Monday night we got pizza on the way home from a weekend out of town. $19 for an extra large.
Tuesday night I made chicken teriyaki with a bunch of vegetables. I served it over rice. Carrots, green pepper, zucchini and broccoli for the vegetables. I'll say $10. I'm happy with all the vegetables. Leftovers for my lunch on Wednesday.
Wednesday I'm doing mustard glazed chicken, salad, and sweet potatoes. Estimated costs $6.
Thursday night leftover pizza and salad. Maybe $1.50?
Friday night salmon for DH with a sweet potato and salad. Leftover chicken or something for me. I can't remember how much we paid for the bag of salmon.
Saturday night DH family party. No idea what we are contributing yet.

I'm thinking about more comfort food tonight, last night just hit the spot. I've got an open container of cream to use up, and can put some freezer stash to good use in doing up some tortellini with peas and pancetta. I won't wipe out the cream, but I can put a good dent in it.

I just realized I haven't had pizza in about a year. Maybe I'll pick up a mushroom, olive and green pepper pizza later today.

I'm always looking for new and easy recipes to cook while my sister is here for 2 weeks in the summer. Green beans and mashed potatoes complete the meal. I only cooked 2. I think I will try the leftovers with egg noodles tomorrow to see which I like best.

I had homemade stew tonight. I made enough for 2 more nights along with a small salad each night. I also have some premade Texas toast in the freezer.
The stew meat was $3.50 and the other things had been in the pantry or freezer for a month or so. So $1.16 per meal for the meat.

For me mini meatloaves and green beans. We'll say $1.50.
I made the meatloaf for lunch this week for me. I've been cooking more actual meals for my lunch. I'm burnt out on sandwiches and there's not always enough dinner leftovers. I'm also trying to get more vegetables in.

breaking into the freezer tonight. a) it is Pi day, b) I'm not than hungry and I'm not all that picky tonight, and c) I dont really know why I bought a large frozen turkey pot pie in the first place. 🤦♀️ I have no idea what I paid for it, but it couldn't have been more than $3 on sale. I'll save the fresh produce for when I actually.want to enjoy it.

if today was any indication, I'll be 900lbs by the end of all of this. I have been grazing all day, with the highlight being a big green salad around 2. the protein was the end of the bag of popcorn chicken I grabbed for a pup treat when I stopped at the store after the dog park. 🤦♀️
dinner tonight was junk nostalgia. 😏 one of the frozen things I picked up this weekend was a bag of spicy chicken patties for $4. I baked one off and put it on a bulkie roll with shredded iceberg lettuce and a fat tomato slice. done.

I bought a semi large beef roast awhile back. The butcher cut it in half for me and I have roasted the first half. Took the remaining half out to thaw and plan on cooking it in the slow cooker today. It's big enough for 3 or 4 meals so looking forward to some hot roast beef sandwiches.

I decided I'd had enough red sauce and pesto, except nothing else was thawed. I roasted some broccolini and threw it into a skillet of Knorr rice, with some canned chicken and other seasonings. whatever is left over is getting pitched. I'm basically going to pick out the meat and veggies, and whatever rice comes along in the spoon is what I eat.

I was going to make tuna casserole since I was reminded of it on another thread. I don't have tuna and I'm not going to the grocery store today.

I'm really going to have to start watching my diet now that the gym is closed. I was hoping to lose 10 pounds. Not looking likely now. On the plus side, my Nike exercise app sent me a message saying that the premium workouts are free until further notice. Maybe I can find some stuff to do at home.

I usually have more, but since the hoarders are buying everything up, I can't get more.

I had a really.good conversation wi ty h my coworker yesterday. basically. the two of us are handling lot release for a drug that should really be 3 or 4 people focused on release, and we are doing this on top of whatever else. he and I are basically on the same page that during this whole quarantine and further, we are both going to basically put in time wherever and take breaks as needed during the week. as long as we are calling in when we need to, the work day is fluid. that is huge for my sanity, with the goobers. I would expect you to have the same issue with the twins. I'm hoping that I can get into a routine of taking mine on Canal walks like i used to when I was on 2nd shift. I miss the 2mi just to get to work, and I'm super stiff from my home "office" being my dining room with straight backed hardwood chairs. I've gotten some recommendations for yoga that I can broadcast on my living room TV. I'll pm you, if you'd like. /endhijack. this is our new normal, let's figure out how to make it suck less.

I'm actually making breakfast stuffed peppers tomorrow with a poblano I found in the fridge tonight. carrots/celery are a good start to a pot pie base. I'd add garlic, but that's a given for me 🙂

I don't care for yoga. I've tried it and it's not my thing. I tried to get weights since I like lifting, but we're sold out. Since the gyms are closed people are buying all of our fitness equipment. We have no weights, kettlebells, medicine balls, or even machines like treadmills and ellipticals. It's ridiculous.

I thawed shrimp, made potato salad, hubs brought home pizza, I ate a slice. Don't care for it anymore, he was so hungry, he wolfed it down. DD ate some. I will have something else with the shrimp tomorrow night, maybe baked fries.
I see one of our local restaurants in the town 12 miles away is establishing a route clear over and through here and around back to town making deliveries!! Wow! I can't believe it. The tiny town here is doing drive up pick up. This is out in the middle of nowhere, never thought I would see this. I think we can get med deliveries too from CVS, but they have pills ready scattered allover, so not really good. But may have to use that too.
I think a lot of folks out in here will use the meal service though, especially the old ones like us.
I am not crazy about restaurants right now though.

Left over Tex-Italian casserole. It makes a lot. I'm intrigued. do tell? It's easy. I'll type up the recipe over on the recipe thread.8 servings, bake 30 minutes
8 ounces mostoccioli pasta (any pasta works) 1 package (10 oz) frozen chopped spinach thawed 2 package (8 ounces) cream cheese softened 1/2 cup milk 1 teaspoon dried oregano 1 pound ground beef 2 cloves garlic minced 2 cups pace picante sauce 1 can (8 ounces) tomato sauce 1 can (16 ounces) tomato pasta 2 teaspoons chili powder 1 1/2 teaspoons ground cumin 1 cup (4 ounces) shredded mozzarella or cheddar cheese
Optional toppings, ripe olive slices, green onion slices.
Heat oven to 350 degrees F. Cook pasta according to package directions, drain and rinse with cold water. Squeeze dry and shop spinach. Combine spinach, cream cheese, milk and oregano, mix well. In a large saucepan or dutch oven brown meat with garlic and drain. Add pace picante sauce, tomato sauce, tomato pasta and seasonings mix well. Bring to a boil, reduce heat, simmer 5 minutes. Add pasta, mix well. Spoon half the pasta mix into a lightly greased 13 x 9 inch baking dish. top evenly with spinach mix, top with remaining pasta mix. Cover loosely with foil, bake 30 minutes. Uncover and sprinkle with shredded cheese; continue baking 2 minutes. Let stand 10 minutes.
NOTES: I have made this without putting it in the baking dish and eliminating the cream cheese mix.
I have used spaghetti sauce for the tomato sauce, tomato paste and part of picante sauce.

Lunch was a small garden salad and some large boil & eat shrimp.
Dinner will be marinara sauce over angel hair pasta and garlic bread. Easy but filling.
We live outside the delivery area for most, if not all, of the local restaurants.
