later today, I'm going to mix a pan of stuffing and roast some veggies (I found a small butternut I'd forgotten about, in bags from the rental) to go with that rotisserie turkey breast I picked up on Friday (Thursday?) that's still wrapped in the fridge. as expected, this weekend went nothing like planned. lol... pups and I can wipe out that turkey breast in about two days though, it won't go to waste.
menu planning for the week, not sure which meal on which days other than the turkey dinner: turkey dinner w/stuffing, roasted butternut, roasted corn/jalapeno or broccoli scrambled egg "bomb" subs - toasted sub roll, filled with an egg/veggie scramble, bacon, melted cheese pasta toss w/sauteed chicken breast and veggies quesadillas with various leftover protein and veggies

tonight I used a chicken breast tenderloin out of the $3 package I bought for the pups and made myself a chicken "cheesesteak" sub for dinner tonight with one of those tasty sub rolls I said I would be using for breakfast bombs. I'll be shredding the rest of the chicken in a little bit for the pups.
$4 - 6 rolls ~$3 - chicken tenders, one would be about 50c 🤷♀️ portions of green bell pepper, yellow onion, and 1 mushroom, American cheese, seasonings.

I took 2 very think pork chops from the freezer....nothing to write home about, but at least the homemade potato casserole was good. I now have 2 more thin pork chops left and 3 individual containers of of potato casserole. I just took out some chicken strips and will thaw in the fridge overnight.

Ahem. My 3-day weekend turned into a 4-day. Last night for Taco Tuesday I cooked up leftover shredded pork from the freezer. For me I served it on top of pork rinds w/ a bit of refried beans, shredded two different cheeses, sour cream and olives and riced cauliflower on the side. DH put fillings into tortillas. Cost approx $4
Tonight: Salmon (bought last month on sale), shrimp (also bought on sale), asparagus and leftover green beans. $10 Thurs: Chicken curry and broccoli florets with leftover riced cauliflower. $8 for at least 3 servings.
Fri-Sun: Not sure yet

I have a frozen package of chicken fajita rice. Directions say I can use only half the package....I will try to do that. I've already precooked some chicken (from the freezer) so I know I can get 2-4 serving when I heat this package up tonight. lol, every day I get closer and closer to being able to defrost the freezer and let it dry out for a couple of days.

I have no idea what I'm doing for myself, but I do need to run some split chicken breasts through the IP for the pups. (pkg of four, $9 this am).
I'll likely end up swiping some of the shredded meat to throw in a salad or use with a packet of ramen. I think I know where my sesame oil is, anyway.

DH and I went to a local Mexican place and picked up burritos to eat at the park . Had to stay inside car with windows up because of all the ash & soot from the fires .
Then we got Bionicos for dessert later . About $35 with tips

a friend of mine has been posting a lot of nachos pics lately, so I figured with football, tennis, and hockey to flip around among.....nachos sounded good. I picked up a chili from Wendy's ($2), a produce depth container of guac marked down to $2, and a bag of regular (non-scoops) Tostitos ($4, party size. I might have used 1/4 of the bag?) and built a small foil pan of nachos with that and other stuff in the fridge. games on!

woof, I need to hurry up and finish unpacking my kitchen so I can build it up to having sale stock of everything. also - Stop & Shop is crazy overpriced. 🤦♀️ I picked up a package of their "Natures Promise" BSCB for $3.99/lb on sale....bc their regular BSCB was also $3.99/lb. I may as well get the "free from...." clean stuff, eh?
chicken was $6.23, and had three BSCB. I used half of one for dinner tonight - a veggie-heavy stir fry over rice noodles. I bought a bok choy ($4, I used two leaves) and a package of rice noodles (4.29, I used about 1/4). I filled in with veggies I had in the fridge, lots of green and white. I forgot to add shredded carrots to the pan, oops.

I took a large (for me) package of ground beef out of the garage freezer yesterday.. Tonight and maybe the next day or 2 will be taco salad.
The lettuce yesterday was $1.28
Ground beef bought in April is about $4.50
Shredded cheese have no idea.maybe $1 per serving.
Rotel salsa about $1.25
Sour cream & a little ranch dressing I'm guessing $1.50 for both

yesterday kind of got away from me. I ended up making breakfast for dinner around 1030pm while we were sitting around the fire pit. chili seasoned tater tots with cheese and scrambled eggs with veggies. we stayed up til the fire went out around 1am, so it wasn't too late really, to be eating.
dinner tonight will be something chicken. I need to use up the 2.5 BSCB still in the fridge.

tonight I'm cooking the BSCB that didn't get cooked last night when we abandoned the house in favor of working plumbing good news is this should be all set this afternoon. dinner last night was a pizza for the humans (chicken, prosciutto, pepper, mushroom) and chicken tenders for the pups. there was some wine, too, as we sat on the patio and waited for the takeout. cold pizza for breakfast, and more tenders mixed in with veggies for the pups. I think I want to fry cutlets to use up the BSCB, so I'll need to pick up bread crumbs and flour on my way back home. I threw those open items out on my way out of the rental. I have everything I need to make sauce, and I can use some of the cutlets in salads this week too.

