I didn't meal plan over the weekend. NFL season has started. Tonight: Maybe breakfast for supper using the fresh eggs the neighbors brought over? Tues: Taco Tuesday. Maybe? Wed: Fish and shrimp on top of veggies from the freezer. Thurs: Happy Hour with a friend. Fri: Takeout? Sat: Out with a friend. Maybe. Sun: Grill/BBQ

Scratch the above. It's grocery week! In order to focus on refrigerator items, tonight I'm going to make hot dog "sandwiches" using homemade biscuits and serve them with side salads. The latter will include an avocado that needs to be used. Tomorrow's seafood will be served on top of sauteed zucchini noodles.

Probably filet mignon for DD and hubs and some type of potato with salad. I just ate salmon cakes and will like have another. I need to crank up the grill so they get good tasting ones.

I have some chicken breast tenders to use up tonight, hoping to also be able to use up what's left of some white wine I'll never drink. my friend K left ~2 glasses in an open bottle when she was here last.
I'm going to work through the frozen uncooked proteins in my kitchen freezer the next couple of weeks. I want to start using the chest freezer better, and not having the 'dumping zone' upstairs will be helpful. I can set myself up better for how the pups and I actually do eat. so, I just pulled a boneless skinless turkey breast out to thaw. I don't think it will be fully thawed tomorrow, so this may end up being Monday's dinner. but I'm going to slow cook that in the crock pot and serve with mashed and a roasted veggie.

woo! the turkey thawed out completely. I miscalculated, though - it's a breast tenderloin, not a full-size turkey breast. so it cooked perfectly on low in the crock pot in about an hour and a half. so I've got the heat turned off and the lid tightly secured* for now. I'll turn the warming setting back on when I turn the burner on for the potatoes later on. I'm going to use some of the broth I used to cook the turkey in mixing up the mashed potatoes, and I'll roast a broccoli crown for a green veggie. the turkey breast tenderloin is a little over ~1lb, so there will be leftovers. I may have another meal with mashed/veg, I may chop some over a salad. the turkey was seasoned with garlic powder and rosemary. *my lid has a full gasket on it, as it also has locks to securely transport the whole thing without spills. it's a nice bonus for keeping the heat in, as well!

September is always our worst month schedule wise but this one is really kicking my butt. Having to get a new stove and wait nearly a week for installation didn't help either. Trying to get back on track this week.
Sunday night DH's sister invited us to dinner.
Monday night I made beef black bean tacos. There will be another round of these baked up for either lunch or dinner another day.

this week has just been picking at things, using stuff up. tonight's going to be roasted diced Yukon gold potato and chopped broccoli, with some shredded rotisserie chicken (from the freezer), topped with some gravy left over from the crock pot turkey earlier this week. tomorrow will be takeout, probably Chinese as I've been craving it lately. this weekend's going to be shitty/rainy again, so I'll figure out some comfort foods. I think there's some black bean pulled chicken in the freezer. there may be nachos for football Sunday

yesterday was a lot, and I'll spare y'all the story. I may post it later elsewhere, but I'm not sure yet. me and mine are all fine, though. anyway, last night was a good strong cocktail and a bowl of Doritos that I shared with Punk (the chips, not the drink) tonight, I made a batch of loaded risotto in the Instant Pot. I found my favorite arborio rice in Amazon Pantry, of all places. I signed up for "subscribe and save" and I'm now scheduled to receive a 28oz resealable bag of that rice every 4mo. the first one arrived yesterday in the middle of everything. tonight's version had spinach, pancetta, mushroom, chicken sausage, onion. I'm stuffed, and there's plenty left over. tomorrow, idk what's going to be dinner as I realized yesterday that I have a concert ticket for tomorrow night. so I'm meeting the other friends going to the show, somewhere near the venue for drinks and apps prior to the show. the Patriots are a 1pm game, so I'll set myself up with black bean chicken nachos for lunch instead.

I ended up eating leftover Thai takeout before watching the football game last night.
Tonight: Beef burritos, with portobellos stuffed with shrimp and leftover rice DH brought home from a work function. Tues: Stir fried chicken, veggies, with more leftover rice Wed: Air fryer pork chops, veggies Thurs: Slow cooker ribs, veggies Fri: Takeout Sat: Sleepover with the neighbor kiddos. Not sure what we'll make. Maybe they'd like to help with crescent dough wrapped Little Smokies? Sun: Grill/smoke something

this is a short week for me as I prep to head out for a long weekend on Thursday am. Mon - roasted Caprese salad on toasted baguette, with pesto drizzle. Tuesday - black bean pulled chicken over curly pasta Wed - Acadian chicken fricot, leaving 75% of the pot for my dad while he's pup-sitting here this weekend

I've finally got almost 2 whole weeks before I leave town again so I'm trying to get back on track.
Sunday night we went out for hibachi and the leftovers were Monday's lunch.
Monday night chicken sausage veggie sheet pan. I wish I had more vegetables but I didn't make it the grocery store. It did use up the broccoli and carrots left from Saturday's veggie tray.

