I baked a ham over the weekend so I am making split pea soup for dinners most of the week along with leftovers for later. Instead of starving while creating soup I will bake a pizza and enjoy that for dinner.
So on Friday I will be making a chicken chili to enjoy over the weekend and into next week.

I stopped at the grocery store intending to pick up some swordfish that was on sale for $7/lb (I couldn't get near the counter yesterday morning) and found that they were completely out of it. salmon was also on sale for $7/lb, so I picked up a filet. 2/3lb? pups and I will share that.
dinner tonight will be baked salmon flaked and tossed with either bruschetta pasta or scampi. depends if the open bottle of white wine in the fridge is still good, really. I'll save the bruschetta option for the black peppercorn chicken I grilled yesterday.

Monday dinner southwest chicken foil packets. That's their title anyway. It's chicken, rice, bell pepper, salsa, black beans and onion baked in foil packets. The rice gets soaked in water with taco seasoning. I have a small zucchini left I'm going to chop up and add it.

I am back on the Anti-inflammatory meal plan, so last night was: cabbage, red peppers, onions, peas and green beans & zucchini along with asparagus. This was tossed in a pan with olive oil and topped off with a little red wine vinegar. I have enough for lunch today. I think tonight is going to be roasted veggies

Clueless.
I had a large bag of chicken tenders that I bought awhile ago on sale and had TD grill the rest of them up. I used about half of them last night to put on our chicken Caesar's salad we had for dinner last night. There *should* have been enough leftover to do a curry tonight, but there's not. I think TD was munching on them last night after dinner.
I need to go pull something out of the freezer now.
Last week, when we were without power for the entire day, I sent TD for take out. We went to a local Indian place - Naan and Brew - as our old favorites are getting old. OMG! It was so good! We had eaten there before, but the restaurant has parking issues so it wasn't on our regular rotation. Parking is still an issue, but not as bad as when everything was open.

I have some mushrooms to use up, so I think I'm going to make a batch of risotto in the Instant Pot. I can cut up some grilled chicken to stir into the portions. the risotto will use up the last of an open package of diced pancetta and some baby spinach as well.

Happy Friday Eve! ~Mon: Stir fry consisting of smoked sausage, broccoli, and yellow squash on top of riced cauliflower seasoned with light soy sauce, minced garlic, and sesame oil sprinkled with sesame seeds. $7 for 3 servings ~Tues: Tony's Creole dusted cod dredged in egg and a parmesan pork rind crust, on top of a snack size low carb tortilla and shredded mozzarella, topped with sour cream. On the side was sliced zucchini, also dredged and breaded, then sauteed in olive oil and minced garlic, with sauteed baby spinach and sliced avocado. The entire thing was finished with a squirt of fresh lime. $8 or so. ~Wed: Cornish Game hen with no sides (feeling lazy). $8 for 4 servings ~Tonight: Canned chicken with Alfredo sauce on top of spaghetti squash dusted with parmesan. $9 for 4 servings ~Fri: Take out from? ~Sat: Halloween party featuring beanless chili, homemade corn muffins, a deli sandwich tray (DH will buy), deviled eggs, mini mummy dogs, cream cheese pimento stuffed eyeballs, chips, homemade caramel corn, and an orange and black candy display. $80-ish for 13+ people.

I still have a couple pieces of the black peppercorn marinated grilled chicken I cooked last Sunday. whatever is left after dinner tonight is getting pitched, b/c today is 5 days. that's long enough. there's also still bruschetta, need to check if it is still okay after a couple days. lunch just now was a chicken quesadilla with one piece of that grilled chicken, so I am still picking at the batch. tonight - some sort of pasta, tossed with bruschetta and chicken. unless the bruschetta has soured, and then idk. maybe another quesadilla. tomorrow - chicken and roasted corn chowder, with bacon and jalapeno* Sunday lunch - Acadian chicken fricot* Sunday dinner - likely taking M out for her birthday (last Sunday..) to her favorite Italian restaurant.

