Sunday night I had the other half of my sandwich from lunch. DH heated up leftover pizza from Friday night.
Monday night black bean pulled chicken served over rice. I'll say $10 for everything. There will be leftovers for another night.
I'm thinking spaghetti one night this week. Friday morning we leave bright and early to visit DH's sister for the holiday weekend.

looks like the Patriots game is a go for tonight, so I want game food. I'm going to saute some chili seasoned chicken tenders and shred some of it over nachos. that will use up a few things that need to be used or pitched in the next few days. I can use the rest of the chicken over salads as well.
-chicken - BOGO, so this pkg was about $3. -guacamole - 6pk of 100cal cups was $4.99. I'll use one

Tuesday night was spaghetti and garlic bread.
Wednesday is leftovers.
Thursday either I will come up with something quick or it'll be takeout.
We are leaving Friday morning to visit DH's sister.

I found a peach salsa recipe that sounds good, but I'm not sure I'm in the mood for that today. posting the link here so I can find it later - peach salsaI ended up doing something completely different for dinner on Monday night, and then cooked half the chicken tenders last night. sell by date is tomorrow, and now it's an open pkg. I also have a pork chop that should be cooked today or tomorrow. hmm.... decisions. I just sauteed the rest of the chicken, going to shred that to bite size and stir it into a pot of tortellini with peas 'n pancetta. I've got a big clamshell package of baby spinach that I'll drop in the pot with the pasta to wilt as well. something different. uses up the last of: -chicken -light cream -grated parmesan cheese

Since I haven't been feeling well since taking the flu shot yesterday, I went with the old standby bacon, eggs, and toast. I wasn't hungry, but it was ok.

It was spaghetti & garlic bread....sauce & bread from the freezer. And dessert is Country Apple Fritter Bread...that I will NEVER make again...it is labor intensive for a loaf of bread.

I have enough marinara sauce left to finish it off by having pasta again tonight.....with one small meatball. I just hate to throw out food , it's such a waste so I will continue to eat the same thing until it's gone. Going to start on some fancy hamburger patties next, have one gone need 3 more out the door.

I'm going to make a stir fry with the boneless pork chop tonight. I need to pick up some hoisin sauce in order to make a batch of my base brown sauce, but I have everything else on hand. also, some bean sprouts b/c they are tasty in stir frys.

Left over chicken chili that I added black beans, tomatoes and can of green chilis to. With too many veges and not enough protein. Then we snack.

I decided to make a pot of red sauce with meatballs tonight. my parents are coming tomorrow, and I can send the meatballs home with them. lol... large cans of crushed tomatoes were on sale for $1/per, and spaghetti squash was stupid cheap as well - I make a casserole with roasted spaghetti squash, and it needs red sauce, it is basically a spaghetti pie. I picked up some chicken that was priced in what can only be a typo - "Natures Promise free range" BSCB for $2.99/lb. score! 1lb made 10 cutlets the way I slice. I breaded and fried it, figuring i can cut up for salad, make sandwiches, whatever. lots of options. tonight - open faced chicken parm, on broiled Italian bread with pesto spread. yum. over the next few days: spaghetti squash pie (I will clean up the link code in the am via laptop) - paleomg.com/almost-5-ingredient-pizza-spaghetti-pie/ that will use up some garlic chicken sausage, and a whole lot of vegetables from the fridge. I bought a small squash, so 4 portions. chicken cutlets sandwiches - I bought a loaf of Italian bread for $1 today. I have red sauce and pesto, or neither with L/T/O, and maybe some bacon. green salad with diced chicken cutlet

I'm not sure what dinner will actually be tonight, but this afternoon's cooking project is the spaghetti squash casserole based on this- paleomg.com/almost-5-ingredient-pizza-spaghetti-pie/squash has been roasted, I made sauce Friday night. I just need to cook off the ground pork and whatever veggies to build the casserole. I bought a smaller squash this time, so I'm thinking 4 servings here.

this was on tap yesterday for a solo Thanksgiving, and then I decided I didn't want to cook after we sat around outside for a bit. so I told mooch and M that I was cooking X on Tuesday, and if you want to come by, plan for that. 🤷♀️ 1.5lbs turkey breast tenderloin ($5.32) roasted tiny red potatoes ($5.99/3lbs) Brussels sprouts sauteed w/pancetta (pancetta pkg was $3?) I have a whole tenderloin plus two slices, some sprouts & pancetta, and a lot of potatoes leftover. I'm going to try my hand at a hash tomorrow for brunch. cast iron would be best for that, yes?

Monday night we picked up a pizza on the way home. $25 for pizza and drinks with tip.
Tuesday night grilled ham and cheese sandwich and home canned beef vegetable soup. Estimated costs $1. My dad canned the soup and gave it to me.
Wednesday night instant pot spaghetti. Estimated costs $12.

turkey hash was amazing this morning for brunch, that's happening again tomorrow for sure. the rest of the leftover turkey will be split between the pups for their breakfast, bc I didn't cook the ground turkey ($2.99/20oz) and kale for them after dinner tonight and I'm otherwise out of protein for them. oops.
dinner tonight was a stir fry over ramen noodles. I took a little shredded chicken from the pups' stash, added a bunch of veggies, and this sauce*. Ramen noodles were a brick of the "naked noodz" from Vite** (a FB ad I clicked on. solid product, but not your college diet...)

Thursday night chicken stir fry with rice.
I put chicken out to thaw at lunch time with the thought I'd figure it out after work. DH decided he would cook and picked stir fry. Luckily I had been to Aldi yesterday and grabbed a bunch of vegetables.
Estimated costs $10.
Friday night will be leftovers from the past few nights.

Take out tonight. We are treating DH's oldest two nieces. Their parents are gone. They are quite capable of feeding themselves but it'll be nice to get some quality time with them.
