I grilled a hot dog, added mustard and pickle relish. WMT carries a brand of potato salad, I had some of that along with 1/2C of 2% milk.

I'm trying out a new recipe, but with turkey - chicken marsalaprior to moving here and the mooch moving in, I might have had chicken marsala 5 times in my life....it just wasn't on my radar. it happens to be the dish the mooch should use to impress a lady, and I've acquired a taste for it. until tonight, I've had no reason to try to make it myself. turkey was $5 for the package. I'm using 2/3 of it tonight. cream was $2 at the village market, and everything else was already here...

Supper was black grapes from Africa, Canadian sharp cheddar, and a fresh croissant. Oh, and a glass of wine. Not feeling great, so I didn't feel like cooking.

I actually have dinner planned for the week and the shopping done.
Sunday night burgers, salad and fries. Estimated costs $6.50.
Monday chicken enchiladas. I'm going to say $11.
Tuesday night instant pot beef and broccoli served over rice. Estimated costs $5. I'm using the roast from the cow my family got. I allocated my share of that to the hamburger.
Wednesday night instant pot spaghetti and salad. Maybe garlic bread. Probably $8 for this.
Thursday night the second half of the pan of enchiladas.

I'm jealous of being so organized, wvugirl.
I wasn't very hungry tonight, so dinner was leftovers. I nuked the last piece of turkey marsala and sauce, and poured it over a scoop of white rice I swiped from the pot I cooked for the pups. I won't make that recipe again, was not a fan.

If I have tortellini in the freezer, it will be tortellini al fredo with shrimp and peas. If not, I haven't decided what to make yet. Probably a shrimp stir fry over rice.

I had a childs portion of spaghetti last night with 3 tiny meat balls. I'm down to 12 mini-meatballs in the freezer and 1 more french croissant from QVC (it will be gone tomorrow).

I am back at home since being elsewhere for a month. Everything was packed up due to the contractor starting the kitchen on Friday.
Maybe a bag of popcorn or a english muffin? I just have no idea at the moment.

Something called chicken lanai and baked potato with sour cream. Chicken is breast meat stuffed with swiss cheese and green chili peppers. This is a meal I used to fix at home then took to the boat for a Friday night dinner. Nuked potatoes was a perfect side dish.

Looks like my oven isn't cooking at temp. I made spinach lasagna a lot of work. It wasn't done, raised the temp and cooked longer, still wasn't right. We started to eat it and it was like the ricotta was curdled. I looked at the box and use by date was May 2020. I had just bought it. It just wasn't good, DD ate some, hubs ate a bit and I ate one noodle. What a waste of money and my time. Also looks like I need to get an appliance guy out to look at it. I didn't think the top burners have been cooking hot enough for some time.
I'm pitching it, I'm really upset, left all of us hungry. Hubs is eating crackers and cheese

I pulled all the veggies out to prep for that veggie lasagna I was going to make on Sunday, and realized I just didn't feel like cooking tonight. so right now, I am waiting on a potato that's baking off. with 15min left of cook time on that, I'll start the package of Green Giant broccoli and cheese sauce that's on the stovetop. I have a mini can of chicken that I haven't decided if I am going to open as well.
I'll make the lasagna tomorrow while I'm WFH. I'm just mentally exhausted tonight.

I finally made the lasagna this afternoon, got to eat around 2. I'm still not that hungry, but the piece I had earlier was all I have eaten today otherwise. rn I am working on another small piece of lasagna that I just nuked. I'll adult tomorrow lol...

I went to the Middle Eastern market and bought pomegranate molasses with hot pepper. I had it on a chicken breast. Fantastic!

I need to use up a few things in the fridge tonight - half a can of chicken broth, two turkey breast cutlets, the leftover sauteed veggies that didn't fit in the lasagna pan yesterday. I'm likely making turkey piccata with the veggies as a side. maybe a little pasta to soak up the sauce, or some crusty bread. will see if any bread looks good when I stop at the market to pick up meat for the pups.
ETA: crusty bread was acquired, a French baguette. I also nixed the veggies bc I'm not that hungry. pups got pieces of a rotisserie chicken that I dismantled and shredded after putting on some gloves. I'll pick up something else to cook for them tomorrow. I don't like relying on the rotisserie birds for them bc so much oily dark meat.

