Tonight: Football freezer food bonanza: Leftover egg rolls from last month, grilled bacon wrapped hot dogs, also both from the freezer, and pork rinds w/ some sort of dip. $10-ish? Taco Tuesday: Fish tacos, riced cauliflower, refried beans. $7 Wed: Spaghetti squash chicken Alfredo. $10 for at least 4 servings Thurs: ? Fri: Take out from? I'm not hungry. DD had sushi for a late lunch. I have a sub for her if she wants part and the rest for her lunch tomorrow.
I had coffee, 4- 1/2 slices bacon and eggs for breakfast and haven't eaten anything else. I'm eating way less but not losing weight. If I eat something like that it holds me all day.
I will fix hubs a cube steak, maybe me a half of one and some fried potatoes and left over green beans. I tried to buy fresh asparagus to have for dinner, its good to get rid of the cholesterol I had this morning, but not in until tomorrow. I will eat some beans, all I really want.

Looks like grilled hamburgers and cole slaw is on the menu for dinner tonight. Costco makes some really good pre-formed patties of ground sirloin, so I try to keep a package in the freezer at all times.
I want my mom's scalloped potatoes and ham, but I am clueless as to how she made it. My attempts at it have been failures. I think I am overcomplicating it when I make it. When I think about the contents of the fridge when I was a kid, we always had flour, potatoes, butter and milk in the fridge/pantry. I don't ever remember her making a sauce for it, which is what I do.

Meat loaf and scalloped potatoes. Two of DH's favorites.
Walk of the Penguin - I use a simple white sauce for my scalloped potatoes too. My mother did not make a separate sauce either but then she was a "dab of this and a pinch of that" kind of cook and everything turned out delicious.

Tonight - baked eggs with butternut squash hash. (Not really a hash - but whatevs)
Tomorrow I am going to make Mushroom risotto to take to my friend's sick father. I have only made a successful risotto once, and it wasn't mushroom - so it might have been a dumb choice. They asked for soft foods with no spices, and it was the best I could think of. Meh. If it sucks they can toss it and open a can of soup or whatever.
When I had my babies a friend brought me dinner, and she was the worst cook. I found out later she was anorexic- not sure how to phrase it. She was in recovery maybe? She was not actively doing any of the anorexic behaviors, but she made it sound like staying sober - you fight it every day, forever. I think her tasteless cooking was tied to her unhealthy history with food. Or, she was just a terrible cook. I tossed a good portion of it. The good news is that another friend was a frickin' fabulous cook and she brought awesome stuff with generous portions. 😎

thyme4change - do you have an Instant Pot? the rice gets cooked perfectly by this method - IP mushroom risottoI'm not a fan of the peas in it, so I just don't add them anymore. you can do what you like. last night, I was craving salt. M and I made a box of frozen veggie egg rolls in the toaster oven, and pan-fried some frozen potstickers left over from awhile back. cost? $4.39 for the egg rolls yesterday.

Edible, but not great. If it turns out a little gummy, then whatever, they can talk bad about my cooking behind my back. I made a quiche last night for them. I made one for me to keep too. That is a good breakfast, lunch or dinner that can be individually warmed up in any size you want. I thought it turned out really good (I had some for breakfast.) So, if the risotto sucks, they can eat quiche.

I made a killer potato and leek soup. i threw everything but the kitchen sink at it. Bay leaves and hot dry mustard and anchovy paste for umami.

pizza for the plumbers tonight. they will be back tomorrow, and we are still discussing tomorrow's dinner for the lot of us, bc takeout is going to get pricey. I have zero problem cooking, esp since we now know the specific issue is related to the toilets and the kitchen drain is fine. tonight was a large Meat Lovers, large cheese, and small Veggie Delite. $51, and then I tipped more in cash on pickup. there's still most of the large cheese pizza left. someone will eat it, maybe me for breakfast with coffee. 🤷♀️

