Monday night spaghetti and meatballs, garlic bread and side salad. The meatballs were pulled from the freezer this morning. DH makes a large batch and we freeze for later.
DH is in charge of dinner. I'm attending a conference virtually and it's based on the west coast so my work day is messed up today.
No clue for tomorrow. DH will be in the office and I'll be on day 2 of this conference.

tonight I sauteed the BSCB leftover from the package I opened last Tuesday night. I cooked it all unseasoned, as it's mostly going to the pups. there's probably 2lbs still in the container.
for myself? I sauteed some sliced mushrooms in butter and then reheated some ravioli in marsala cream sauce in the same pan, over super low heat. it was tasty.

After another crazy work week, last Thursday I decided to focus on slow cooker meals again. This getting home late and eating at 8 p.m. is not healthy and dishes pile up in the sink. This week:
Tonight: Party leftovers Tues: Cod on a bed of baby spinach, shrimp Wed: Slow cooker Mongolian beef, veggies Thurs: Leftovers Fri: Takeout Sat: Slow cooker pork roast, veggies Sun: Grilled teriyaki sticks? Veggies

Correction to yesterday's post. It is flounder, not cod, which I will be working with tonight. Because of my disappointment in the last batch of cod from Walmart, I invested in a large bag each of Sam's Club salmon and flounder. Fingers crossed.

last night I was pretty fried, so easy was in order. I diced a couple red potatoes and roasted them, and poured a package of broccoli and cheese sauce over them. dicing the potatoes definitely shortened the cook time, and since I rarely finish a whole potato anyway, this may be the way I go from now on lol...
tonight, I've got a package of turkey cutlets to cook. I may also finally get that zucchini pie set up and baked.
yesterday went sideways as I had a can of soup as a late lunch, and turned out to not be all that hungry last night. dinner ended up being a quick frozen veggie burger, cooked stovetop.
tonight, I'm going to make the zucchini pie and fry up some turkey cutlets. maybe a small batch of mashed potatoes to go with the cutlets, too.

I so need to stop having a snack around 2pm, b/c I'm mostly set for the day. the zucchini pie is in the oven now, and the turkey is getting bumped again. oh well. since I have the huge fry pan out, I'm going to make a chicken quesadilla with some of the shredded rotisserie chicken I processed tonight for the pups. for tomorrow - I've got a pair of small "top sirloin" beef cuts in the fridge. I wasn't sure what my family was going to want to cook last week, and these were on sale. my pups will happily devour them, but I don't have a clue how to cook them without just dropping them on a hot pan and overcooking til it's all leather (which is what my mom did when I was a kid, and why I stopped eating most meats) halp?

Veggies I forgot to put the beef in the slow cooker yesterday, so I ended up making redneck nachos using a leftover cut up Nathan dog as the protein. Yum. The beef is in the slow cooker today, I'll make air fryer pork chops tomorrow, and Saturday we'll go out for brunch instead of DH picking up takeout tomorrow night.

life brought me Cape side this afternoon, and I picked up a salmon fillet at my former neighborhood fish market. it's 2/3 lb, and I'm going to split it with the pups. I'll cook their half unseasoned for the am, before I lightly dredge my half in flour in order to make salmon piccata. I'll pour that over some spaghetti for myself.
that buys me another day to figure out how to cook those steaks. I'm a little afraid, TBH.

We ate out for my GrD's birthday. Their original plan was out of town. Rain kept it at home so we got to go. Most of us had enough food left over to take home.

If on a grill, I sear them over direct heat and then move to indirect heat. Actually same on a stove - sear on a burner and then low and slow in the oven until cooked to my liking. DH and I prefer no pink and I don't much care for people who say that is ruined, it's always come out tender and juicy this way. I have never understood why people care so much about how other people like their food cooked. 🤷♀️

thanks, I punted another day by picking up some BSCB this morning. it's in the Instant Pot right now. I checked the sell by date, it's a vac seal package, so it's good til 7/1. I may ask my friend S to cook it for me when he gets here next week. lol... he's a sports photographer that intends to tour the CCBL and whatever indie league the Brockton Rox* are in, and my house will be his home base. *it's basically like Quebec Major Juniors for hockey, except it's baseball. last year's roster included the sons of former MLB players David Ortiz, Pedro Martinez, Manny Ramirez, Keith Foulke (all Boston Red Sox), and Gary Sheffield (NYY). back to food, though. last night's piccata was fantastic, and I'm going to need to do that again soon. tonight, I'm going to wipe out leftover turkey cutlets and mashed potatoes. my stovetop is still in pieces from a deep clean this morning. I'll figure out next week, tomorrow.

Possibly turkey sandwiches in pita bread. Did not find any meat I wanted to buy at the Spanish grocery store so its turkey sandwiches or something with my canned tuna or chicken. Need to buy eggs and panko bread crumbs for my canned salmon to bake some salmon cakes.

chicken/broccoli calzone tonight, takeout. I have the other half for tomorrow, and an opened jar of pizza sauce to use up this coming week (I don't like the Greek style sauce from this shop, so I don't use the cup that comes with the calzone)
I've got a dough ball in the freezer, so there will be a pizza or another calzone happening this week, at the very least.