My BFF is Russian, whose family escaped to China, where she was born, and then moved to Brazil. Her mom used to make an Asian salad that I adored. I tried to replicate it tonight. Shredded Bok Choy, diced eggs and potatoes, shrimp, mayo, green onions and a hint of sesame oil. OMG! So good!

dinner tonight was nothing to be proud of, I cleaned out the fridge today. dinner tonight was a roasted broccoli crown (garlic powder. crushed red, EVOO) stirred into a box of Kraft dinner spirals. tonight, I've got the laptop out specifically to check out sale flyers to make a list for tomorrow. I pulled some marinated turkey tips (1/2lb) out of the freezer for one meal this week. the rest is on the fly, b/c I ended up not making the chicken and corn chowder I'd planned b/c the chicken wasn't still good.

I pulled some turkey tips out of the freezer to thaw overnight, will likely grill pan those. I will also roast an acorn squash with fall spices, and maybe make some mashed potatoes. not sure how ambitious I'm feeling today. lol...

I was way too excited about this squash, and it did not disappoint! I have half left for tomorrow. I seasoned with pepper and pumpkin pie spice. pups liked it, too. I don’t think I've tried acorn squash with them yet. the golden likes roasted butternut, though. LD is picky, but he liked this.

It's Halloween party leftover week! ~Sunday: Leftover deli sandwiches. I think? $0
~Monday: Nachos using tortilla chips and salsa one friend left, topped with London Broil another left. ETA: With a chopped tomato out of our neighbor's garden. SO good. $0 ~Tuesday: Leftover beanless chili and cheddar cheese wrapped in low carb tortillas, topped with enchilada sauce and served on top of riced cauliflower. On the side was breaded, butterflied shrimp and cocktail sauce. $9 for the entire thing including 6 enchiladas. ~Tonight: Take out. DH buys. ~Friday (BFF is coming to town!): Niece1 and nephew-in-law's baby reveal party. Yep, this crazy aunt is going to finally be a great aunt. Menu? $0 ~Saturday: Doctored up grilled cauliflower pizza with shrimp two ways. $14-ish?
~Sunday: DH is going to smoke a prime rib and I'll make mashed cauliflower and turnips. Cost?
~Monday: Going out to a nice restaurant. Cost?

tonight is a veggie stir fry over rice noodles. I might steal some rotisserie chicken from the pups' stash for some protein.
I need to make pesto either tonight or tomorrow, so the next few days will involve a bunch of that. yum. definitely caprese salads, as I also have a ton of tomatoes.

Leftover veggie soup for DD and hubs and I ate the last of the bean soup. I think everyone was happy. I also had some asparagus earlier. I've read it is good to lower your cholesterol, been eating it once or twice a week. A half a bunch each time, hubs nor DD like it.

I have a stir fry that I will do and enjoy that for the next few nights. I believe that I will do pesto cheese ravioli and salmon dish for Saturday.
Sunday is going to be a chili day. It just sounds perfect for the upcoming week.

someone posted this recipe last night in a foodie group I'm in - Creamy Tuscan Chicken and it looked amazing. I have tomatoes and baby spinach, and I picked up some asparagus to add to it when I ran out to grab some BSCB just now. the package of BSCB is about 1lb, so that will last a couple meals. tonight, I'll roast some tiny red potatoes and have some crusty bread for dipping. the sauce looks spectacular

Tonight will be air fryer chicken thighs. Tuesday ended up being Mexican take out. Wednesday was leftover instant pot lasagna. This being home and cooking all the dang time is for the birds.

I was overly excited on my last post I got my days screwed up, LOL. Last night was canned chicken (bought during the "food shortage" earlier this year) Alfredo with minced garlic, parmesan and freshly ground black pepper, on top of spaghetti squash with a side of tempura eggplant and sweet chili sauce. Cost $10 for 3 servings.
Tonight is a pizza party with our ATV club. $0 There, all better.

Publix had a coupon machine next to some frozen chicken fried rice. Yes, I can make it myself, but sometimes I am too lazy. This was surprisingly good and better than other frozen dinners, etc.
I am going to pick up a few more for the freezer tomorrow.

last night was roasted veggies tossed with pesto, using up some veggies that had seen better days. broccoli, asparagus, grape tomato, mushroom, tiny red potatoes. I had made the pesto yesterday with some basil that was on its way out, and some baby spinach to bulk it up more.
tonight, I'm not sure. if it is just me, I might just doctor up a frozen pizza and make a small salad. if mooch is here around dinner time, we will likely make a chicken stir fry. I've got a package of chicken breast tenders, my basic brown sauce in the fridge, and plenty of veggies.
