I took the pups down to M's tonight, mooch had a rough day. November isn't generally happy for him, as most of the family he's lost have left this world this month.
anyway, dinner was a solid taco bar with all the fixins. I made soft chicken tacos for myself, there was also ground beef and hard shells. I packed pups dinner so they could eat with us, and at the end of the night, they split the last crunchy hard shell (empty). we're all done for the night.

tonight I'm going to refresh some leftovers in my fridge - chicken Lombardy - and boil off a fresh portion of pasta. I had made this on Thursday, to go with mushroom ravioli for dinner that night. I had the rest of the ravioli for lunch before I hit the road Friday.
to refresh, I'll add a little more chicken broth and replace the original melted cheese with fresh shredded and scallions, then bake low and slow to bring the chicken back to temp.

One of the neighbor kiddos came down with a fever, so our sleepover has been rescheduled. Last night DH grilled a bacon topped pork tenderloin, and once again it turned out very well. I discovered a specific brand at Wally World a few months ago and we've been pleased.
Tonight: Shrimp tacos, bacon wrapped asparagus, leftover sauteed two types of squash Tues: Slow cooker creamy horseradish locally raised rump roast, veggies Wed: Slow cooker meatloaf using locally raised beef for DH, and I'm going out with my activist group friends Thurs: Leftovers Fri: Takeout Sat: Sleepover Frito pie with more of the local beef and mac and cheese Sun: Grill/smoke something

today, I noticed the pre-packaged marinated pork tenderloin in my fridge has a sell-by date of tomorrow. so, I'm apparently cooking that tonight. I'll make some mashed potatoes and roast a veggie of some sort. there's 4-5 portions of pork in that size package.
the rest of the week is TBD at this point. I stocked up on BSCB today, and most of it will get shredded and frozen for the pups after seeing the Instant Pot. I may keep 1 or 2 for myself, with plans TBD. mooch may come for dinner Wed night, as it's LD's birthday.

I've been in PA for work since yesterday, heading home tomorrow night. yesterday, I met a friend that lives nearby and we went out to a Mexican restaurant she loves. I was limited since they don't segregate their fryers for the coconut shrimp on their menu. ugh. but, I ordered chicken fajitas for the first time in as long as I can remember. they were phenomenal, and I have about 1/3 still in my hotel room fridge. I'll make a light breakfast out of it tomorrow before I head back to site. our vendor took us here tonight - Grille 3501 we had a small menu for what must have been prix fixe, but it was tasty. I was originally bummed that the "safe" Caesar salad I had planned to order wasn't on the list, but before we ordered, the waitress came back to the table to ask who had the bad shellfish allergy (hosts asked re: lunch options for tomorrow, to be brought in) so I felt a lot better. I had the mixed greens salad and the grilled chicken and orzo. it was tasty!

no dinner details tonight, I may not even eat. but I wanted to post this somewhere, and the random thread I generally post stuff like this is kind of heavy today. it is food related, so I think some of you would be interested. if not, sorry for the minor thread hijack. I found it interesting, anyway. obv with my shellfish allergy, I'm not a lobster connoisseur, but I still use the word in conversation in both languages. I've got Jeopardy on for background noise, and one early round category is "Animals in French" and I was surprised to hear that "homard" also means lobster, because I've only known it as "langoste". so I googled "langoste v homard" and got the following explanation. sorry if the link shows up in French, you should be able to switch to English. I bypassed the popup for that. langoste vs homard, French words for lobster

Tonight is going to be stacked crackers for dinner - using up the last of the deli meat with sharp ched and mustard for some kick. Tomorrow I am roasting a chicken with veggies. Saturday about half the chicken will be used is a white chicken chili recipe for next week. I will also use it for chicken enchiladas or burritos which I have not done for a while.
I might try and bake something but I am not really in the mood and I would have to do a deep clean of the surrounding areas so that I would have room for cooling racks.

last night was lazy, a box of Kraft dinner.
tonight will be something with turkey breast tenderloin. there's 2 in the package, I will likely freeze one uncooked.
tomorrow, my parents are coming down. we are going to do a big Sunday dinner, because I am doing a big Italian-style trashing of my kitchen. I already informed Mom that they were taking leftovers, including the meatballs I won't eat.

I cooked every day sometimes twice a day last week as my son was here and wanted his favorite foods, so we will be eating leftovers this coming week.

