the grocery store today, and plan to do so tomorrow before everyone else wakes up. maybe including the dogs here lol.... anyway, I boiled off a portion of linguine and topped it with a small can of chicken and a package of frozen broccoli and cheese sauce.
I'm still off work tomorrow and Monday. part of my to-do list is to bulk up the chest freezer with cooked proteins for myself and the pups. I guess we'll see how that goes.

I had read something on the net a couple weeks ago....it was boiling little (mini) potatoes & then putting them in a skillet with butter to make them crisp. You didn't boil them to completely done, you finished them in the skillet. Well, being lazy, I decided I'd try to finish them in my air fryer. I coated them with EVO with some parsley flakes...but it didn't make them crispy. So, tried but didn't work. We still ate them along with a fried pork chop & a salad.
Tonight will be either leftover pizza or what we can find in the freezer. DH will be doing his popcorn shrimp if we go with the freezer choice. I may have a Stouffer's mac/cheese....to be decided.

I got through the grocery store relatively painlessly this morning. pups will be eating well once the IP'd BSCB is gone - today's trip found ~2.5lbs of ground "meatloaf mix" at a cheaper price than any of the single-variety ground meat options. I'll cook that off with some chopped kale. for myself, I picked up a package of four boneless pork chops. this might not be dinner tonight, but I'll cook them off in cast iron, and pair with mashed potatoes and roasted broccoli - to clear a fridge and a cabinet goblin each. if I don't cook them tonight, dinner will probably be leftover pizza from yesterday. red onion/pepper/mushroom from the sports bar while I was out running errands in the rain. yesterday was a little nutty. lol... I'm not sure what else will happen this week, but my favorite score for myself was half priced asparagus. I bought two bunches! at some point, I'll broil some and add to IP risotto. Punk loves it, as well. unfortunately, my mom hates asparagus....and mushrooms - which would be that IP risotto. she's coming down Tuesday night to hang out with the pups while I have a two-day site visit. it's local, so I'll be home at night, but it's in the opposite direction of their day care (that LD isn't cleared to return to yet anyway) so I needed the days covered. maybe I'll get Chinese takeout while she's here. she likes the place I go near my house. I can try a few new-to-me dishes to share, and send her home with all of it for Dad.

Artemis Windsong I love doctoring up store bought pizza! Holy smokes holiday season has started at our house! So much junk food is around after our Halloween party. When DH came home last night after buying veggies at the store, he said he needs some greens. I concur so I'll focus on those this week. Last night: Frito pie using leftover ground beef, Fritos and a tube of Crescent rolls Tonight: Spinach salads, bacon wrapped asparagus, and perhaps an additional side veggie Wed: The flounder fillets with riced cauliflower I didn't get to last week with an additional veggie Thurs: Out with the ATV club Fri-Sun: IDK yet
