that sounds like tips to me. tonight, I'm finishing the other half of the chicken and broccoli calzone I bought for lunch. it's worth its weight/cost for not adding to the dishes I dirtied while cooking for the pups this afternoon.

last night, I made chicken piccata from a package of thin sliced chicken breast that I bought on sale. 6 paper-thin slices makes for three meals. last night I had it over linguine, tonight I used rigatoni (I didn't feel like emptying the dishwasher where the larger pot was ) and tomorrow or Wed lunch will likely be a chicken sandwich. today, I met up with an internet acquaintance that happens to live in my town. her family's summer cottage is a couple towns over from where my dad's side of the family is, and she came home yesterday from having spent a month up there. I met her this afternoon to pick up a double loaf of hearty white bread from a favorite bakery of mine up there. whatever else I do this week is going to incorporate some of that! I am going to freeze half when I'm functional tomorrow, to save for my dad.

Saturday night I was over cooking. And DH claimed to not be hungry until he started eating. We split a whole chicken parmesan sub from a local pizza place.
Sunday night we grilled pork chops, roasted the rest of the bag of green beans and DH got his beloved Stove Top. The last box is out of the pantry.
Monday night southwest chicken foil packets. I had a moment of panic my pinterest link to the recipe didn't work. A Google search found it.
Most of the vegetables from my big shop have been used up so that's a good thing.

~Sunday was preseason football food including a Traeger baked Cauliflower crust pizza loaded with sugar free BBQ sauce, two types of cheese and pepperoni. I also made artichoke dip in the slow cooker. ~Last night I made spaghetti sauce from Ragu and locally raised beef. I served it on top of Palmini pasta for me, and angel hair pasta for DH. I made toasted cheese bread from the remaining three pieces of bread. ~Tonight: Tostadas filled with leftover enchilada meat from the freezer. Leftover rice and shrimp stuffed portobellas will be on the side. I'll use almond flour tortillas for me and regular ones for DH. ~Wed: Fish, shrimp, and BBC Good Food's recipe for cauliflower cheese ~Thurs: Air fried chicken thighs and veggies. I'll make the usual breading out of parmesan cheese, pork rinds and seasoning zapped in the food processor. ~Fri: Something out ~Sat: Grilled pork chops, veggies ~Sun: Not sure yet
Added: Count me in as one who is also over doing the dishes. I always have been, LOL. Last night's supper dirtied 2 pots, 1 pan, and the stovetop griddle pan.

I had a craving for crunchy hard shell tacos tonight. I'm usually flour tortillas all the way. well, the hard shells I had in my pantry were past their date....but it's a sealed package! yeah, nope. I ate them, but I knew from the first bite of the first taco that it wasn't going to go well. stale corn shells actually go soft and chewy. 🤢
I've got a bunch of shredded seasoned chicken left over, so I think I'll just pick up another box of shells to try again in a couple of days.

basic tonight - the dishwasher was already running when I realized I needed to cook rice and IP some BSCB for the pups. the chicken is cooling and I still need to shred it. but anyway, I had a bowl of linguine marinara, and posted about it in some home cook groups, and I think I may have broken the internet tonight with all of the comments I've already gotten. do y'all have Rao's jarred sauce in your area? it's a fan favorite around here, amongst foodies that apparently don't make their own sauce. I still haven't restocked my freezer after having to replace the fridge last spring, and my sister's been raving about this lately (with all her food restrictions) so I picked up a jar. tonight, I opened it, b/c it "cost" me a small cup of dishwasher space in heating the sauce. all I know is, I didn't love it, and I certainly won't ever pay $9 for a jar of it again.

Didn't want to spend big bucks going out but I sure could have gone for that sushi restaurant again, yummy.
So I went to Haggens and bought a pound of shrimp, artificial crab salad and some fresh rolls. DD and I ate a bunch of it, not bad at all. Then I ate 2 slices of cinnamon bread I also bought. Before that a couple of radishes. Now some popcorn and a glass of ice water with it. We didn't dirty many dishes and I haven't started the d/w yet.

tonight is DH's night so he's doing baked trout and tomatoes caprese
Next week is
Monday-chicken tenders, tomato/avocado salad, some veggie Tuesday-turkey breast tenderloin, green beans Wednesday-ground beef patty, mixed veggies Thursday-DH's night-hot dogs (we have a meeting at 6:30) Friday-Udon noodle soup (eating large lunch out with friends) Saturday-Pork chops and couscous Sunday-DH's night- ??

sushi is always a fantastic idea, especially on the coast where you know it's fresh. I certainly won't judge you for going nuts on it while you're in WA. live it up, you've earned it! for me, well, today wasn't quite what I was expecting when I woke up. I'd planned to put together a veggie lasagna for the week, and use up that jar of Rao's sauce. well, an unexpected afternoon nap went long, and I pulled the gorgeous lasagna out of the oven at 830 tonight. I'd get sick if I ate that heavy, that late, after letting it sit like you should with a lasagna. so, I've got all 6 portions for meals this coming week. and I'm very much looking forward to them. tonight was just a can of soup, and I finished off a bag of croutons with it.

Friday night we got pizza.
Saturday we ate at the amusement park.
Sunday DH's sister invited us to dinner. She made shredded beef tacos. We contributed a pan of brownies and margaritas.
It's funny we went through the chest freezer to check what we had. There are quite a few roasts and we thought we'd use those this fall/winter. After that I was browsing Pinterest and found a recipe for Mexican shredded beef which is what we had for dinner.
At least one of those roasts will be given to my brother in law to make burnt ends.