I think I will steal some of the chicken that I cooked for Abby this afternoon. She has to take an antibiotic capsule twice a day as well as an allergy pill, and she's gotten picky about what I put these in. No peanut butter or pill pockets. I was reduced to a bite of hot dog yesterday, which I knew wasn't a good choice. I told her cannibalism wasn't her best quality. She said it was no one she knew. I did buy fig newtons today. She would stare DH down for these. I'm hoping I can use a piece instead of chicken for at least one of her pills.

I made a pot roast for DS. Blade roast, onion soup, garlic cloves, a splash of merlot, sliced mushrooms, bay leaf and spices. Added carrots and potatoes. It's been cooking low and slow for about 3 hours, so i'm sure it's ready. Smells divine.

I think tonight will be 1 of the beef filet mignon that I buy from QVC...only 2 oz, but perfect for me. Then saute' some peppers and onions to go on top then I add a little picante sauce and a couple small spoons full of sour cream. The QVC croissant is still in the freezer. Not sure how or when, but it WILL be gone by the end of day.

yeah, I packed up three portions of the lasagna to bring to my dad tomorrow am while I am running errands. I won't get through all of it, he can kill the to-go container in one meal. lol...
"dinner" tonight was the late lunch I had on my way home from work this afternoon, I'm still full and declaring the kitchen closed. I stopped at my normal Monday Italian place, since I won't be able to go next Monday. some regulars also go Fridays, so it works. 🙂 lunch was an appetizer of of pan-seared prosciutto and fresh mozzarella wrapped asparagus with a Caesar side salad. there was wine for everyone to celebrate my accepted offer (I will miss some of the small town stuff here....) and some amazing bread for dipping. tab was $50 including tip. *not a typical bill, by far.

Mine was more a late lunch and early supper combined. I got confused when I set the clocks last night and put them back an hour instead of forward. It doesn't matter because it is Sunday. I was staying home from church today regardless. Anyway, I was in the mood for chicken alfredo. I used a jar of Paul Newman's alfredo sauce, fettucini, and some more of Abby's chicken. Sprinkle a little fresh parmesan on top, and it is definitely passable. I added a fruit cup of pears. I should feel guilty about stealing food from a cocker spaniel, but I don't. With all these meds she is currently taking, she eats better than I do.

I made a spicy Asian soup bowl. Chicken, broccoli, mushrooms, a hard boiled egg, cilantro and lime in a rich duck broth with ramen noodles, garnished with green onion. I even have the fancy porcelain bowl and spoon.

my home inspection is tomorrow, and the buyer intends to do a radon test. why is this relevant to a dinner thread? my pantry is mostly comprised of the shelving above and aside my basement stairs. 🙄 I've pulled things I think I might need between now and Wednesday, and made a big batch of dirty rice to pick from. this batch had added onion/garlic/jalapeno, which I love, and a can of diced tomatoes so I could use it up, and I hate it. the batch was soupy. 👎 I packed up the rest, hoping the liquids are absorbed by the rice. if not, I foresee some takeout while I can't open the basement door.
costs tonight: $4 ground pork
fresh veggies were use or pitch. cans and box of Zatarains have been here, and I don't want to move them.

I went to my favorite bbq place and got a pound of bbq. Then I divided it into six portions. I just ate the first sandwich, and I will keep out one baggie for bbq salad tomorrow. The other four I will put in the freezer.
Yes, I could have cooked it in the crockpot, but there's is really better than mine. It isn't greasy.

I roasted a small sheet pan's worth of veggies, and a few quartered tiny potatoes for some starch. 400 degrees and varied cook times, then tossed in homemade pesto and topped with a little more parmesan cheese.
cost is minimal, bc everything has been here. (tomorrow is trash day, trying to waste less) I need to do this more often when I have pesto in the fridge. this is really tasty!