OMG.... Lobster pizza.... Unexpectedly took Monday and Tuesday off. I cannot wait for this damn year to be over.... Mon: Leftover hamburger patty, sauteed yellow squash, avocado, diced garden fresh tomatoes $3
Tues: DH had enchilada sauce chicken breast burritos, riced cauliflower, sour cream, black olives. $7-ish for 4 burritos. I drank my dinner and snacked later.
Wed: I'm going to work with Shirataki noodles for the first time. I'll use shrimp and no fish sauce or other fancy word crap. $7-ish? Paleo & Keto Pad Thai Thurs: Welcome to October black and orange food: Birds Eye veggie based mac and cheese and ? with it. $3+
Fri: Take out from? DH buys
Sat: Cream cheese wontons, shrimp, veggie $7
Sun: Doctored up grilled cauliflower crust pizza, veggie $8

Iggy, rinse those shirataki noodles longer than the package tells you to. they effing stink. tasty, but opening that package is a slap in the face for sure.
dinner tonight is just for me, guys aren't coming to re-pipe til tomorrow. I'm going to make chicken Lombardy again for myself tonight, because that will go decently with the garlic mashed they have requested with their meatloaf tomorrow night. I don't eat meatloaf, so I'll reheat the leftovers and just put all of it out for whoever wants it.
BSCB was BOGO, so $3 for 1lb. everything else was already here - mushrooms, cheese, pappardelle, chicken stock. I even found a bottle of Marsala in the bar that I didn't know I had. score!

Cubed steak, mushroom gravy, mashed potatoes and broccoli. Super cheap for me, $4. Potatoes were from a free bag thanks to grocery store coupon and cubed steak was free from my uncle.
I cleaned out their freezer of unwanted meat about a month ago. We have two cows going to the processor mid October so old stuff needed to be used up.
It was really good.

legit, this is a keeper recipe. 2nd time making it tonight. I had two BSCB that I cut into 8 pieces. I had two tonight over pappardelle, will likely have two more tomorrow for dinner. so four pieces of chicken Lombardy to accompany mooch's mom's meatloaf, garlic mashed, prosciutto wrapped broiled asparagus and Caprese salad, both with pesto and balsamic glaze. these guys are saving me so much effing cash, I can at least feed them well. 😁

Made the shirataki noodles last night instead of Wed., as I didn't think my system could handle the expected stink that night, LOL. Ya' know, they didn't have too much of a smell. I rinsed them thoroughly, placed into boiled water, brought the water back up to a boil and cooked them for two minutes. I then drained the noodles and placed them into a pan without oil over medium heat to "dry them out" as the recipe suggested. I kept tossing them as the other ingredients cooked. I didn't mind the dish, but DH wasn't too sure. But then, Pad Thai isn't something he would normally order at a restaurant. I plan to use them in the future, as they remind me of a healthier, less starchy ramen noodle option.

last night of leftovers, the rest will get pitched when I put the trash out tonight. Tuesday's pizza, Wednesday's soup and chicken Lombardy. I had a cup of soup this afternoon, and am debating if I want chicken Lombardy again for dinner tonight. I think there's still 3 pieces left. I think I got my money's worth out of these meals the past few days!
ETA: for those of you near a Stop & Shop, or I think they are also called Giant around the country (?) - split chicken breast is on sale this week for 99c/lb. I bought a value pak of four huge ones to IP for the pups, and it was $4.xx. I'll definitely go back before the sale ends on Thursday for another package.

What a fantastic weekend! To end it on a delicious note, DH ended up smoking ribs yesterday, and we had the pizza Saturday night instead. The ribs were his best to date. Low and slow for sure.
Tonight: Leftover chicken bean something or other frozen in March with leftover tempura eggplant. $0 Taco Tuesday: Cod tacos served in cheddar shells, riced cauliflower, broccoli, avocado $8
Wed: Chicken curry to use up the curry paste from last month, leftover caul rice $5
Thurs: Bacon cheeseburger sloppy Joes, side veggie $6
Fri: Take out from? We'll probably use a Culver's coupon. Sat: Leftovers?
