I do lunches these days, not dinners. I had defrosted two packages of bbq from my favorite bbq place. I like to buy a pound and divide it up. I switched to another sauce, and it was so good! I also had fresh corn on the cob. I bought two, and the second one is for my Sunday Easter dinner. I am going all out for me, myself, and I. I even have a single slice of cheesecake in the freezer. Myself and I will have to do without.

I made a salad with chicken on top. I had a couple chicken tenderloins left from the package I got Sunday. I'll say maybe $3.

We ordered take out fried fish and french fries from our community restaurant. Another neighbor who had never ordered from the restaurant was happy with her meal. We were nervous. There have been mixed comments.

I am making summer (yellow) squash with onions, but it is for tomorrow's lunch, not today's. I'm not good at timing how long it takes to cook some things so it's easier to cook it today and reheat it tomorrow. I am so looking forward to Easter dinner tomorrow even if I'm eating it alone.

Going to Falafel St Jacques to pick up a falafel for supper. I'm also going to buy a half-dozen of their pillowy, fresh pita brads that they bake on the premises.

I'm craving something other than what I have been eating lately. I think I'm going to roast some corn w/diced jalapenos. that is good hot or cold. I can either have it as a side, or inside a quesadilla. maybe make some rice and beans?
ETA: I nuked last night's leftovers for a really late lunch, and if I get hungry later on there is some tuna salad from the village market deli in the fridge that I can make a half sandwich. I'll save the corn, etc for tomorrow. better to use up the leftovers before making more of them.

Easter dinner was boneless ribeye roast with Gorgonzola cream sauce, home canned green beans, squash casserole and rolls. Various baked goods for dessert. Estimated cost $50. We have plenty of leftovers for a few more meals.

I'm going to make a pot of minestrone later, today's cold and rainy. may see if I can find some crusty bread at the village market, I need to go for meat for the pups.
ETA: someone mentioned tater tots in another thread, and I ended up doing over easy eggs on tater tots. the soup can wait til tomorrow.

I had leftover spaghetti and sauce. I filleted and fried half a chicken breast, it was huge. Then layered on the spaghetti, topped with mozzarella and melted. We had that for dinner, pretty good.
May make a cobbler tonight, we can have it tomorrow when cool. Hubs like hot with ice cream, we don't have any, and cold with Kool Whip, have to thaw it. I forgot to get it out. So likely tomorrow night.
I'm thinking of thawing out some chicken broth and cook the rest of the breast in it, then make home made noodles, tomorrow with it. Will add a side of salad and some veggies, wish I had broccoli and cauliflower, that is something I need to add to my list for next time.

Have you guys ever heard of "pie weights"? Not me!
I was looking at quiche recipes to use up some of the leftover ham, and the two recipes I looked at mentioned pie weights. They keep the pie crust from bubbling. You can substitute beans, etc., but you can't then cook the beans. I simply bought a set for $5.99 on Amazon.
But I had never heard of them. You use them for frozen pie crusts as well as homemade ones.

I think before this is over (if it ever is) our way of life is going to make some big changes.....and cooking on a regular basis will become the standard, just as it was back in the 1930s to our present time. I'm thinking I'm not going to enjoy this.....

I saw something on Serious Eats that recommended foil and sugar, you can fill it to the top and prevent the sides from slumping. The sugar will be a bit carmelized but you can still reuse it.

I picked up a pizza on my way home from a day's worth of errands related to my house sale. first takeout in almost a month, felt very strange going in to pick it up. cash-only local pizza heaven on the beach, I've been going there since I was a kid. a cousin drives a half hour every other weekend to come pick up pizzas from there. lol...
small onion/pepper/mushroom, $13.50. I have two more meals with the leftovers. works for me!

DH wanted to order pizza but I'm afraid of making regular takeout a habit again so I offered to make some instead. Dough is currently rising. We're low on mozzarella so might have to get creative with sliced fontina, string cheese and colby-jack.

I fried tenderloin filets in avocado oil, 2, then baked biscuits and made gravy. We also had steamed carrots. I am trying to cook less and less so we don't have waste. We split the meat among 3, doesn't sound like enough but it was and it was sooooo good. I baked 8 biscuits, I ate 1, DD 2, and hubs 5!! But he worked hard today. I baked a 9 X 13 cake, then cut it into 3 pieces, the first 1/3 was for strawberry short cake. I iced 1/3 in white icing, the last 1/3 in chocolate. I put sprinkles on top of both of those.
For lunch DD and I had a hamburger patty, hers with cheese, mine plain with Worcestershire sauce and we both had a side of broccoli.
The meats were wonderful fresh meats from the butcher. It was WONDERFUL, flavorful, tender. I don't think I will ever buy meat elsewhere again, they have ruined us.

We did no carryout last week beyond a pizza for lunch on Good Friday. We've made up for it this week. I was going to cook Friday but DH said the chicken wasn't thawed at 5pm. I think he's forgetting it's bone in and that's what he felt instead of ice.
We did a family meal from a restaurant that has always treated his family well. We got chicken marsala, salad, a side of penne with marinara and 4 pieces of chocolate oreo cake. $51.65 with a $10 tip. We have leftovers.
Saturday night will be chicken thighs in air fryer, roasted red potatoes and salad. Maybe $8.

Sacred rice (the black/purple stuff) with one pork chop cubed aaaaand the rest of the veggies in the fridge. Onions, snap peas, peppers, and frozen corn. Added a bit of curry powder. It was really good, the fridge is almost cleaned out for shopping on Tuesday (I haven't been in a month), and we ate healthy. Maybe $2 per serving? 4 servings total.
