Pesto also makes a good condiment for sandwiches, especially with mayo. If you like garlic, you might want to try toum. It is a Lebanese garlic sauce, where the ingredients are garlic, lemon juice, salt and canola oil. It is good on anything. I need to make more this week. I used to buy it at the condiment bar at my grocery store, but they no longer make it. I cam make a batch and it lasts about a month. Soooo good. feelgoodfoodie.net/recipe/lebanese-garlic-sauce/I adore toum! I don't have a food processor, so I buy it at the Middle Eastern market up the street.

This looks easy even for me and I actually have all the ingredients for a change. It’s an emulsion, so add the oil slowly. It’s kind of a pain to stand there so long, but if the emulsion breaks, you have to start over again.

Have any of you purchased a spiralizer? Is it worth it? Is using a potato peeler enough of a similarity that I don't need to buy one of these? spiralizer attachments

I have one my mom got me for Christmas. I need to use it more.
It makes way faster work of vegetables than I can manually with a peeler but it is a kitchen unitasker that I have to have a place for.
I should use it next time I make applesauce now that I think about it. That'd save a ton of chopping.

I need to find a good alternative to mayo, I used to love using that stuff on all my sandwiches and/or wraps. Twice I have used it and made a mental note I need to switched it up; I have used hummus at times as alternative/filler. Just made a cucumber and avocado sandwich and this morning I made a spring mix and spinach wrap with hummus (whole wheat on both bread and wrap). DH uses something called "veganaise" which he finds in the refrigerated section of the organic produce at Woodman's. I believe it's a plant based mayo. He gets the non soy one but I'm fairly sure they have 2-4 different varieties with different stuff in them. I know one has soy because I bought the wrong one a few months ago.

When they soften, have at them with a potato masher.

I am dragging my feet about making toum this morning as I have to peel all this damn garlic. However, I need to get this chore out of the way as this is what's going to be on the table Friday. Last time, I got a bag of peeled garlic from Costco but I have not been able to find it my last few visits. That made life so much easier.

Makes peeling garlic much easier. Nope. Broke the cloves up, put them in an old, clean pickle jar and shook the crap out of it. Much faster, the skins fall off and you just need to pick the cloves out of the skins.

Thank you and all is well so far. Been 100% plant base for the past 3-5 days; I did not exactly keep track of the day. Been crazy at work with us expecting a senior team visit yesterday and putting in 14-16 hour days. Good news: I was able to stick to plant based diet... bad news: no workout or cardio; because when I got home all I wanted to do was sleep. I got home Monday morning at 6 AM after 17 hours at work and spent all Monday sleeping. Back on the workout/cardio wagon today. Have not done any portion control or calorie counting. Just been eating... I know I have been eating more carbs than usual (lots of wraps/sandwiches since those are easy to fix/put together) but that is usually the case for me when I am busy.

I like the beyond burger and sausage. Yes you don’t think it is meat (let’s not fool ourselves) but it is pretty darn good and tasty... a good substitute if you are seating with friends and family and you don’t want to feel left out. Definitely better than some beans burgers I have tried...
Also found this popcorn vegan chicken I like in the frozen section of my job. I had it at least 3 times so far, pretty good, again does not replace chicken but pretty good imitation, protein Content for when I feel my meals were too carb heavy (rice and beans, spaghetti with pesto sauce, potatoes and corn, etc).
Last a bit of TMI since switching, not just if because my fiber intake his higher because I have always been regular and never had bowel movement issues (except for when I had my 4 wisdom teeth Removed and was on pain medication so was constipated) but with the new diet since : a) increase in frequency b) more solid deliveries and c) don’t need to wipe as much to have a clean butt aka using less toilet paper.

Hey everyone, Just a quick update... been lax on the working out the past month due to being being at work and short staffed. Coming home from a 14-18 he shift, working out is usually not what I want to do and giving the option of waking up early or get in some more sleep ; I usually chose sleep.
But been maintaining the diet I say ~75% of the time. Funny usually diet is the hard part for me. Down ~20 lbs and my A1C is down to 6.4 from 6.8, so currently at pre-diabetic range.
Downside: dr decided since both my mom and dad have high blood pressure and mine has been steadily going up the past year to put me on a low dose to start. Boo! But guess better safe than sorry.

My DS1 driv intermittent fasting and it works great for him. So i'd recommend it.
Im going into a modified vegan diet per my dr. For anti inflammatory reasons. I can't have dairy beyond greek yogurt. But i will eat grass fed only,field raised beef. In limited amounts. Let's see how i do! I just bought one of the vegan cookbooks drama recommended.

Interesting thing that happened to me is that I was on several meds and my BP didn’t budge. After about a year of trying different things (and winding up with a medicine cabinet full of useless drugs), I finally asked my dad what was controlling his BP. Next BP failure drug appointment, I asked to go on what worked for my dad. WE had to adjust the dose some, but that worked almost immediately. I guess we should have started there rather than trying to remake the wheel.
