last night was a couple slices of leftover pizza. tonight I should have some of the minestrone I made the other day. will see how I feel about it being a soup day tonight. its already beautiful at barely 8am.
if I don't have soup, I want to try out an Instant Pot mushroom risotto recipe I found this week. will post that link if I go that route.

I didn't want to do much for dinner today0. None of us really wanted soup. Hubs said fajitas, I love them but quite a bit of work. I may chop a bunch today and thaw some meat and let it marinate over night.
But this evening is strip steak, baked potatoes, salad, and some garlic bread if we have any. So an easy meal.
I thawed chicken livers and will fry on the side burner of the grill outside, liver is so messy. DD and I will have those for lunch tomorrow.

I'm making teriyaki chicken thighs, peas, and salad. Easy dinner. Just the marinade in the pan with the chicken and bake.

I cooked for the first time in several days....have had back problems & couldn't stand long enough to cook before.
We had pork chops simmered in crm. of broccoli soup, green beans & roasted potatoes. There is a canned peach/cake mix sorta cobbler for desert too. I did that earlier today.
Tomorrow will be BLTs since Mondays are laundry day & I'll need something easy.

I'll be turning on the crock pot a little later, one last time before packing it up. will pair with mashed potatoes and roasted Brussels. that will be a few days' worth of meals. I just checked, the package says the pork is 22oz. this is the pork tenderloin recipe that has me standing over the crock pot with crusty bread, dipping straight into the au jus. slow cooker pork tenderloinETA: 2h in, and the house smells amazing. I picked up some crusty rolls at the market earlier, and I already want to just dip them in the au jus.

The last 3 mini meat balls are thawing out and will be joined with the rest of the jar of pasta sauce. I think I will add a slice of garlic bread with it too.

I made cole slaw, with fried hot dogs and buns plus green beans.
Just made vanilla pudding and put in fridge and kool whip is thawing. Put cherry jello in the fridge to cool. So snacks tonight or tomorrow night.
Need to fry the chicken livers for lunch tomorrow, I forgot them today.

baked potato with roasted broccoli and a little leftover turkey breast. going to make a cheddar sauce in a few minutes. will make more than I need, to have around for the next few days. I almost made pierogis tonight, a cheddar sauce would go nicely there, too.

I bought some shrimp yesterday and made a honey, garlic, ginger, and soy marinade. I wanted to go get a bag of frozen asian veggies, but in the spirit of cutting down on trips to the store I am going to use some carrots, zucchini, onion, and mushrooms. I may pair with brown rice.
We should have thunderstorms on Thursday so I'll thaw the instant pot roast I made to eat.

I made some shrimp in a fish sauce, ginger, sesame oil, Mirin, oyster sauce, garlic, lime and peanut sauce. Served with rice noodles.

Tonight is going to be Swiss steak. Sirloin was on sale at the store so I picked it up for tonight. Tomorrow night will be pork roast.

Now I'm sad I can't do that pork recipe. Lipton dry onion soup mix triggers my sulfite allergy. I haven't investigated other brands.
Sunday night Texas Roadhouse family pack take out.
Monday night leftovers.
Tuesday night spaghetti and garlic bread.
Wednesday night pineapple teriyaki chicken served with rice and broccoli.

I had a nice, juicy hamburger! It was large enough that I was able to square it off and cook the part I cut off for Abby. That didn't keep her from turning those brown eyes on me while I ate mine.
I roasted potatoes to go with it.
It was the best meal I have had all week.

On Thursday I made Christmas chicken, which I had been in the mood for. I turned out so well, that we didn't have any leftovers. I think I finally got the injection thing right.
Yesterday I made a double batch of jumbalaya and froze half.

Tonight we're having hotdogs, and I'm excited about it! Lol. We discovered uncured beef hotdogs at Aldi, and they are the best hotdogs I've ever had. Making some good sauerkraut with it.

Left over mashed potatoes, scalloped corn and a big chicken tender, all from the local grocery store yesterday. All I have to do is nuke the potatoes and corn, and pop the chicken tender into the over for a few minutes.

I made a lovely stir fry. Chicken, broccoli, red pepper, green pepper, oyster mushrooms, asparagus and Vidalia onion. Served over rice noodles. Yum!

I made the sauce....soy sauce, fish sauce, oyster sauce, gochujang, ginger, garlic, sesame oil, lime, Mirin, sugar, water and corn starch.

As it cooks, it make the whole house smell like Christmas.