Saturday night was smash burgers Sunday night was cheeseburger macaroni Monday night was homemade chicken noodle soup, as DH seems to be coming down with something.
And for tonight, I put venison chunks, rotel, butter, onions, and potatoes in the crock pot. Will add other canned veggies later for my take on a vegetable beef soup.
And I will have to make sure that if DH shoots any this year we pack them in smaller packages. There is so much meat. I could have saved some out for another meal, but this can be repurposed easily enough.

I've finally sort of gotten my appetite back after a few days sick in bed. the COVID diet has been wonderful - I'm down 10lbs since Wednesday. I made a small pot of Acadian chicken soup on Thursday, when I felt better than Wednesday when I tested + but before I really started feeling like shit). the chicken legs were dated Thursday, and I'd planned to make it for my dad to enjoy while he pup-sat this weekend. well, none of that went as planned, but the chicken still needed cooking. it's been handy - I made it normally for taste and consistency, but I've been pulling out the heavy dumplings and the carrots I don't like. lol... but when I wasn't at all hungry, and getting the majority of my calories from red Gatorade, a nice hot mug of bone broth hit the spot. anyway, tonight will either be a steaming mug of soup or a tomato and mozzarella quesadilla. nothing terribly heavy either way. I'll get the pups fed first.

I marinated chicken breast chunks in hoisin sauce, oyster sauce, rice vinegar, garlic, ginger, mirin, honey, sesame oil and soy sauce. Sauteed it with matchstick carrots and strips of red pepper. Ate it wrapped in Asian pancakes, with more hoisin sauce, and strips of cucumber. Yum! It tasted a lot like the Peking duck pancakes in Chinese restaurants.

Sunday night we went out for Mexican.
Monday night we made chicken parmesan using the Pionner Woman's recipe. It is as good as I remember. I also absolutely can't have the leftovers due to my allergies.
I also made apple crisp for dessert. DH requested that last week.

thanks, Iggy. definitely wasn't a fun weekend around here. still not a huge appetite, and I'm trying to use up open stuff. the other night, I opened a big can of chicken and used some of it with a steamer pack of broccoli and cheese sauce over some roasted potatoes. tonight I'm going to repeat the ck/broc/chz over pasta instead of potatoes. that will kill the last of the canned chicken. tomorrow I might grab some Chinese takeout rice noodles - loaded with veggies and not very heavy.

last night I wasn't hungry til really late, so I just made a packet of cheap ramen. today I went for that takeout! lunch was a small cup of rice noodles with two sushi rolls. dinner was a bowl of rice noodles. there's at least two more portions left in the fridge. tomorrow, I'm going to make a batch of the peanut noodles I posted about at the top of this page. I want to send some home with my mom on Sunday. I also have a ~2.5lb pork tenderloin that's going in the crock pot for dinner tomorrow night. I'll send a bunch of that home with my dad on Sunday, and some au jus. they can make their own mashed potatoes and veggies. Sunday, my parents will insist on going to the local Greek pizza shop for lunch, and paying for it. I'll either split a chicken Caesar salad with my mom, or grab a calzone as the 3rd thing to pick at for a few days. idk. ETA: crap - I just remembered a package of thin sliced BSCB in the fridge. it's dated tomorrow. I might be frying some cutlets tomorrow, idk.

Left over walleye and baked potato. We vacationed with friends who love to cook. They mistakenly said take whatever you want. I also brought home a large egg bake. They smoked a full chicken for me when they had ribs. I was flabbergasted since I'd eat maybe 1/2 of the breast. I did bring it home.

Saturday, we ended up having appetizers due to a large restaurant lunch. Last night I nibbled on leftover appetizers and DH made a quesadilla with his last tortilla.
Tonight: Football food including pork rinds and salsa, mini wontons and leftover crescent roll wrapped little smokies. I may bake the remaining TGIF loaded potato skins to make room in the freezer. The box is driving me nuts, LOL.
Tues: Salmon, shrimp, breaded okra.
Wed: Slow cooker pork ribs, veggies from the freezer.
Thurs: Pork rind and parmesan crusted flounder on a cheddar cheese "tostada", riced cauliflower and avocado crema.
Fri: Takeout.
Sat: Catered comedy show.
Sun: The Caulipower pizza I didn't get to last week (I ended up baking the DiGiorno I forgot I'd purchased), with canned green beans.

this is how I ended up with chicken parm last night for dinner. I pulled some sauce from the freezer and boiled off the end of a box of curly pasta. I've got 4 or 5 more cutlets left over. tonight's going to be a big green salad with some chopped chicken cutlet for protein. everything I cooked this weekend is just so heavy, I'm looking forward to the salad.

I think tonight's going to be leftover pork tenderloin and mashed potatoes, with some fresh roasted broccoli. last night's huge salad reminded me that I miss green veggies lol...
tomorrow, chicken and eggplant parmigiana. I pulled a small packet of eggplant cutlets from the freezer, to go with the chicken cutlet from Sunday night. it will wipe out the rest of the sauce I pulled from the freezer as well.
