A friend brought over meatloaf, party potatoes, green beans and chocolate chip cookies. We ate more than we have at any meal all week.

what are party potatoes? I've never heard that term before.
dinner tonight was a quick stir fry over microwave/instant udon noodles. I chopped some veggies and swiped some shredded chicken from the pup stash. toss with some tamari and hoisin, finish with sesame oil. I'm over this week, is it Friday yet??

www.dessertfortwo.com/instant-pot-beef-stroganoff/It's a cold, snowy day here so this will be a good dinner. Recipe notes say this one can be made in a regular size instant pot. We need to continue using meat from the freezer. There was a mix up when we got the beef last year and we didn't get as much meat as we should have. To make up for it we are getting more in April. Hopefully by April, my new fridge will be here. That will allow me to store more small stuff upstairs and keep the chest freezer for meat only. It was ordered in September with delivery estimated in January. I called 2/1 and they said a couple weeks is GE's estimate.

I think I decided that I'm going to throw the pups in the car and go for a drive. I'll see what the options are at the fish market, and if I don't like the pickins, I'll order sushi. ETA: I picked up a beautiful thick piece of cod, about a half pound. I cut it a little off halfsies, and the golden retriever will get the small piece tomorrow for breakfast. my piece got seasoned with Italian breadcrumbs, Italian seasonings, more garlic and some crushed red pepper. it's currently in the oven, roasting alongside some very garlicky broccoli and tiny potatoes. the Cosmopolitan while I wait is quite tasty.

One bag of shredded frozen hashbrowns, 1 cup shredded cheddar cheese. 8 ounces sour cream. Mix together and bake. Top with potato chips or other crispy if desired. It makes a lot and is filling. I'll see if there is a full recipe on that page.

Friday night air fryer pork chops, macaroni and cheese and a green vegetable to be determined.
Saturday DH is making meatballs. So meatballs and sausage over spaghetti. Garlic bread and salad on the side.
Sunday Valentine's dinner at home. Ribeye roast, red skin mashed potatoes and green vegetable. Mini chocolate cakes for dessert. Roast was bought on sale in December and put in the freezer. This week the advertised price at the grocery stores is double what I paid.
Weekend lunches and Monday dinner will be various leftovers. I'm picking up some sub rolls for meatballs subs at some point.

I finally finished the chicken last night and I am ordering Phad Thai tonight for this weekend (3+ meals). I plan on having the Clam Chowder tomorrow for lunch.

if I get hungry later, I'll finish the chicken Caesar salad I picked up from my favorite local Italian place. I'm still so full from the first pass at it. lunch portion is $18, including two chicken breasts - freshly grilled and served warm in the restaurant. it's packed separately to go, so the salad doesn't wilt, I love that.

I made fat head dough for the first time and we had keto pizza. We loved it! We are thin crust people anyway so it wasn't that different for us. Pizza us now part of the rotation.

My lunch is your dinner.
I made sloppy Joes and baked a few steak fries. I like them open-faced. I only had regular bread and no buns. But they were good!
I will have leftovers tomorrow after church. I also froze a serving. I have good luck preventing freezer burn by pressing plastic wrap down into stuff like chili, spaghetti sauce, or sloppy Joes before freezing.

I read y'all's posts every day and wish and wish that meals here were actually planned. They sort of were when the g'kids were little because I did the cooking. The older g'kids always chowed down because they were burned out on fast food, but the littles rarely ate anything cooked at home even back then. Now DD/DSIL and I eat real food if I make it, but DD doesn't cook ever. I miss a real mealtime with real food served from bowls/platters at a table set with real dinnerware/silverware. And people. Eating alone sucks. Sigh.
I have a Gooseberry Patch cookbook with recipes for just one or two. This is how I'll spend some time today because I need inspiration! Heaven knows there are a whole lotta ingredients in the pantry, cupboards, freezer, fridge.

I just took out a 2 oz. filet steak that I purchased from QVC a few months a go. They are so tender and delicious. Adding to it will be a baked potato with sour cream. Not sure if I find another goodie to add, but will take a look.

dinner last night was a ramen bowl, using up some leftover chicken and veggies.
for today, I've got one portion of leftover chicken stir fry. I'll just need to cook some rice or noodles for it. I also pulled a small pizza dough ball from the freezer last night, it's thawed now. I had cut a store-bought ball in half awhile ago, this is the rest of it. not sure what I'll do with it just yet, though.

Last night was fettucini Alfredo with shrimp. Tonight will be pork loin with sauteed cabbage. Tomorrow will be something with ground beef. I might make the stuffed meatloaf again. DH really like it.

tonight will be Instant Pot risotto - mushroom, spinach, maybe some pancetta - and some grilled (pan) chicken. I haven't decided if I want to marinate the chicken or not, but I need to break down the value packs for the freezer. I may as well cook a few pieces while I'm at it.

Side dishes for the weekend ended up being different. I made sweet potato fries with the pork chops and sauted zucchini.
DH had meatball subs instead of pasta with it. I just ate mine without the carbs. The first night I did have a slice of garlic bread.
Tuesday night leftover porkchops. There's mashed potatoes for DH. I'm having mine with roasted brussel sprouts and applesauce.
Wednesday night scallops and risotto since it's Ash Wednesday. DH is far from a practicing Catholic but some things he won't let go of. Annoying for sure.

Home made chicken soup and salad. I thawed the soup on the weekend and never got to it so I need to eat it up and the salad is an excuse for my home made vinegrette. I think this was about $4 all together and will feed both ISO and I.

~Sunday was grilled burgers, portobello mushrooms, Keto Eggplant Fries, with avocado and dill pickle slices. ~Last night DH brought home take out from the local rib place. I had sliced smoked turkey and pork, baked potato, some loaded waffle fries, and baked beans. I ate half.
~Tonight is grocery night, so I'll bake a doctored up pizza ~Wed: Small cheddar "bowls" to hold taco salads, with a side of riced cauliflower ~Thursday: Oven fried drumsticks, veggie ~Friday: Either take out or leftovers ~Sun: Steak and eggs

I'm working through a bunch of leftovers, and today was another brain drain. so, easy was key. tonight I roasted half a broccoli crown with garlic and crushed red pepper. that went with leftover garlic mashed potatoes and a piece of black peppercorn chicken.

Something pioneer woman calls ranch style chicken. Basically chicken breasts marinated in a honey Dijon mustard mix and sauteed to get a sear on each side. Finished in the oven and topped with bacon and cheddar. I've got leftover bacon from Sunday and some Colby jack slices that need used. Paired with the other half of the bag of small potatoes roasted with ranch seasoning and steamed broccoli.
Just realized I forgot to add all seasonings to the marinade. Whatever we'll eat it. I'm over winter and I'm damn sure over cooking this week. And the damn never ending multiplies when I'm not looking dishes. DH did an entire sink full of hand wash stuff earlier and it's full again.
