I got my BBQ assembled. I put the coals in but they wouldn't stay lit. Had to try over and over again. SO MUCH SMOKE! It even set my smoke detector off. The neighbours aren't too pleased, I'm sure. It's finally lit now, but it will probably be dark by the time the coals are ready.

chicken piccata here tonight, super easy. there should be enough chicken for another meal, the package is already thin-sliced and under 1lb. I'll probably just boil off some pasta for this/leftovers.

how did your BBQ turn out? chicken piccata here tonight, super easy. there should be enough chicken for another meal, the package is already thin-sliced and under 1lb. I'll probably just boil off some pasta for this/leftovers. Well, it took 2 hours for the coals to be just right. When the coals were perfect, I cooked ALL my meat. Everything was delicious.

Monday night I made chicken sausage spaghetti bolognese using a recipe from Hello Fresh as a guide of sorts.
Ground chicken sausage might be a fancy grocery store thing but it was not available at Safeway. I grabbed a pound of ground chicken and a tube of Italian style ground sausage and used half of each. The other half went in the freezer for another meal.
DH approved. I'm trying to incorporate more veggies into pasta dishes.

I love loading up pasta dishes with veggies. unless I'm using a red sauce, I usually toss a bunch of roasted veggies into the pot. for me tonight, the dishwasher is almost full and I don't really feel like cooking tonight. I'm going to reheat some chicken piccata and call it good. I can run the dishwasher with whatever's in it and go to bed early.

I did a grocery run today, and picked up a package of frozen Butterball turkey burgers and some bulky rolls. between those and the black bean burgers that are always in the freezer, I'll be good for the next week or so. I can cook on the Blackstone and not heat up the house any more. it's been stupidly humid here, not so much hot...at least by my standards. but coastal humidity is a different level of oppressive. thanks, readily available water supply to feed the humidity. tonight, I'm going to swipe some shredded chicken breast from the pup stash and make myself a quesadilla.

I've returned from vacation where the food included halibut, salmon, shrimp, crab, calamari, flounder, fresh veggies, and the occasional burrito and some asada nachos on the road, LOL.
This week: Last night: The deep-sea fishing white fish and seabass DH caught on an excursion. I served it with homemade tartar sauce, a sliced Roma tomato and green beans. Tonight: Tacos featuring ground locally raised pork, rice, bacon wrapped asparagus. I use almond flour tortillas for mine. Tues: Romaine salads, bacon pecan stuffed portobellos Wed: Slow cooker corned beef, potatoes, fried okra Thurs: A pan of Traeger cooked enchiladas, rice, beans Fri: Takeout from? Sat: Low carb slow cooker pizza casserole, leftover sides Sun: Traeger beef teriyaki sticks, veggies

Thank you for asking, daisylu! I've never made it before, but it sounds simple to make and tasty. Plus, it pairs well with me not wanting to run the oven in this heat. I'm going to make it with homemade pizza sauce from the freezer and omit the mushrooms. Low Carb Pizza Casserole

The chicken spaghetti just got zucchini added. That was the last remaining vegetable in the fridge before we left for a long weekend. I roasted it in the oven and added it to the sauce later.
Monday night is Budget Bytes unstuffed bell peppers.
Working on the rest of the week now that I'll be home for more than 3-4 days at a stretch.

Yesterday I got all motivated to cook some thin steaks, spicy green beans to add coleslaw. We had the left overs tonight with macaroni and cheese added. Dessert for me was a slice of Guiness chocolate cake. Mixed nuts dessert for JD.

I've been picking at crap things the last few days, but tonight I'm actually making a salad. I'm topping it with chopped frozen spicy chicken nuggets, but it's a salad. lol... tomorrow, I'm wavering between a pizza and calzone. I picked up a ball of dough tonight, and I have a block of mozzarella to use up this week before expiry. that makes me lean toward pizza. no idea on toppings yet, my fridge is pretty bare for me.

Tuesday night I had a big headache after being in the office. I swear the building is toxic. Anyway I had DH pick up pizza.
Wednesday night I made salads with baked bbq chicken breasts. I chopped 2 romaine hearts for the lettuce. Other toppings were corn, black beans, shredded cheddar and frizzled onions. I used plain ranch, DH mixed some Frank's red hot sauce with his.

