I AM SO SICK OF MAKING DINNER. Or even deciding what we should do for dinner. I've decided I am just going to go into the freezer every morning, grab the first pack of meat I see. And whatever the first thing is that i can think to do with it - that is dinner. Tonight, chicken something vaguely Asian-ish. I will see if i have any bottled sauce and go from there. Well, that didn't last long. With the possibility of meat shortages, we are trying to keep the meat that is in the freezer, just to make sure we have something. Back to the nightly frustration of everyone saying "I don't know" and it all falling on me. Last night I was going to buy a meatloaf family dinner from an expensive restaurant near us. My family likes meatloaf, and theirs is way, way better than mine. And everyone balked. They just weren't "in the mood" for meatloaf. Well, I'm not in the mood for your bullshit indecision, but here we are. Sorry . I feel you . I am so over this cooking every day BS . I’d much rather bake but by the time I figure out dinner and actually cook it , I’m not interested in baking as well . Can your family help out ? Someone else cook , get dinner , etc ?

Baking is so much more fun than cooking dinner every day. People heap tons of praise on my baked goods. Dinner not so much. I'm not a horrible cook, it's just not outstanding every night.
Tonight is steaks that DH didn't want last night, mashed potatoes and salad.

tonight will likely be a sandwich. going big for what's technically breakfast in a little while. after walking around the state park with the pups, I put in a takeout order at the excellent BBQ place nearby. I have a pint each of pulled pork and mac & cheese, and a small order of collard greens. my stomach is growling, and my car smells amazing. $27 and I will have leftovers for a few days.

DD's freezer and mine full of food, her pantry and my cupboards full of food, and I can't think of anything that sounds appealing.

I browned 3 lbs of ground beef at lunch time. We had nachos. I froze part of the meat for later in the week. I have a casserole in mind that can last several meals but end up with nachos.
For dinner, I made myself a taco pizza on a tortilla. H. had two tacos. I had to use shredded coleslaw for lettuce.
For those disliking cooking, try batch cooking like what I just described. It also extends the meat. If your freezer has precooked food in it, just grab a package to thaw.
For chicken, I will cook 6 chicken breast split horizontally. We will eat one for dinner with either salad or mashed potatoes, gravy and stove top stuffing. The remainder of the chicken breast and left overs for lunch the next day. I will freeze one or two chicken breast for later in the week for chicken tacos or a suddenly salad with chicken and additional vegetables. That will last about 2 meals. Chicken oriental salad for one chicken breast.
If the chicken breasts are cut the size of chicken tenders, they can be used in sandwiches. I also like to make chicken alfredo with vegetables. Or chicken salad.
The above is about 10 meals. Cooking the meat twice. We are lucky or used to be lucky enough to get petite sirloin steaks 6 to a package and buy one get 2 free. We would grill one package and freeze 2 of the steaks. Those 2 steaks would be slotted into the chicken round. The free 2 packages of steaks were frozen and cooked at one time when they are thawed. Same rotation.

I'm working on my big meal now, a large Caesar salad with shredded rotisserie turkey. I also polished off the last of the mac 'n cheese from the BBQ place on Saturday.
I did a bunch of food prep for the freezer today as well, since I had the kitchen to myself for a few hours - two rotisserie chickens deconstructed and shredded. portioned into snack bags for single serving, either myself of pups. 8 snack sized bags, $12. a rotisserie turkey breast was $8. the tenderloin separated from the rest of the breast when I removed the bone, so that's what I used in my salad. I also gave the pups a couple bites as I worked. the rest of the turkey breast was sliced into sandwich bags for the freezer as well.

I had a fresh salad tonight, but forgot to chop up some chicken from the freezer. Tomorrow will be BLT as 2 tomatoes I don't want to lose and some really fresh lettuce. Bacon is precooked by Hormel so no mess with that. Left over potato salad too.

We had fajitas. They were delicious. Two things that helped them a lot. (1) My husband made them and (2) My neighbor stopped by with margaritas from the restaurant up the street. He just wanted to spread some cheer. And he succeeded!

I have a package of boneless chicken thighs that I want to cook tomorrow. I've been using the IP lately for these, doing a knockoff chicken piccata, but I also want to try an IP mushroom risotto. the chicken would go very nicely with that risotto, but do I grill (pan?) or bake or some other cooking method if not IP?

Abby and I did comfort food since my neck hurts. A hamburger patty, mashed potatoes, and green beans. I squared up my very large patty to share. She thinks we should do it tomorrow, and she is right. It will be a traditional hamburger then.
I never knew how good a cook I was until I got a dog!

Tuesday night we had pizza take out with some of DH's family. His dad paid. Should have been Mexican but they were way overwhelmed. We cancelled.
Wednesday night instant pot spaghetti.
Thursday night pork chops in air fryer, mashed potatoes and broccoli.
Friday or Saturday peanut chicken zucchini noodles.

I was borderline hangry and approaching dizzy, so I went full on fat kid tonight. sautéed some rotisserie chicken with garlic and jalapeño, then tossed with diced red onion and tomato, and 4 cheese pierogis. I'm not complaining about any of it.

We have plenty of good quality ground beef, chicken, and pork in the downstairs freezer, but since our filets seem to have disappeared won't be having those. I use them for grilled steaks but also to make fajitas, was getting ready to make some fajitas and no steaks in the garage freezer. Thankfully the strip steaks were under some veggies. I had moved them as the basket was to full and I could not close the freezer lid. May have to make a run to the meat market again, we were set for some time. There are 3 packages of filets, 2 each left in the basement freezer from the March trip. We had to run to town to pick up a scrip for DD today so I made sure the garage door was locked and also will at night. Hubs said its possible I cooked them, I said no because I have been saving them so we could have fajitas as a treat once a week. There was other meat in that bin also, we had cooked quite a bit of it already. But I had packed 2 pieces per package and was thinking this would last us a long long time.

I ordered a small pizza and side salad on my way home from socially distantly visiting my mom with the pups about an hour ago, that was breakfast. Bertucci's, a brick oven chain here in New England. prosciutto, spinach, onion pizza and salad came to $26 including a sizable "hazard pay" tip. I've got half the pizza left over for another day. dinner might be a can of soup later, idk.