Yesterday was a good time with my parents, and my kitchen is still not quite put back together lol... today I need to package things for the freezer, and assemble the veggie lasagna I didn't make yesterday. I was disappointed to discover I didn't have enough lasagna noodles in an open box in the cabinet. oops.
this week I'll be working off what's in the fridge at this point. the lasagna will be 6 portions, there's still one portion of turkey and mashed potatoes (need a fresh veggie side...) and I've got a pile of salad greens to mix. I may or may not make a small pan of eggplant parmigiana, and I kept a few chicken cutlets to top green salads with. Lots of eggplant will be packed for the freezer, as well as small containers of sauce.
dinner tonight - veggie lasagna with a green salad
ETA - smaller pan than usual, lasagna is 6 portions. it is fantastic, though!

Went out of town with the family over the weekend. Had catered food in our VRBO Saturday evening including mac and cheese, mashed potatoes, meatballs, meatloaf, green beans, soups... Appetizers included a charcuterie board, guacamole, salsa, mini pigs in blankets, fruit, cheese, crackers, a few types of meat, etc. I ate about 8 bites total. 'Tis the season for sodium.... There was also a spread of cookies, popcorn, crackers, chips, and cupcakes and cake for niece1's wedding anniversary. Sunday night we had a lovely dinner starting with fondue. For my entree I kept it light with cured salmon curls over a potato "crostini." It's going to be a long season of food. First world problems for sure.
Tonight: Salmon and zucchini Tues: Ground beef enchiladas, veggie Wed: Chicken something Thurs: Freezer leftovers Fri: Takeout Sat: I'll host brunch for out-of-town family, then neighbor family will come over for appetizers and presents Sun: Overnight French toast for brunch, and an Irish supper including corned beef, soda bread, taters, and Irish chocolates Mon: Leftovers

tonight was a huge salad. I reheated 2 pieces of chicken (~1/4 of a huge BCSB) and some fried eggplant to toss in the bowl. cuke/tomato/red onion and an Italian vinaigrette

I mixed a batch of pesto tonight, maybe a little bigger than planned. oops, whatever.
tonight, I'm tossing some tortellini in this pesto, and I'll be able to use more pesto as toasted bun "schmear" as I keep working through Sundays leftovers. oh, and breakfast egg wraps. those are super tasty with pesto!

We are doing Boboli tonight. DH does his with just pepperoni and cheese. I am making mushroom, black olive, and cheese. I am having a glass of Mezzacorona Dinotte red with mine.

I made broiled grouper, pierogi, and salad last night. The olive oil that dripped to the bottom of the broiler pan smoked and set off all five smoke detectors. We were serenaded for 20 or 30 minutes before they stopped.

We are having a quiet day. Venison in the crockpot for au jus sandwiches tonight. Venison - free from the back yard. Au jus and ranch mixes - $2 Pepperocini peppers - $0.25 Spices from pantry - Buns - $3.00 A little over $5 bucks for likely 8 servings. Some will end up in the freezer for another day. ETA - Ended up being more like 12 servings. 6 were eaten greatest, the rest will likely go in the freezer as single sized portions.

What is the significance of Boxing Day? The legend I heard, and like, is that in England, the day after Christmas the British aristocracy would box up things they were giving to the servants because they got a new version for Christmas. Hence "Boxing Day" That said, for me, growing up Boxing Day was when the really good sales happened. Whatever didn't get sold as Christmas gifts dropped to rock bottom prices. The sales don't seem to be as good anymore.

after a few days of leftovers, I'm craving fresh vegetables. there's also a bit of fridge cleanup that needs to be done before trash pickup tomorrow...including a full bunch of asparagus that I forgot was there. thankfully, we all love roasted veggies.
on a quick grocery stop on an errands run with the pups,I found a package of thin sliced boneless pork chops - 6 pieces (~3/4lb) for under $2! tonight I will bread and fry them, and my dinner will be pork Milanese with mashed potatoes and broiled asparagus. the pork and mashed will be nice leftovers, with the Milanese salad or not. Punk will fight me for the asparagus. lol..
the rest of the weekend is still TBD. I also picked up BSCB, and there's still garlic bok choy and chicken fingers from the weekend.

We made a large ham yesterday, so we've got plenty left. We put most of it into the freezer, but we'll be eating some of it tonight, along with leftover potatoes & a fresh salad.
Since we bailed on the big family gathering due to bad weather, you don't even want to know how much snack food we've got, since none of it was used to feed our extended family.

Just threw some tater tots in the air fryer to top with some of the leftover venison au jus. Will top with a creamy horseradish sauce.

I made four cheese mac and cheese to go with leftover Christmas ham. I used sharp cheddar, fontina, swiss, and asiago. Topped with panko and baked. It was so good!

Based on the lack of leftover container availability, and an upcoming low commissions quarter, it is time to focus on freezer leftovers once again. The goal will be to serve them once a week.