Tuesday's bacon pecan stuffed mushrooms were amazing, and I highly recommend. I had unsalted pecans leftover from a holiday treat kit, and the bacon provided the salt they lacked. The recipe can be found at the Taste of Home website. I used portobello mushrooms, a blend of pork rinds and parmesan cheese zapped in the food processor for the breading, and low sodium chicken broth in lieu of sherry. I cooked them in the air fryer at 400 for 10 minutes.

Grilled cheeseburgers and corn on the cob for Thursday night's dinner. I made a small batch of Rice Krispy treats for dessert. I've been craving them.
We made 4 patties out of the supposedly 1 pound package. We split a cow with my dad and it comes all packaged. The hamburger is supposedly in 1 pound packages but it's more than that. I never remember to weigh it once it's thawed. The remaining 2 will be Friday's lunch.

yesterday's travels brought me past the fish market near my old house. the pups had some salmon with their breakfast this morning, my half of the filet was simmered in a scampi sauce that all got poured over linguine. it was phenomenal. tonight, I'm reheating leftover pizza. it's all about balance, yanno?

tonight's going to be arroz con pollo, using a package of boneless chicken thighs I picked up yesterday. I'll pick from the leftovers this week. other than that, I'm planning nothing else except to keep either a whole BSCB out of the IP or separate the same amount of shredded chicken after I cook for the pups. I've got salad fixins, frozen burgers of varied flavors. and quesadillas are always a solid option. happy Sunday night, kids

Friday night we ate at the baseball game.
Saturday night we worked with DH's sister and made a family dinner. We ate at his parent's house. We had smoked ribs, grilled chicken thighs, salad, corn on the cob, green beans, cornbread, roasted baby potatoes, cheesecake stuffed strawberries and new cookies I tried with M&Ms, Oreos and sprinkles. We fed 15 for $100. A restaurant would have been much more expensive. DH's mom was very happy to just host and not cook.
Sunday night we had grilled steaks and leftover corn and green beans.

Monday night oven baked chicken teriyaki and vegetables served over rice. I used green beans, carrots, red bell pepper and broccoli.
I got busy talking to my dad while prepping and didn't get the rice in the rice cooker in time. I had to cook it on the stove top for the first time ever. I have only ever done microwave pouches or used my rice cooker. It did turn out perfectly.

I haven't done a whole lot of cooking this week, my attitude and motivation are both in the tank. meals this week have consisted of the leftover arroz con pollo, frozen chicken patty sandwiches* and veggie burgers, and a random tuna melt on sourdough when I picked up some deli tuna salad. I love a solid tuna melt - sourdough, mild cheddar, and thick tomato slices. *one of a handful of lingering nods to childhood. the occasional box of Kraft dinner is another. tonight, I'm using the last BSCB I saved from a family pack I cooked for the pups the other night. it will be chicken Lombardy, over some mashed potatoes. this will work out to 3 pieces of chicken once I cut it down. tomorrow morning during calls I don't speak much in, I'll prep veggies for a zucchini pie. that can be brunch tomorrow, lunch/sides pickings for the leftovers.

Tuesday I made the beef cabbage stir fry from Budget Bytes. Veggies were carrots, green beans, broccoli and bell pepper. I'm trying to use up all the veggies I bought last week. I was rather ambitious in my purchases.
Wednesday night chicken tenders at the baseball game. Hot dog and pretzel for DH.
Thursday night instant pot lasagna. The TMJ is giving me fits again and it's only 75 today.
I finally got all the assorted big containers and pans from the weekend cleaned. The problem with a small kitchen is then I have to work through the hand wash stuff in batches which takes forever.
I'm sick of dishes and cleaning the stupid kitchen. It's never done.

Left over roast. Potato salad on top of lettuce. A peanut butter chocolate dessert that I made. It said 15 minutes. It took me an hour. I wadded up the recipe throwing it away. It is good but not worth the effort.

Friday night shrimp, steak and veggie kabobs over yellow rice. I originally planned just shrimp but DH wanted to add steak. I had a package of what I labeled as filet tips. They were the stray pieces from the big chunk of tenderloin we got a couple months ago. We cut steaks out of it but there were some leftover pieces.