I finally got around to cooking that chicken I have had for awhile, thankfully it was still good. 😳 I tried a new to me recipe, and it is a keeper. definitely need to try it with the listed Marsala wine instead of the open bottle of chianti thats pretty much a staple in my kitchen. the first time I saw the recipe, it had been transcribed without the Marsala....and I haven't bought any yet at the new place. anyway, I put this over pappardelle pasta. theres a bunch of leftovers bc of how much BSCB I had to use up. www.lecremedelacrumb.com/chicken-lombardy/

Tuesday night I sauteed the rest of the chicken thigh package with mushrooms. Mashed potatoes on the side. Estimated costs $5.
Wednesday night baked pineapple teriyaki tossed with rice and broccoli. Estimated costs $7.
Thursday will be leftovers.
Friday is going to be steaks.

tonight, I'm going to break down the value pack of bone-in chicken thighs I bought late last week. sell by date is Monday, but still. I think there are 8 pieces, I'll freeze four of them. I still have quite a bit left over from last night's chicken Lombardy. lunch was an open-faced sandwich on toasted sourdough that was pretty tasty. I broiled the chicken to reheat, so it wasn't microwaved rubber.
dinner will be arroz con pollo. I omit olives b/c I hate them. one package of rice and four chicken thighs is two good-sized meals. $.69 - rice $1.75 - chicken, the VP was $.76/lb! $.25 - jalapeno $ minimal - onion, garlic, capers, Adobo seasoning $1 - can of chicken broth

I made Chicken Fried Rice with the leftover rotisserie chicken. Onions, garlic, broccoli, green beans, peas, sesame oil and 2 day old rice. Five Spice Powder is a MUST.

I've got one more meal each of the pair of chicken recipes I have cooked this week, quick meals for the weekend if I actually finish them. I've already had two meals of open-faced chicken Lombardy sandwiches on toasted sourdough, so I think I've gotten my money's worth out of that batch. I'm pretty worn out on chicken, although I'm debating making a pot of chicken fricot on Sunday b/c the weather is going to be cold the next few days. this afternoon, I'm going to start a pot of sauce with a pound of seasoned meatballs to simmer. I'll likely freeze the meatballs and bring them to Dad later on, but I need them for my sauce. lol... I picked up an eggplant and two zucchinis, I will bread and fry them. not sure how I will actually build a pan up just yet, but I do have ricotta and a lot of mozzarella cheese. I'll list out the costs I remember, no idea what the breakdown is per serving, b/c this is a small session of trashing my Italian kitchen. $6 - meatloaf mix for the meatballs $3 - three cans of crushed tomatoes $2.50 - 1 large eggplant $2 - zucchini $3 - ricotta ETA: my sister called just as I was about to start rolling meatballs, to kvetch about her first full week back to in-person teaching. by the time I finished getting them in the pot, I made the executive decision that eggplant and zucchini breading and frying will wait til tomorrow. dinner tonight will be tortellini with sauce. meatballs are currently simmering in the stock pot, another half hour or so to go before I even test for done-ness.

Last night was stir fry and I will do stir fry tonight but add rice and bulk it up some.
I baked chicken tenders so I can add a few to the stir fry.
For dessert I am doing a peach turnover possibility with some vanilla ice cream.
I pulled a container of soup out of the freezer to use on wed for dinner -- it should be thawed by than.
Tomorrow is the last of the shredded beef -- I will make a nice sandwich or Caesar Salad and use that as a extra topping with some cheese ravioli to bulk it up.
The rest of the week --- I don't have a plan so far. Probably soup or maybe spaghetti since the weather has turned and is starting to be cooler.

I'm going to bake off a veggie lasagna, using some of the sauce from Friday night. The pan I use works out to 6 servings that I will enjoy over the course of this week.
I ended up not frying eggplant/zucchini Friday as it was too late by the time I got started. Saturday, some plumbing issues returned and plans went out the window. by making this lasagna, I'll be cooking once and reheating on paper plates to create minimal dishwasher loads for the short term.