Tonight: Slow cooker orange chicken, air fryer cheese stuffed portobellos, cauliflower and regular rice Tues: Shrimp tacos in/on an almond wrap, leftover rice, veggies Wed: Slow cooker honey balsamic pulled pork, veggies Thurs: Stir fried beef and veggies on top of rice Fri: Takeout Sat-Tues: IDK yet Happy 4th of July!

The struggle to prepare meals during the week while being gone every weekend is real.
Last week I did risotto and a sheet pan with chicken sausage and vegetables. I was home for a whole 72 hours.
Monday night I made taco salads. I didn't notice the seal had been broken on the taco sauce when I opened it. I had to cut the plastic wrap around the lid off. I was talking to my dad and didn't notice when I opened it. I started paying attention when I had black stuff on my hands. So the whole bottle went down the drain.
Tuesday night is Caesar salads. There's a salmon filet thawing for DH and chicken for me.
Wednesday night is a baseball game.
I want more vegetables but it's been hard to balance getting to the store and buying what we'll get through before leaving again.

I had a site visit today, and I peopled a ton. so tonight is comfort food - chicken broccoli alfredo bow ties. jarred alfredo sauce and everything. for the rest of the week, I'll pick from the leftovers and use the rest of the sauteed chicken in salads/wraps/whatever. I'm currently marinating ~1lb of boneless chicken thighs and ~1.5lbs sliced BSCB in a packet marinade. the broccoli crown I just bought is also ~1lb, going to chop and roast that, and toss it with the chopped thighs, a 12oz box of bow ties and a jar of Classico alfredo. there's two chicken thighs that I didn't marinate, in case I get a craving for something else.

I've been snacking small bites over today, and need something about the size of a can of soup or whatever I'm gonna eat of a box of Kraft dinner. it's almost dark here, and I've already gotten a heads up about booms over the lake so we will be downstairs for the overnight. I'm trying to balance fresh air time for my golden girl with the booms that have already started (FFS, really?? it's not even dusk yet!) for my little guy. I hate this week, with a flaming passion.

short answer - homemade pizza
we've been in the basement since 11 or so, since it was raining. it isn't now, but is supposed to again later (hopefully from about 7pm-3am, please and thank you!). I pulled a ball of pizza dough from the freezer yesterday, and it's pretty much thawed. I'm going to pull it from the plastic bag and leave it in a bowl on the counter later to come up to room temp. toppings will be fridge goblins, before I put the trash bins out in the morning. depending how thin I stretch the crust, I could have leftovers for 1 meal, or 3. so we shall see.

The pork roast was delicious and worth the wait. We had it with veggies the first night, I made chili verde Monday, and we had it in omelets and hash for two brunches.

I treated myself to a sushi lunch today, and picked up an order of rice noodles w/veggies to go. I'm still stuffed, but if I get hungry later I will have some of that. that order is intended to be lunch the rest of the week. $13 for the noodles. we won't talk about the updated pricing on the sushi though....woof.

Country fried steak. Mashed potatoes with gravy. Green beans with bacon and onions. On Sundays, I try to do a more traditional supper. And since we are in the Deep South, this definitely meets the criteria.
Not sure on costs. Pulled everything from the existing fridge/pantry/freezer because I haven't done the grocery shopping for our meal plan yet. I do know the cubed steaks come from DH's work and are less than $5 / lb with his discount. And with the 4 I had, they are probably on the order of 1 - 1.5 lbs. Frozen green beans (which is what I used) are on the order of $ 2 - 3 per bag and I used one bag. I can't discuss the potatoes. They are so ridiculously overpriced that the few I used were more expensive than they should have been!

easy meal tonight, sheet pan dinner. fully dressed roasted Caprese salad (1 sliced plum tomato), with a little garlic bread, dipping sauce, and a few reheated mozzarella sticks from the grocery hot bar where I picked up chicken nuggets for the pups' protein tonight.
I haven't mapped out the week for sure yet, but there will be a chicken stir fry over either rice or rice noodles at some point. I stopped at a Whole Foods on my way home this morning, and picked up bean sprouts and baby bok choy among other things. it's been a minute since I've done that.

last night was lazy - I bulked up a Bertolli meal with more frozen chicken and peas, and finished with extra cream and grated parmesan cheese. I picked out most of the pasta with last night's dinner, and will boil fresh spaghetti when I reheat the leftovers at some point.
tonight is chicken stir fry. I discovered the bean sprouts I bought Sunday are already looking questionable, so I want to use them up. current thought is to pour the stir fry over rice noodles.

DH is at work tonight, so a box of Kraft mac n cheese for Kiddo. I'll eat whatever leftovers and bits and pieces I can find in the fridge. I need DH to bring 2 things home from work to finish out the meal plan for the week. So I'm not sure what days we are having what. I do know Friday will be chicken nachos. My sibling flies back in that afternoon so it's easy and makes enough for all of us.
