I should have leftovers, not really feeling it. also don't really want to create more leftovers, either. maybe I'll bake a potato and pour broccoli and cheese over the top. that's easy, and single serving.
leftovers to work on - 3 portions of last night's cheesesteak pasta, 3 small turkey burgers with pepper jack cheese, and a big bowl of pasta salad loaded with veggies. I've decided I'm tossing the last chicken thigh and arroz con pollo portion. I'm also okay with tossing some of the cheesesteak pasta if need be. I think I'm going to turn a turkey burger into omelet filling for lunch tomorrow.

We ordered Chinese takeout tonight. It's one of DH's very favorite things. Tons of leftovers for later. They may close after today so I'm happy we ordered today.
DH grilled burgers for lunch today. We topped them with swiss and sauteed baby bellas. They were delicious.
Likely dinner options this week, spaghetti and salad and a pan of chicken enchiladas.

Last night I used ground breakfast sausage to make dirty rice. It turned out surprisingly good and used some leftover ingredients, so zero waste. I was struggling to find a use for the breakfast sausage. Tonight is just spaghetti and meat sauce, because I still have a couple of pounds of ground beef and it has been a week since we had pasta.

leftovers tonight, maybe with a small salad.
I also was able to repurpose stuff this afternoon - I needed to cook some rice for the pups, so I used the rest of the carton of beef stock from the cheesesteak pasta in the liquids to cook the rice.

I did a baked spaghetti for dinner. I used up green pepper, baby Bellas and some pepperoni from the fridge. Served with salad and garlic bread.
Plenty of leftovers for lunch or another dinner.

I had a thin crust Marghareta Pizza last night and am finishing it off tonight.
I pulled a container of chicken chili out of the freezer for tomorrow's dinner.

I decided on a big lunch rather than dinner. I'm just not hungry at night. So I defrosted 4 chicken legs, which I'm baking. I put some canned green beans on the stove to simmer with some Greek seasonings. And I'm making a small portion of mashed potatoes. I am actually looking forward to it. I'll do something different with the leftover chicken tomorrow.

I have a thin pizza crust to use up tonight, great minds think alike, snapdragon planning to use pesto sauce* and top with red onion*, mushroom, diced tomato and prosciutto. I like to top the finished pizza with arugula that's been tossed in lemon juice for a fresh kick. *this will use up the end of these items. also on the agenda before 5 or so - cook and shred a BSCB that's thawing on the counter right now. pups need protein, and there were way too many people in the village market when we were coming home from a walk earlier. I wasn't going in to pick up ground beef today. I'll stop tomorrow after dropping them at daycare - it is supposed to rain all day, and I have too much work to do to entertain them indoors all day.

Thanks ladies for reminding me. I have a little bit of pasta sauce left in the freezer, add a couple of those pesky frozen meatballs with some spaghetti and a lite dinner will be on the table.

Two small pork cutlets, fried potatoes, gravy, steamed carrots, and biscuits. Frozen biscuits not home made I finally gave up on making them.

I had bbq hot dogs and mac'n'cheese. I saved the leftover mac'n'cheese for lunch tomorrow. Add a little milk and margarine, and it will be fine.

Pork Burritos for dinner tonight and made tortilla soup for tomorrow. I had to see if my new small slow cooker (4 qt.) was big enough for the soup (barely). I broke the old giant slow cooker last week (bad timing) and had to pick a new one quickly, because things are not shipping as fast as normal.
I also made banana nut bread.

I had leftover rotisserie chicken. I made Chicken Florentine. yum. how do you make yours? I just made chicken piccata, with leftovers for another meal. wasn't the best I've ever done, I forgot all about the lemon until I was already deglazing the pan. so I rushed that and poured too much chicken broth in the pan. oh well. still tasted okay, just too thin.

Tonight is pizza (about $4 to make). Tomorrow is ham and beans. Monday is pork chops. Tuesday is turkey breast. That should load us up with leftovers for the rest of the week.

We’re doing tacos tonight. Tomorrow we decided we’re going to do a mid afternoon takeout and bring it over to one of the many parks along the Cumberland river. We’ll just sit in the back of the open hatchback to eat. Maybe we’ll get lucky and see some eagles.

We had fajitas and I cooked the meat, onions and bell peppers on the grill, they were very good.
I had about 4 packages of shredded cheeses that had been opened and they were molded , had to throw them away. I finally found one of Mexican cheeses, but need to add a couple back to my stash.

I did a bunch of prep work and pup cooking this morning when I got home from the grocery store. dinner tonight was leftover teriyaki chicken and bok choy, I added a single serve microwave package of Thai rice noodles to bulk it up.
tomorrow, I've got a leftover portion of chicken piccata and then 1.5 BSCB still to cook from the package I found earlier this week. I'm likely going to cook some of it for the pups. I think the sell by date was the 8th, but obv I'll use the smell test.

Sunday night was unstuffed peppers. Estimated costs are $9. There's a big enough portion left to feed DH.