Monday night I did a sheet pan meal with vegetables and chicken sausage.
Tuesday night I made Budget Bytes chicken enchiladas.
Wednesday night is at the baseball stadium.
Thursday will be leftovers.

the lasagna was a bit heartier than I thought, so I ended up cutting 8 portions instead of the 6 I usually do from that pan. I've eaten two portions so far over Mon/Tues. dinner last night was a steamer bag of broccoli and cheese sauce, poured over some roasted tiny potatoes.
tonight, I'm leaning toward chicken cutlets and roasted veggies. I have a package of thin sliced chicken breast in the fridge.
nah... I'm going to pile some veggies on a frozen pizza. maybe some chicken from the pup stash. tonight is too beautiful to be in the house at the stove. I'll figure out the cutlets tomorrow, I think.

I made those chicken cutlets tonight, and paired one with a plum tomato's worth of roasted Caprese salad. I'll be working on the leftover veggie lasagna and freezer diving til Sunday, when my parents come down to hang out for a bit with the neurotic pup with a stapled leg. I've already started the grocery list lol.... but I can say that the pups will be joining me in eating from what's here - there's nothing in the chest freezer rn for protein, so they will be eating canned chicken once the container of shredded IP BSCB is gone.

my parents actually came down this morning, b/c I miscalculated a few things on the pup meals. oops. but, we're fully stocked now, and hopefully won't need anything between now and Friday - LD's staples come out! tonight - something brainless. can of soup, quesadilla, whatever. tomorrow - turkey or black bean burger with veggie-ful pasta salad Monday - turkey cutlets with mashed potatoes and some sort of microwave steamer veggie I'll figure out more later.

Last night we had crab stuffed pork chops, lobster tail, and parmesan and pork rind breaded eggplant. I really wasn't that hungry, and it was getting late, so I ate the lobster, a few eggplant slices, and just one bite of the pork chop.
Tonight: Yesterday, I was incorrect in thinking we had chicken thighs in the freezer. So, I'll make quesadillas out of canned chicken and serve it with leftover baked beans and corn.
Tues: Slow cooker roast beef burritos, rice and veggies.
Wed: Fish, shrimp, and the baked cheesy cauliflower I still haven't gotten to.
Thurs: Caulipower pizza, veggies.
Fri: Takeout
Sat: Shrimp stuffed portobellos.
Sun and Mon: BBQ something.

yum. I've also mixed it up a little from what I posted. I finally just made the pasta salad over lunch. tons of veggies and a 12oz box of rotini.
Sunday night was a steamer broc/cheese bag over some roasted potatoes Monday night was a big green salad, with protein - finished off a bag of frozen spicy chicken nuggets.
tonight, I don't know. I still need to cook rice and some ground beef/kale for the pups. I'd rather not make more dirty dishes that I'll already have. so maybe another green salad, idk.

It seems like a pretty good dinner trade off to me iggy.
DH unhooked the old stove and put it in the dumpster over the weekend. The new one was delivered Monday but the installer has yet to show up. We should have bought the appliances from the local chain and paid the extra over the Home Depot price.
Monday night we ate at the baseball game.
Tuesday is wings I got to go on Sunday after having lunch with my dad.
Wednesday I'm going to hope for better grilling weather.

The last few days was tomato soup and crackers.
Tonight was the last of the beef and bean burritos form the freezer.
I will be taking some things down to the shore house with me tomorrow so they can get used up.

Friday night, some friends took me out to dinner. I had a Caesar salad with blackened salmon. yesterday was a day of grazing while we were out and about for birthday fun...dinner was a can of soup. tonight will be the last of the turkey piccata, unless I feel like cooking. if I do, I'll lift a BSCB from one of the family packs I bought to IP/shred for the pups.
this weekend is all about resets, and low maintenance. happy holiday weekend!

Sun: Beef summer sausage and cheese slices with hatch chili tortillas as I arrived home late Mon: DH did his 3-2-1 ribs and we served them with crab legs, bacon wrapped asparagus, and a small caprese salad Tues: Portobellos stuffed with leftover slow cooker beef roast, avocado crema (maybe-the avocado looks sad), rice, corncobs Wed: Fish and shrimp on top of sauteed yellow squash and zoodles Thurs: The remaining Caulipower pizza crust I've been meaning to get to topped with BBQ sauce, pepperoni and cheese, with baked parmesan tomatoes from the Zen and Spice website. We all had things we wanted tonight. I bought DD sushi today, enough for 3 meals. She had it for lunch and dinner today and enough is left for her lunch tomorrow. I need to make sure its sealed.
Hubs had some frozen tamales heated and I added seasoned black beans mixed with chilis, he said it was good.
And I fired 5 chicken legs I thawed, drained them and topped them with cream of mushroom soup. I ate 3, about 3 times a year I just get a crazing for that.
So we are using up some freezer stuff and pantry items as we go. I did get a filet of haddock for me for tomorrow night. DD and hubs will likely have cheeseburgers with fries or fried potatoes. I need to add some of our stock of frozen corn to it.
Went to the grocer today only spent $39. Got celery, cabbage, some apples, potatoes, almost a pound of haddock, carrots, and a package of lean ground beef. I want fresh veggies, may take some of that cabbage and fry it instead of potatoes. I can bake a potato for DD. And DD LOVES deviled eggs. I really need to buy eggs anyway so may boil what I have.
Easy meals so far.

The avocado was surprisingly actually decent when I cut into it last night, so instead of rice, I made side salads with it, a sliced tomato fresh from the garden, and cheddar cheese. I topped the stuffed portobellos with a remaining container of ricotta. I'll make the rice tonight. It's a precooked, shelf stable variety. Bought via Amazon, it's not cheap, but its convenient and avoids food processor cleanup.
